SIMPLE BREADCRUMB SOUP
This simple and tasty soup is filling and so quick to make. My friend's Italian grandmother used to make this for anyone with a bit of tummy trouble. Whether it was the flu or a bit too much to drink the night before, this soup always settled the stomach, and it was always a hit with both young and old. I have it for lunch all of the time when I only have a few minutes to spare. Great on a chilly day.

Steps:
- Bring chicken broth to a slow boil in a sauce pan.
- In a small bowl, beat egg and add the parmesean cheese.
- the mixture should still be runny, yet thickened.
- Add breadcrumbs and mix.
- the mixture should form a soft ball, but it should still be moist.
- Drop the mixture into the boiling broth, break up the ball with a fork and leave to boil for another 3-4 minutes.
- The breadcrumbs should begin floating to the top and binding together.
- Serve hot.

This is traditionally eaten for breakfast in Spain, but is similar to Italian bruchetta, which is usually considered and appetizer. So enjoy it any time of the day. If your tomatoes are small, you will want more - if really big, one should do it, this is very flexible.

- Cut tomato in half and, holding the skin side, pulp on the coarse side of a cheese grater. Be sure to catch all the juice.
- To serve place a clove of garlic and a couple of rounds of toast on each plate.
- Rub the clove of garlic on the toast lightly pour oil liberally over the bread followed by spoonfuls of the freshly pulped tomato. Finish with a sprinkling of salt.

- Crust:.
- Mix all together well. Line 9x13-inch pan with the mixture. Pat in firmly. Bake at 350°F for 20 minutes. Let cool completely.
- First Layer:.
- Mix together softened cream cheese and powdered sugar. Add in Cool Whip and mix in well. Spread over the cooled nut crust.
- Second Layer:.
- Mix together all pudding mixes and milk until well blended and starts to thicken. Spread over the cream cheese layer.
- Topping:.
- Top with Cool Whip.
- Chill in the refrigerator for several hours so cream cheese and pudding set well.

Steps:
- You will also need: brown thread (for non-edible whiskers- optional) and 4 toffee apple sticks.
- Break the Marzipan into 4 equal pieces and shape into rats.
- Trim the bootlace to size and insert appropriately for tails.
- Coat the bodies with a thin layer of toffee spread and roll them in the chocolate sprinkles to give the effect of fur.
- Use a small blob of icing for the eyes.
- If doing whiskers cut a few 5 cm lengths of thread and 'sew' them through the nose.
- Gently push a stick up each-- er, rat, making sure it is secure.
- It's all a bit dreadful, isn't it?.
- Bust still much better than using a real rat.
- In a heavy bottoms pan dissolve the sugar in the water and cook over a medium heat until it's golden brown (warning this gets very hot so be careful!).
- When it's ready turn off the heat and quickly coat each rat in it- do NOT use a pastry brush as it will melt!
- Place the rats in a cool dry place to set.

BUGIA
This is an adopted recipe. I did a bit of Googling and learned that it is a Polish cookie! The spelling should be 'bugija' and it means "liar's cookies" as in "Have you been eating the cookies?" "No! Honest, I haven't." "Then what is all that powdered sugar doing on your chest?" Bugia, or liar's cookies, leave a telltale trail. Nifty, huh? Enjoy!

- Sift the flour with the baking powder, salt, and sugar and set aside.
- In the bowl of a stand mixer fitted with paddle attachment, mix together the eggs, butter, orange juice, brandy, vanilla, and anise seeds until well blended.
- Add the dry ingredients all at once and mix on low speed until the dough cleans the sides of the bowl and adheres to the paddle.
- Remove the dough from the bowl onto a floured board.
- Knead by hand until smooth.
- Form the dough into a ball, flatten slightly, and place in a bowl.
- Cover with a tea towel and chill at least 2 hours or up to overnight to allow the dough to relax.
- Heat the oil in a deep fryer or deep pot to 350 degrees F.
- Meanwhile, cut the dough into 4 or 6 equal pieces.
- Keeping the dough and work surface well floured, pass the dough through the widest setting of a pasta machine 3 or 4 times.
- Then pass through successively narrower settings until the dough is almost thin enough to see through; These can also be rolled by hand- they will not be as thin, but they will be just as good.
- Cut the dough into long strips 3 inches wide, then cut the strips on the diagonal into pieces about 3 inches long.
- If the dough tears, cut it off and work it back into the dough.
- The cookies curl when they fry, so fancier shapes are not important.
- As the cookies are cut, transfer them to baking sheets lined with flour-dusted tea towels, and cover with tea towels so they won't dry out before frying.
- Fry in batches, turning once, until puffed and golden brown, about 1 minute.
- Transfer with a slotted spoon to paper towels to drain.
- While the cookies are still hot, dust them well with powdered sugar.
- Wait for a few minutes while the oil and heat absorb and melt most of this first coating.
- Dust well a second time until the cookies are quite white.
- The cookies will keep for a week or so in an airtight container.
- You may need to re-dust them with sugar before serving.

ITALIAN SAUSAGE BREAD
This is an appetizer that my husband's Italian grandmother used to make when he was a kid. When we married, he made it for my family at the holidays and now it's our most requested dish. It's so easy and everyone will think you slaved over it. This recipe makes two loaves, and trust me, you'll want to make both. Grandma Tallini makes her own bread dough of course, and you can too, but I find pizza dough from the local pizzeria or from the supermarket deli works just as good and saves me a lot of time. Same thing goes for the marinara.

Steps:
- Line a cookie sheet with non-stick foil, set aside.
- Melt butter in a large skillet, add onions, salt, pepper and parsley. Cook onions until they are translucent, then add the garlic. Cook the onions until they are carmelized.
- Remove the onions to a bowl, leaving the extra butter in the pan.
- Put the sausage into pan and chop it into bite sized chunks. Cook the sausage until it is browned.
- Add the onions back to the pan with the sausage and cover with a lid. Simmer on low heat for about 15-20 minutes, stirring occasionally. DO NOT let it burn.
- Meanwhile, preheat the oven to 350.
- Flour a surface and roll out one dough ball with a rolling pin until it is the size of a large pizza. Try not to let it get any thin spots or holes.
- When the sausage mixture is finished, use a slotted spoon to scoop half of it onto the dough and spread it evenly over the surface. You will save the other half for the second dough. Cover with a layer of half the shredded mozzarella.
- Roll the dough up like a cinnamon roll, but tuck in the ends like a burrito before you get to the end of the roll.
- Lay it with the flap down on the cookie sheet and brush with the egg white.
- Bake in the oven until golden brown, approximately 25-30 minutes. After baking, let the bread rest for 10 minutes before slicing.
- Repeat process for second loaf.
- Slice and serve with marinara sauce for dipping.

I'm not sure on the spelling, but my Italian grandmother used to make this a lot when we were kids. Apparently it's usually considered baby food, but I still love it! (Pasta cooking time included in the time)

Steps:
- Cook the pasta (also called pastina because it's so small) as instructed on the box.
- Drain the water out.
- If using an electric stove, you can return the pot to the stove and use the residual heat for the next part.
- If you are using a gas stove, you'll need to turn the stove on to low.
- Add the other ingredients, mixing thoroughly and stirring frequently.
- Add more cheese to taste.
- Keep it on the heat for a few minutes to make sure the eggs are cooked.
