1 box (9 oz) frozen sugar snap pea pods
12 oz turkey breast tenderloins, cut into thin strips
1 large red bell pepper, cut into thin strips (1 1/2 cups)
2 cloves garlic, finely chopped
1 tablespoon grated gingerroot
4 medium green onions, sliced (1/4 cup)
1 tablespoon sesame seed, toasted

Steps:

  • Cook pasta as directed on package, adding frozen pea pods to the cooking water with the pasta. Drain well; transfer to large serving bowl.
  • Meanwhile, spray 12-inch skillet with cooking spray; heat over medium-high heat. In skillet, cook turkey, bell pepper, garlic and gingerroot 5 to 10 minutes, stirring constantly, until turkey is no longer pink in center and bell pepper is crisp-tender.
  • Toss turkey mixture, pasta and pea pods. Sprinkle with onions and sesame seed.

One-Pot Pasta with Ground Turkey and Spinach image

1 tablespoon canola oil
1 pound lean ground turkey
2 teaspoons kosher salt (, divided)
3 teaspoon ground cumin (, divided)
1 teaspoon oregano
1 1/2 teaspoon freshly ground black pepper (, divided)
¼ teaspoon crushed red pepper flakes
1 medium onion (, diced)
½ cup red bell pepper (, diced)
3 cloves garlic (, minced or pressed)
1 10- ounce can diced tomatoes and green chilies
1 teaspoon chili powder
10 ounces dried penne pasta
3 cups chicken broth
¼ cup heavy cream
4 cups fresh baby spinach ((2 big handfuls))
½ cup shredded Monterey Jack cheese
Chopped cilantro (, for garnish)

Steps:

  • Heat the oil in a large, high-sided skillet or Dutch oven over medium high heat until it shimmers and then add the ground turkey with 1 teaspoon kosher salt, 1 teaspoon 1 teaspoon ground cumin, the oregano, 1/2 teaspoon black pepper and the crushed red pepper. Break up the turkey with the spices and cook for about 5 minutes.
  • Add the onion, red bell pepper, and pressed garlic and cook for another 5 minutes or until the turkey is browned and the veggies soften.
  • Add the canned tomatoes with green chiles to the skillet or pot with the rest of the kosher salt, cumin, black pepper, chili powder and stir.
  • Add the penne pasta and cover with the chicken broth, bring to a boil, turn down to a simmer, cover and cook until the pasta is just tender, about 8 minutes, stirring occasionally.
  • Stir in the cream and fold in the spinach and cook until the spinach wilts, taste for seasoning and top with the shredded cheese.
  • Garnish with the chopped cilantro, sit back and watch the forks fly!

1 pound fresh asparagus, cut into 1-inch pieces
8 ounces uncooked angel hair pasta
3/4 cup julienned carrots
1/3 cup reduced-fat creamy peanut butter
3 tablespoons rice vinegar
3 tablespoons reduced-sodium soy sauce
2 tablespoons brown sugar
1/2 teaspoon crushed red pepper flakes
1/4 cup unsalted peanuts, chopped

Steps:

  • In a Dutch oven, bring the water to a boil. Add asparagus and pasta; cook for 3 minutes. Stir in carrots; cook for 1 minute or until pasta is tender. Drain and keep warm. , In a small saucepan, combine the peanut butter, vinegar, soy sauce, brown sugar and pepper flakes. Bring to a boil over medium heat, stirring constantly. Pour over pasta mixture; toss to coat. Sprinkle with peanuts.

1-3/4 cups uncooked penne or gemelli pasta (about 6 ounces)
1 tablespoon olive oil
3 celery ribs, chopped
1 cup chopped sweet onion
1 cup chopped red onion
1 cup chopped fresh broccoli
1 cup chopped carrots
3 garlic cloves, minced
1 tablespoon minced fresh parsley
1 tablespoon minced fresh tarragon or 1 teaspoon dried tarragon
1 teaspoon poultry seasoning
1 teaspoon lemon-pepper seasoning
1/4 teaspoon white pepper
1-1/2 cups sliced baby portobello mushrooms
1 cup frozen peas
2 cups cubed cooked turkey
1-1/2 cups vegetable broth
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
2/3 cup plain Greek yogurt
2 tablespoons reduced-fat cream cheese
1 tablespoon Worcestershire sauce

Steps:

  • Cook pasta according to package directions; drain. Meanwhile, in a Dutch oven, heat oil over medium-high heat. Add celery, onions, broccoli and carrots; cook and stir 10-12 minutes or until onions are tender. Add garlic, parsley, tarragon and seasonings; cook 1 minute longer., Add mushrooms and peas; cook and stir 3-5 minutes or until mushrooms are tender. Stir in turkey, broth, soup, yogurt, cream cheese and Worcestershire sauce. Bring to a boil. Reduce heat; simmer, uncovered, 10-15 minutes or until slightly thickened, stirring occasionally. Add pasta; toss to combine and heat through. Freeze option: Freeze cooled pasta mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or milk if necessary.

12 ounces cooked peeled deveined medium shrimp
2 red bell peppers, cut into 1/2-inch pieces
2 large broccoli stalks, stems peeled and thinly sliced, florets reserved
12 ounces bow-tie pasta
8 green onions, chopped

Steps:

  • Whisk first 6 ingredients in small bowl to blend. Season dressing to taste with salt and pepper.
  • Transfer half of dressing to large bowl. Mix in shrimp and bell peppers; let marinate 15 minutes.
  • Cook broccoli stems and florets in large pot of boiling salted water until crisp-tender, about 2 minutes. Using slotted spoon, transfer broccoli to sieve and drain. Cook pasta in same pot of boiling water until just tender but still firm to bite. Drain; rinse with cold water until cool and drain again.
  • Add broccoli, pasta and green onions to shrimp mixture. Toss with enough additional dressing to coat. Serve at room temperature, or cover and refrigerate up to 6 hours and serve cold.

Number Of Ingredients 12

3 chicken breasts (I've used bone in, skin on and baked it, then de-skinned and deboned it and boneless and skinless and sauteed it and I've used leftover chicken)
2 zucchini, diced
2 yellow summer squash, diced
1 red pepper, diced
2 c chicken broth (more if you like it saucier)
2 tsp chopped garlic (more or less to taste)
3 c cooked pasta of your choice, I like bow ties
8 large basil leaves, I use my kitchen scissors and cut it up right into the pan
1 large handful Parmesan or Pecorino Romano cheese (more or less to taste)
1 lemon, juiced
1 Tbsp corn starch mixed with a bit of cold water
salt and pepper, to taste

Steps:

  • 1. Prepare the chicken (bake 3 bone-in, skin-on breasts at 350 for about an hour, cool, remove skin and bone OR saute 3 boneless, skinless chicken breasts OR use leftover chicken) and cut into bite-size pieces.
  • 2. Dice zucchini, yellow squash, and red pepper. Melt and heat about 1 tablespoon olive oil and 1 tablespoon butter in a large frying pan or wok. Saute the vegetables until tender. Add the garlic and saute for 3 more minutes.
  • 3. Add chicken broth and heat until liquid is starting to bubble. Add the corn starch and cold water and stir. (Add more if you want the sauce thicker.) Add the lemon juice.
  • 4. Add the basil, chicken, and pasta and heat through. Season with salt and pepper to taste. Sprinkle with cheese and stir. Serve with some cheese sprinkled on top.
