A quick and easy Broccoli Pasta with SO MUCH flavor! Make it quick with pasta, broccoli, garlic, and lemon.

Number Of Ingredients 9

12 ounces broccoli florets (or 1 head)
1/2 pound short pasta
1/4 cup good olive oil
2 cloves garlic, (minced)
Salt and Pepper
1/4 teaspoon red pepper flakes (or more if you like it spicy!)
1 teaspoon lemon zest
Juice of half a lemon
Grated parmesan cheese for serving

Steps:

  • Bring a large pot of water to a boil. Once boiling, add about 1 tablespoon of salt and return to a boil. Add the broccoli florets and cook for about 2-3 minutes until just tender. Remove broccoli from pot and set aside. Do not drain water. Use the same water to cook the pasta.
  • Bring water back to a boil and add the pasta. Cook according to package, about 10 minutes.
  • While pasta is cooking, make the broccoli sauce. Roughly chop the broccoli and set aside. Heat the olive oil in a large pan over medium/high heat. Add the garlic and cook for 30 seconds until fragrant. Add the chopped broccoli, 1 teaspoon salt, 1/4 teaspoon pepper, red pepper flakes, lemon zest, lemon juice, and cook for 1-2 minutes until heated through.
  • Once the pasta is cooked, reserve 1/4 cup pasta water and add the pasta directly into the pan, top with grated Parmesan cheese, and toss to combine. If sauce needs to be thinned out, add some pasta water. Serve immediately!

1 small onion, chopped
3 garlic cloves, minced
3/4 cup chicken broth (I use Oxo)
1 bunch broccoli, chopped
salt and pepper
1 tablespoon lemon juice
1/4 cup parmesan cheese, grated
200 g pasta (I like whole wheat fettucini or spaghettini)

Steps:

  • In a medium saucepan cook onion and garlic in olive oil over a low heat until onions are soft.
  • Add chicken broth and broccoli and bring to a boil, season with salt and pepper.
  • Cover and boil gently for about 10 minutes, or until broccoli is very tender, stir occasionally.
  • Place broccoli mixture in a food processor or blender with lemon juice and parmesan cheese. Pulse a few times until smooth.
  • Toss pasta and sauce together and serve.
  • Enjoy!

Steps:

1 tablespoon olive oil

⅓ cup all-purpose flour
3 cups milk

⅛ teaspoon ground nutmeg
⅛ teaspoon dried thyme
1 ½ cups shredded sharp Cheddar cheese
1 ½ pounds fresh broccoli, cooked

Steps:

  • In a large pot of boiling salted water cook rigatoni or fusilli pasta with one tablespoon of oil until al dente. Drain.
  • Meanwhile, in a large saucepan melt butter or margarine. Stir in flour and milk and whisk until mixture boils and thickens. Add grated Parmesan cheese, salt, garlic salt, nutmeg, thyme and grated Cheddar cheese and stir until blended.

½ cup yellow onion, about half an onion, diced

16 oz pasta shells
4 cups broccoli, or one head of broccoli
½ teaspoon cayenne powder
¼ teaspoon nutmeg
1 cup milk
2 cups shredded cheddar cheese

Steps:

  • Heat olive oil on medium heat in a large pot. Add chicken breasts, season with salt and pepper, and allow the chicken to brown on one side.
  • Flip chicken, then add onions and garlic as the second side browns.
  • Once the chicken has browned on both sides, add chicken broth, water, and pasta to the pot.
  • Stir all ingredients, cover the pot with a lid, and bring to a boil. When it begins to boil, uncover and stir. Bring the heat to low, stir, then cover and let simmer for 20 minutes.
  • After 20 minutes has passed, uncover and add in the broccoli. Stir continually as the broccoli steams until the rest of the liquid evaporates.
  • Add milk and cheddar cheese and stir until the cheese melts and you have a smooth cheese sauce.
  • Add salt and pepper (to taste), cayenne, and nutmeg. Stir once more, then you're ready to serve.
