1/2 cup firmly packed brown sugar
1/2 teaspoon cinnamon
1 dash salt
1/2 cup butter, softened
1 teaspoon vanilla
1 cup coconut
1/2 cup rolled oats
1/2 cup chopped walnuts
1 (14 ounce) can sweetened condensed milk
1 tablespoon grated lemon peel
1/4 cup lemon juice
1 dash salt
2 eggs, slightly beaten
1 (21 ounce) can cherry pie filling or 1 (21 ounce) can blueberry pie filling

Steps:

  • Heat oven to 375. In large bowl, combine flour, brown sugar, cinnamon, dash salt, butter and vanilla; mix at low speed until crumbly. Stir in coconut, oats, and walnuts.
  • Press 2 1/2 cups of crumb mixture into bottom of ungreased 12 x 8 inch baking dish or 13 x 9 inch pan; reserve remaining crumb micture for topping. Bake at 375 for 12 minutes or until light golden brown.
  • In medium bowl, combine all filling ingredients except fruit pie filling. Stir until mixture thickens. Spread evenly over crust. Carefully spoon fruit pie filling evenly over lemon filling mixture. Sprinkle reserved crumb mixture over filling. Bake at 375 for an additional 15-18 minutes or until golden brown. Cool; refrigerate 2 to 3 hours before serving. Store in refrigerator.

Steps:

  • Combine first 4 ingredients. Cut in butter with a pastry blender until mixture is crumbly.
  • Combine pie filling and almond extract in a greased 1 quart baking dish. Sprinkle with crumb mixture.
  • Microwave, uncovered, at HIGH 6 minutes or until thoroughly heated. Top each serving with ice cream.

2 tablespoons dark rum (optional)

1/4 cup plus 2 tablespoons all-purpose flour
2/3 cup rolled oats
1/3 cup sliced almonds

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-inch-square baking dish.
  • Toss the cherries in a large bowl with 1/2 cup sugar, the rum, vanilla, cinnamon, salt and 2 tablespoons flour. Transfer to the prepared baking dish.

1 cup granulated sugar
1/2 cup packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Dash nutmeg
1 1/2 sticks cold butter
1/2 cup slivered almonds
Four 12-ounce bags frozen tart cherries
1/4 cup cornstarch
2 teaspoons almond extract
2 cups heavy cream
2 tablespoons granulated sugar
Vanilla ice cream, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • Start with the crumb mixture. In a medium bowl, combine the flour, brown sugar, 1/2 cup granulated sugar, cinnamon, salt and nutmeg.
  • Cut the cold butter into pieces. Add the butter to the bowl and use a fork or pastry blender to cut it into the flour mixture. The mixture should resemble a moist, coarse meal. Add the slivered almonds and combine thoroughly.
  • Place the still-frozen cherries in a bowl, add the remaining 1/2 cup granulated sugar, cornstarch and almond extract and gently stir the cherries to combine.
  • Divide the cherries between 8 ramekins (about 1/2 cup each). Top with the crumb mixture, evening out the surface.
  • Bake until the topping is crisp and golden brown, about 45 minutes. If the topping appears underdone, continue baking in 10 minute increments until it's done.
  • To serve: Add the heavy cream and granulated sugar to the bowl of an electric mixer fitted with the whisk attachment and whip. Keep in the fridge until ready to serve.
  • Serve the individual crisps warm or at room temperature with a dollop of freshly whipped cream or vanilla ice cream.

Large crust:
1 1/2 sticks butter
1 1/2 cups flour
1 1/2 cups pecans, chopped
Dash salt
3 Tbsp sugar
Small crust:
3/4 stick butter
3/4 cup flour
1/2 cup chopped pecans
Dash salt
1 1/2 Tbsp sugar
Cream filling:
16 oz cream cheese, room temperature
8 oz Cool Whip
4 cups powdered sugar
Topping:
2 cans cherry pie filling

Steps:

  • In 2 separate bowls, mix each of the crust ingredients together (dough will be crumbly). Press the large crust onto a non-stick sprayed cookie sheet. Press the small crust onto the bottom of a 9x13x2" non-stick sprayed baking dish. Bake separately 15 to 20 minutes in a 350 degree oven. Cool crusts to room temp. After crusts cool, crumble large crust into small pieces. Leave small crust as it is--it will be the 1st layer of your dessert.
  • Cream filling:
  • With cream cheese at room temperature, mix these ingredients till creamy. Mix in crumbs of large crust. Spread over small crust in baking pan. Let chill 2 hours.
  • Topping:
  • Spread pie filling on cream filling layer. Then its ready to serve and you are in for the treat of your life!

The very first time that I made Cherry Crisp, my brother happened to be visiting. He is an ice cream lover-but he passed up the scoops of vanilla that he tops most desserts with so he could taste the cherries better! Wheat, soybeans and milo are the main crops on our farm. We also have three small cherry trees. I apportion all of that harvest for this recipe. My husband's is the manager of a coop. I work part-time as a church secretary...teach piano in our home...and enjoy making clothes for myself and our 3-year-old daughter. Cross-stitch is one of my favorite hobbies.

  • Crust.
  • In a bowl, combine flour,butter, and walnuts and mash into a 9x13 inch pan. Bake at 350 degs for 20 minutes or until lightly browned. Let cool completely.
  • Filling.
  • In a large bowl blend cream cheese, cool whip, and powdered sugar on high until smooth. Pour on top of crust and spread evenly.
  • Topping.
  • Spread both cans of pie filling evenly over the top and refrigerate for at least two hours before serving.

  • 1. Preheat oven to 350 degrees. Put in a baking dish sprayed with cooking spray, add pie filling. Sprinkle lemon juice over pie filling. Sprinkle dry cake mix over pie filling and slice butter in pats and place on top of cake mix or melt butter and mix with dry cake mix until mixture is crumbly, then put over cherry pie filling. Sprinkle with pecans. Bake about 45 minutes until golden and bubbly.
