SPICY SAUSAGE BITES

1 tablespoon extra-virgin olive oil
Two 8.5-ounce packages merguez sausage or spicy lamb sausage
10 ounces store-bought puff pastry, cut into 1-by-3-inch strips
1 egg, beaten
1/2 teaspoon caraway seeds
1/2 cup sour cream
1/4 cup chopped fresh mint
1/4 teaspoon salt

Steps:

  • Line a baking sheet with parchment paper.
  • Preheat a large skillet over medium-high heat. Add the oil to the pan, followed by the sausages. Sear the sausages on all sides, 6 to 8 minutes. Remove to a plate and let cool to room temperature.
  • Cut the sausages into 1 1/2-inch pieces and roll the each piece in a strip of puff pastry. Place the wrapped sausages, seam side down, on the prepared baking sheet. Brush the tops of the rolls with egg and sprinkle with the caraway seeds. Refrigerate for 30 minutes before baking.
  • Preheat the oven to 400 degrees F.
  • Transfer the baking sheet to the preheated oven and bake for 20 minutes, or until the pastry is puffed and golden brown.
  • While the rolls bake, prepare the dipping sauce. In a small bowl, whisk together the sour cream, mint and salt. Let the flavors marry for at least 5 minutes before serving alongside the sausage bites.

1 cup cold butter, cubed
1 ⅔ cups cold pastry flour
⅓ cup cold water
½ pound bulk pork sausage
1 egg, beaten
¼ cup dry bread crumbs
1 ½ tablespoons minced garlic
1 teaspoon onion powder
1 egg, beaten

Steps:

  • Place 1/4 cup butter in a food processor. Add flour; pulse until butter is completely mixed. Add remaining butter and pulse until pea-sized pieces remain. Add water evenly until a loose, ragged dough forms. Place dough between 2 pieces waxed paper and roll out into a rectangle. Cut into 3 strips.
  • Combine pork sausage, 1 egg, bread crumbs, garlic, and onion powder in a bowl. Add filling to the pastry strips; roll pastry closed around the filling. Refrigerate rolls for 30 minutes.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Cut rolls into 1-inch pieces and place seam-side down on a baking sheet. Brush tops with beaten egg.
  • Bake in the preheated oven until golden brown, 15 to 20 minutes.

2 (8 ounce) cans refrigerated crescent dinner rolls
16 tablespoons honey mustard
16 tablespoons coarsely grated sharp cheddar cheese
4 fully cooked mild sausages, quartered lengthwise (such as spiced apple)

Steps:

  • Spray large heavy baking sheet with nonstick spray.
  • Unroll dough on work surface; seperate along perforations into individual triangles.
  • Spread each triangle with 1 teaspoon mustard; sprinkle each with 1 TBS cheese.
  • Arrange 1 sausage quarter on triangle, parallel to short side, leaving 1/2 inch border.
  • Forld short side of dough over sausage; continue to roll up.
  • Arrange sausage roll, seam side down, on prepared sheet.
  • Repeat with remaining triangles, mustard, cheese, and sausages.
  • (Can be made 8 hours ahead. Cover; chill) Preheat oven to 375*F.
  • Bake sausages until dough is golden, about 20 minutes.

One 16-ounce log pork breakfast sausage, such as Jimmy Dean, chilled
4 slices deli ham (about 2 1/2 ounces)
One 8-ounce tube refrigerated crescent dough, such as Pillsbury
1 large egg, beaten with a splash of water
1 teaspoon poppy seeds
Honey mustard, for serving

Steps:

  • Preheat the oven to 375 degrees F and line a rimmed baking sheet with parchment.
  • Remove the plastic packaging from the sausage while keeping it together in its original shape. On a work surface, gently roll the sausage log back and forth into a 10-inch log. Transfer the log to the prepared baking sheet and bake until browned and cooked to 155 degrees F, about 25 minutes; transfer the sausage to paper towels to drain. Discard the parchment and reline the baking sheet with a new piece.
  • Arrange the ham slices side by side and overlapping by 1 inch on a cutting board to form a 9-inch-long rectangle. Place the sausage log parallel to one long end of the rectangle and roll the sausage up in the ham. Place the crescent dough sheet on a cutting board and pinch the perforated seams closed so the dough is solid. Arrange the ham-wrapped sausage parallel with one short end of the dough sheet and roll it so that the dough wraps around the sausage completely.
  • Transfer the pastry-wrapped sausage to the prepared baking sheet seam-side down, brush with the egg mixture and sprinkle with the poppy seeds. Bake until the pastry is golden brown and cooked through, 15 to 20 minutes. Transfer to a cutting board and slice. Serve with honey mustard for dipping.

LAMB SAUSAGE IN PUFF PASTRY

1 pound fresh lamb sausage, 1/2 inch thick, in a coil
2 sheets (1 box) frozen puff pastry (preferably Pepperidge Farm), defrosted overnight in the refrigerator
2 tablespoons dijon mustard, plus more for dipping
1 egg, beaten with 1 tablespoon water or milk, for egg wash

Steps:

  • Preheat the oven to 400 degrees F.
  • Bake the sausage on a baking sheet for 20 minutes. Turn the sausage and bake it 5 to 10 minutes more, until it's fully cooked. Cool to room temperature.
  • Unfold the puff pastry on a lightly floured board. Cut each piece in half lengthwise and brush the top sides with mustard. Divide the sausage into 4 equal pieces. Starting at the long end of the pastry, place 1 piece of the sausage on top of the mustard and roll it up tightly, overlapping the end by 1/2 inch and sealing the pastry by brushing the edge with water. Cut off the excess pastry. Roll the other 3 pieces of sausage in puff pastry. Place the 4 rolls, seam side down, on a baking sheet lined with parchment paper. Brush with the egg wash. Lightly score each roll diagonally to make 7 equal pieces. Bake for 20 to 25 minutes, until browned. Slice and serve immediately with mustard.

4 cups chopped peeled apples

3 tablespoons butter, melted
2 tablespoons sugar
1/4 teaspoon ground cinnamon
Vanilla ice cream, optional

Steps:

  • In a large bowl, combine the sugar, flour and cinnamon; add apples and toss to coat. On a lightly floured surface, roll out each pastry sheet into a 12-in. square. Cut each into four squares. , Spoon 1/2 cup apple mixture into the center of each square; fold diagonally in half and press edges to seal. Place on a parchment-lined baking sheet., In a small bowl, combine the butter, sugar and cinnamon; brush over pastry. Bake at 400° for 12-16 minutes or until golden brown.
