2 tbsp vegetable oil
430g Maris Piper potatoes , cut into 2cm cubes
40g pastrami , torn
30g emmental , grated
2 medium eggs
sliced gherkins , to serve
American mustard , to serve (optional)

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Heat the oil in a medium-sized ovenproof frying or skillet pan. Add the potatoes and fry over a medium-high heat for 15 mins or until golden brown and crisp. Season to taste.
  • Nestle bundles of the pastrami into the pan, sprinkle over the emmental, then make two indentations in the potatoes and gently crack the eggs into each one. Transfer the pan to the oven and cook for 8-10 mins or until the egg whites have just set with the yolk still runny. Season the eggs with pepper, then top the hash with the gherkins. Finish with a squirt of mustard, if you like.

Because a key ingredient in hash is meat that is already cooked, it's perfect for leftovers and friendly for home cooks. (So feel free to try the recipe with roast beef instead of the pastrami, or even leftover pork and chicken.) Here, in classic form, the dish also includes potatoes for starch and onions for sweetness. A couple of lightly fried eggs on top will provide a sauce that brings all the flavors together.

2 pounds medium-size waxy potatoes like Yukon Gold
6 cups canola oil
1 tablespoon olive oil
3 tablespoons butter, cut into small pieces
1/4 cup minced shallots
2 teaspoons minced garlic
1/3 cup finely chopped parsley
1/2 pound pastrami, corned beef, roast beef, cooked pork or chicken in bite-size pieces
Poached or sunny-side-up eggs, for serving
Hot sauce, for serving

Steps:

  • Put the potatoes in a pot large enough to hold them in a single layer. Pour in canola oil to cover. Turn the heat to medium, bring to a simmer, turn heat to low and simmer until potatoes are just cooked through, 20 to 30 minutes. Lift out with a slotted spoon and set aside to cool, at least 30 minutes or overnight. (Oil can be reused.)
  • Peel potatoes and cut into large dice. In a large nonstick skillet, heat olive oil over medium heat until shimmering. Add potatoes and distribute evenly in pan, pressing down lightly. Cook, undisturbed, 4 to 5 minutes, until browned. With a large spatula, gently turn potatoes over (don't worry if they break up) and redistribute in pan. Cook 4 minutes, until well crisped. (Do this in two batches if pan is not large enough.)
  • Stir in butter, shallots, garlic, parsley and pastrami or other meat, and cook over medium-low heat, turning occasionally, just until pastrami is heated through and shallots are just soft, about 3 minutes.
  • Serve with eggs on top and hot sauce on the side.

1 large russet potato (about 1 pound), peeled and cut into 1/2-inch cubes
1 medium yellow onion, chopped
1/4 teaspoon kosher salt
2 large cloves garlic, thinly sliced
1 teaspoon chopped thyme leaves
1/4 teaspoon ground coriander
1/4 teaspoon cracked black pepper
8 ounces thickly sliced pastrami, trimmed of most of its fat, then cut into pieces slightly larger than the potatoes

Steps:

  • 1 Heat the butter and oil in a large saute pan over medium-high heat
  • 2 Add the potato and onion, spreading them in an even layer
  • 3 Cook undisturbed for 4 or 5 minutes, so the potato is nicely browned on the bottom
  • 4 Season with the salt and cook for 5 minutes, stirring often to make sure the potato is cooked through
  • 5 Stir in the garlic, thyme, coriander and pepper; cook for 1 minute, then add the pastrami and cook for 2 minutes, until the meat is incorporated, warmed through and lightly browned
  • 6 Serve warm

Steps:

  • Heat butter and 2 Tbsp. oil in a large skillet over medium-high. Add potatoes and winter squash and season with salt and pepper. Cook, stirring occasionally, until vegetables are tender, 25-30 minutes.
  • Add leeks and garlic to hash and season with salt and pepper. Using the back of a spoon or a spatula, lightly smash vegetables. Add pastrami and cook, stirring occasionally, until meat is warmed through and flavors have melded, 10-12 minutes.
  • Heat remaining 2 Tbsp. oil in a medium skillet over medium-high. Carefully crack eggs into skillet one at a time and season with salt and pepper. Cook until whites are set and slightly puffed but yolks are still runny, about 2 minutes.
  • Divide hash among shallow bowls and top each with an egg; scatter chives over top. Serve with sour cream alongside, if desired.

800g sweet potatoes , peeled and cut into 1.5cm chunks
2 tbsp olive oil
1 tbsp smoked paprika
1 large red onion , halved and thinly sliced
2 garlic cloves , finely chopped
6 thyme sprigs , leaves picked
4 slices pastrami , cut into strips
4 eggs
small pack flat-leaf parsley , chopped

Steps:

  • Heat oven to 200C/180C fan/gas 6. Toss the sweet potatoes with 1 tbsp oil, the paprika and seasoning. Spread over a shallow roasting tin and cook in the oven for 30 mins. Meanwhile, heat the remaining oil in a large non-stick frying pan and add the onion, garlic and thyme. Cover with a lid and cook over a low heat for 15-20 mins until softened and starting to caramelise. Stir occasionally; if it starts to catch, add a splash of water. Remove the lid, add the pastrami and fry for another 5 mins until the pastrami is hot and starting to crisp.
  • Bring a large pan of water to a simmer on a medium heat. Take the sweet potatoes out of the oven, add to the onion pan and stir. Add the eggs, one at a time, to the water and simmer for 2-3 mins until the whites are cooked and the yolks are still soft. Stir the parsley through the hash, divide between 4 bowls and top with the poached eggs.

1 gallon water
10 ounces light brown sugar
5 ounces kosher salt
2 ounces pink curing salt
5 teaspoons coriander seeds
5 teaspoons yellow mustard seeds
2 1/2 teaspoons fennel seeds
2 1/2 teaspoons crushed juniper berries
1 teaspoon red chile flakes
6 bay leaves
2 whole cloves
2 cinnamon sticks
2 star anise
Ice
1 cup black peppercorns
3/4 cup coriander seeds
1/4 cup juniper berries
1 cup kosher salt
1 cup light brown sugar
2 tablespoons red chile flakes
2 tablespoons granulated garlic
1 whole brisket, trimmed

Steps:

  • For the brine: In a large stockpot, add half of the water, the brown sugar, kosher salt, curing salt, coriander seeds, mustard seeds, fennel seeds, juniper berries, chile flakes, bay leaves, cloves, cinnamon and star anise and bring to a boil. Then simmer for 30 minutes. Add the remaining water with some ice to chill the brine.
  • For the rub: Grind the peppercorns, coriander and juniper until crushed but still a little chunky. Add to a mixing bowl. Add the salt, brown sugar, chile flakes and granulated garlic and stir to combine.
  • For the pastrami: First, clean all the fat off the brisket including the "V" between the two muscles, then follow the fat between the two muscles and separate them making a flat and a cap.
  • Transfer the brine to a large hotel pan or roasting pan. Add the brisket and refrigerate at least 5 days and no more than 10 days. Make sure the brisket is stirred once a day to get an evenly brined brisket.
  • After a minimum of 5 days, prepare a smoker for 225 degrees F.
  • Remove the pastrami, rinse it and blot dry with paper towels. Thoroughly rub the brined brisket with the pastrami rub. Place in smoker and cook for 8 hours until the internal temperature reaches 210 degrees F on an instant-read thermometer.

15 grams pastrami
2 medium-sized red peppers (alternatively use pepper of another colour, courgette or aubergine)
1 onion
1 pepper (preferably freshly ground)
1 salt
1/4 teaspoon ground coriander
1/2 teaspoon smoked paprika
1 teaspoon dried thyme

Steps:

  • In a deep frying pan heat the butter and olive oil.
  • Add the onion and potatoes, fry for a few minutes, careful not to burn. Add salt and cook for another few minutes until potatoes are almost soft.
  • Add pepper, coriander, thyme and pepper. Gently stir and cook for another 2 minutes. Add pastrami. Simmer until potatoes are soft and pastrami is warm and slightly brown.
  • Serve warm.

  • Just after you add the pastrami to the hash, coat a large nonstick skillet with cooking spray and place over medium heat. Crack each egg into a small bowl and slip them, one at a time, into the skillet, taking care not to break the yolks. Season with the remaining pinch of salt and pepper. Reduce heat to medium-low, cover and cook undisturbed for about 2 minutes for soft-set yolks.

5 -6 lbs beef silverside (grade Good or better (in 1 piece))
4 ounces canning salt or 4 ounces kosher salt
1 ounce cracked black pepper (#6 mesh)
2 ounces light brown sugar or 2 ounces dark brown sugar
1 ounce fresh ginger, peeled and minced
1 ounce fresh garlic, crushed
1 ounce ground coriander
to taste cracked black pepper (#6 mesh)
to taste white beef stock

Steps:

  • Trim the beef.
  • Combine the salt, pepper, sugar, ginger, garlic, and coriander.
  • Working on a clean, nonporous surface, rub the seasoning mixture into all surfaces of the beef.
  • Place the beef with all the seasonings into a heavy:-duty sealable plastic bag.
  • Expel the excess air, and carefully tie and seal the bag.
  • Put the bag in the cooler.
  • Rotate and lightly massage the sealed bag at least once a day for 12 days.
  • SMOKING Preheat the smoker to 650F (180C). Adjust the dampers to wide open.
  • Remove the beef from the plastic bag.
  • Using a trussing needle and strong cord, provide a secure loop to hang the meat on a smoke stick.
  • Place into the smoker Allow to air dry with no smoke for a full 24 hours.
  • Remove the meat from the smoker and cover loosely.
  • Set the temperature at 1'3()0F (540C) with the dampers wide open.
  • Return the meat to the smoker and hold at this setting for 2 hours.
  • Adjust the dampers to one-half open.
  • Monitor the temperature and raise the tempera ture gradually over the next several hours.
  • Remove the pastrami when its internal temperature reaches 1200F (490C). Do not shower with cold water.
  • Apply a finishing rub of cracked pepper.
  • Cool quickly and wrap tightly.
  • Refrigerate for 2 days before using.
  • To cook, unwrap the chilled pastrami and place in a large quantity of white beef stock.
  • Bring quickly to a full boil, reduce the heat, and simmer for 2 or more hours until tender.
  • Store the pastrami tightly wrapped and well-chilled at all times.
