CONTEST-WINNING CHICKEN WITH MUSHROOM SAUCE

Contest-Winning Chicken with Mushroom Sauce image

JAPANESE CURRY CHICKEN

Japanese Curry Chicken image

Unlike Indian or Thai curry, Japanese curry is more savory than spicy. This chicken recipe uses Golden Curry® brand curry cubes, that can be found in the Asian section of any grocery store. It's the definition of umami! Oishii desu ne!? (Delicious, isn't it!?)

Provided by Idachef

Categories     World Cuisine Recipes     Asian     Japanese

Time 1h15m

Yield 6

Number Of Ingredients 11

1 ½ pounds skinless, boneless chicken breast, or more to taste
1 tablespoon olive oil, or as needed
salt and ground black pepper to taste
5 ⅓ cups water, divided
1 (7.75 ounce) package curry sauce mix (such as S&B® Golden Curry®)
1 (15 ounce) can peas, drained
5 new potatoes, halved
1 (8 ounce) package sliced cremini mushrooms
2 medium carrots, chopped
1 medium onion, chopped
2 cups jasmine rice (such as Mahatma®)

Steps:

  • Place chicken in a large, deep skillet. Drizzle with olive oil and season with salt and pepper on both sides. Add 1/3 cup water to the pan, cover, and cook over medium heat until no longer pink in the center and the juices run clear, about 20 minutes.
  • While chicken is cooking, pour 2 cups water into a microwave-safe bowl. Break curry sauce mix into pieces and add to water. Heat in the microwave on high for 3 1/2 minutes; remove and stir until sauce mix has completely dissolved.
  • Remove chicken from the skillet. Cut into cubes, return to the skillet, and pour curry sauce over top. Stir in peas, potatoes, mushrooms, carrots, and onion. Bring to a boil, then lower heat and simmer until vegetables are tender, about 30 minutes.
  • Meanwhile, bring remaining water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, 20 to 25 minutes.
  • Scoop rice into bowls and serve curry on top.

CHICKEN WITH JAPANESE-STYLE MUSHROOM SAUCE

Chicken With Japanese-Style Mushroom Sauce image

A pan-fried chicken breast is topped with a flavorful Japanese-inspired sauce made of assorted mushrooms.

Provided by yohanthechefman

Categories     Chicken Breast

Time 30m

Yield 2-4 serving(s)

Number Of Ingredients 13

2 large chicken breasts
1/3 cup potato starch katakuriko (may be substituted with corn starch)
1 -1 1/2 cup shimeji mushroom
4 -5 shiitake mushrooms
6 white button mushrooms (brown mushrooms would also work)
1/2 yellow onion
2 garlic cloves
3/4 cup olive oil
2 tablespoons olive oil
1 tablespoon soy sauce
1 tablespoon mirin
1 pinch salt and pepper
1 tablespoon butter

Steps:

  • Butterfly each breast.
  • Lay down the butterflied breasts on cutting board and cover with plastic wrap; gently pound the chicken with a mallet until about 1/3 inch or desired thickness.
  • In a bowl add the potato/corn starch and dredge the breasts until they are thoroughly covered in the starch.
  • Sprinkle the chicken with salt and pepper and set aside.
  • Add 3/4 cup of olive oil to fry pan and heat (more or less oil may be required-I never measure the amount of oil I use).
  • When the oil begins to sizzle place the potato/corn starch covered breasts in the pan.
  • Fry each side of the breast for 5-6 minutes or until golden brown (for thicker sliced chicken, cooking time will take longer). Set aside and keep warm.
  • Wash and remove stems of the shitake and white/brown mushrooms. Only remove the very bottom part of the shimeji mushrooms; do not remove the whole stems.
  • Seperate the shimeji mushrooms from one another.
  • Slice the shitake and white/brown mushrooms.
  • Dice the garlic and onion.
  • Add the remaining 2 tablespoons of olive oil to fry pan and heat.
  • Add garlic and onion to pan and brown slightly.
  • After the garlic and onion begin to brown, add all the mushrooms, shimeji, shitake, and white/brown mushrooms and cook until mushrooms begin to brown.
  • Add soy sauce and mirin and cover pan and simmer until mushrooms are tender.
  • Remove from heat and add butter; mix well until thoroughly melted.
  • Top chicken with sauce and serve with steamed rice and vegetables.

BAKED CHICKEN IN MUSHROOM SAUCE

Baked Chicken in Mushroom Sauce image

I found this recipe somewhere on the internet, I don't think it was Recipe Zaar because I looked for it but didn't see it. Turned out great and wanted to share it.

Provided by kitty cook

Categories     Chicken Breast

Time 40m

Yield 4 , 4 serving(s)

Number Of Ingredients 11

4 large boneless skinless chicken breasts
1/4 cup all-purpose flour, divided
2 tablespoons margarine
1 cup sliced mushrooms
1 cup low sodium chicken broth
1/2 teaspoon salt
1/8 pepper, to taste
1/3 cup mozzarella cheese
1/2 cup parmesan cheese
1/4 cup scallion
1/4 cup sherry wine

Steps:

  • Flatten chicken if needed as you want it to fry quickly.
  • Measure flour onto a flat plate and lightly coat chicken. Preserve 1/2 tablespoon of flour and set aside.
  • Melt margerine in a large skillet and brown chicken two to three minutes each side and place in a greased baking dish.
  • Preheat oven to 375.
  • Saute mushrooms in the same skillet (do not wash as you want to preserve the juices) until tender.
  • Add chicken broth, salt, and pepper and bring to a boil. Let boil for 3 minutes, add sherry and remaining 1/2 tablespoon of flour. Be sure to gradually add the flour by sprinkling in and mixing while allowing it to dissolve. Adding it too fast will result in clumps of flour in your mushroom sauce. Let the mixture reduce by half of your original liquid.
  • Pour mixture over chicken and bake uncovered in oven for 12-15 minutes.
  • Remove chicken from oven and layer half of the parmesan cheese, then sprinkle on green onions. Add the remaining parmesan and mozzarella on top and bake for an additional five to six minutes.
  • Enjoy :).

CRISPY THYME CHICKEN WITH MUSHROOM SAUCE

Crispy thyme chicken with mushroom sauce image

A wholesome and tasty chicken meal using only 5 ingredients

Provided by Mary Cadogan

Categories     Dinner, Main course

Time 35m

Number Of Ingredients 5

4 part-boned chicken breasts, skin on
10 sprigs lemon thyme
2 cloves garlic , chopped
400g chestnut mushrooms
142ml carton double cream

Steps:

  • Set the oven to a moderate temperature (160C-180C/gas 3-4). Rub chicken with a little oil and season well with salt and freshly ground black pepper. Strip the leaves from six of the thyme sprigs and sprinkle them evenly over the chicken. Lightly dust with flour (this helps crisp the chicken).
  • Heat 1 tbsp olive oil in a frying pan, add the chicken skin side down and fry for 5 minutes without moving it. Then continue cooking for a further 10-15 minutes, turning regularly, until the chicken is tender and the skin crisp and browned. Remove to a plate and keep warm in the oven.
  • Drain almost all the oil from the pan. Add the garlic and mushrooms and cook over a high heat, tossing the mushrooms until they start to soften. Stir in the cream, the remaining thyme sprigs, and season. Simmer for a few minutes until the mushrooms are cooked, then serve with the chicken. New potatoes, and a simple green salad of Little Gems and rocket leaves lightly dressed with lemon juice and olive oil, are the perfect accompaniment.

CHICKEN AND MUSHROOMS IN CREAM SAUCE OVER ZOODLES

Chicken and Mushrooms in Cream Sauce over Zoodles image

Zucchini noodles, or "zoodles" stand in for pasta in this rich, flavorful dish. Chicken, mushrooms, shallots, and sun-dried tomatoes cook in a cream and wine sauce that will invite you back for more! Garnish with fresh basil.

Provided by Bibi

Categories     Meat and Poultry Recipes     Chicken     Chicken Breast Recipes

Time 1h5m

Yield 8

Number Of Ingredients 14

2 pounds boneless, skinless chicken breasts
½ cup all-purpose flour
½ teaspoon paprika
1 pinch salt and ground black pepper to taste
4 tablespoons unsalted butter, divided
1 ½ cups sliced mushrooms
½ cup chopped shallot
½ cup chopped sun-dried tomatoes
5 cloves garlic, minced
1 cup chicken broth
1 cup dry white wine
2 cups heavy cream
1 tablespoon minced fresh basil
4 medium zucchini, spiralized

Steps:

  • Pat chicken dry with paper towels. Lightly pound each chicken breast to 1/2-inch thickness, and cut into 2 or 3 pieces.
  • Combine flour, paprika, salt, and pepper in a 1-gallon resealable bag. Add chicken pieces, seal, and shake to coat with flour mixture. Remove each piece from the bag, lightly shaking off excess flour.
  • Melt 2 tablespoons butter in a deep, 12-inch nonstick skillet over medium heat until hot. Add chicken pieces to the skillet and cook until browned, about 4 minutes per side. Transfer chicken to a plate and keep warm.
  • Add 1 tablespoon butter, mushrooms, shallot, sun-dried tomatoes, and garlic to the same skillet. Stir until fragrant, about 1 minute. Pour in chicken broth and wine. Cook, uncovered, stirring occasionally, for 5 minutes. Add cream and minced basil; cook and stir for about 1 minute. Return chicken pieces to the skillet and continue cooking, uncovered, on medium-low heat, stirring occasionally, for 20 minutes.
  • Meanwhile, melt remaining 1 tablespoon butter in a separate 12-inch skillet over medium heat. Lightly cook zucchini noodles, stirring occasionally until heated through, 3 to 5 minutes. A longer cooking time will result in softer noodles. Season with salt and pepper.
  • Remove the chicken to a plate. Taste sauce and adjust seasoning.
  • Place about 1 cup zoodles on each plate. Add 2 or 3 chicken pieces and cover with sauce.

JAPANESE-STYLE SESAME CHICKEN

Japanese-Style Sesame Chicken image

I say this is Japanese-style because it is similar to the sesame chicken served at a Japanese restaurant in my hometown. Of course they set it on fire and all of that stuff, so it isn't quite as good, but it is close enough for home. My family loves this. I serve it with Recipe #186399.

PAN-FRIED CHICKEN IN MUSHROOM SAUCE

Pan-fried chicken in mushroom sauce image

Creamy chicken and mushroom dish - a fabulous French seasonal recipe

Provided by Good Food team

Categories     Dinner, Lunch, Main course, Supper

Time 1h45m

Number Of Ingredients 8

2 tbsp sunflower oil
6 large, free-range chicken legs, halved at the joint so you have 6 thighs and 6 drumsticks
700ml/1¼ pts chicken stock (or water)
50g butter
1 onion, finely diced
400g mixed wild mushrooms
300ml/½ pt dry white wine
284ml pot double cream

Steps:

  • Heat the oil in a large non-stick frying pan. Fry the thighs for 8-10 mins, skin side only, until golden brown, then transfer to a casserole dish. Fry the drumsticks for about 5 mins each side and add them to the thighs.
  • Pour the stock over the chicken legs in the casserole. There should be enough stock to just cover the chicken, if not add a little water. Bring stock to the boil and cover, leaving lid slightly ajar. Cook at just below simmering point for 30-35 mins until chicken is cooked.
  • While chicken is simmering, drain oil from the pan. Heat the butter in pan and add onion. Sweat onion for 5 mins until soft, but not coloured. Turn up the heat, add the mushrooms, then fry for 3 mins until they soften and start to smell wonderful. Pour over the white wine, raise the heat to maximum and boil rapidly for 6-8 mins until reduced by two-thirds. Turn off the heat and leave until chicken has cooked.
  • Once chicken legs are cooked, strain stock into pan with the onion, mushrooms and white wine, bring back to the boil and reduce again by two-thirds until it is thick and syrupy. Pour in double cream, bring it to the boil, season if you want, then pour it over chicken. Heat chicken through in the sauce for 2-3 mins then turn off the heat and leave for a few mins before serving. This is such an aromatic and beautiful looking dish you should serve it straight from the casserole with the lid on.
