SPAGHETTI WITH QUICK MEAT SAUCE
Instead of opening a jar of sauce, try this easy spaghetti with meat sauce on a weeknight. Serve with steamed broccoli and garlic bread. The recipe makes enough for 8 servings. If you're serving only four for dinner, cook 8 ounces of spaghetti and freeze the leftover sauce.

Steps:
- Bring a large pot of water to a boil. Cook pasta until just tender, 8 to 10 minutes or according to package directions. Drain.
- Meanwhile, heat oil in a large skillet over medium heat. Add onion, carrot and celery and cook, stirring occasionally, until the onion is beginning to brown, 5 to 8 minutes.
- Stir in garlic and Italian seasoning; cook until fragrant, about 30 seconds. Add beef and cook, stirring and breaking up with a spoon, until no longer pink, 3 to 5 minutes. Increase heat to high. Stir in tomatoes and cook until thickened, 4 to 6 minutes. Stir in parsley and salt.
- Serve the sauce over the pasta, sprinkled with cheese.

Steps:
- 1. Saute onions in small amount of olive oil until light brown. If using fresh garlic, dice up two cloves and put in with onions.
- 2. Once onions are soft and light brown, mix in meat, and sprinkle with Mrs Dash salt/pepper. Saute until brown.
- 3. Add in can of crushed tomatoes and can of tomato sauce and stir.
- 4. Simmer for 45 minutes at least. Taste and add more seasoning if needed.
- 5. Boil water for pasta and cook pasta for 8 to 10 minutes. We like our pasta al dente (not too soft). Taste as you go.
- 6.When ready - strain - make sure all the water is gone. Put a little sauce on pasta so it does not stick. Keep the rest of the sauce in the bowl so you can each have as much as you want. A salad is a great side dish -- add grated parmesan if you like.

- Cook the pasta according to package directions.
- Meanwhile, heat the oil in a large skillet over medium heat. Add the onion, season with 1/2 teaspoon each salt and pepper, and cook, covered, stirring occasionally, 5 minutes. Add the carrot, celery, and garlic and cook, covered, stirring occasionally, until they begin to soften, about 4 minutes more.
- While the vegetables cook, combine the beef and wine in a medium bowl; break up the beef with a spoon.
- Add the beef mixture to the vegetables, increase the heat to medium-high and cook, breaking it up with a spoon, until the liquid has evaporated and the meat begins to brown, about 3 minutes. Stir in the red pepper, cinnamon, and nutmeg.

- Set up your grill for cooking with direct and indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
- Make the tomato sauce: Combine the tomatoes along with their juices, butter, red pepper flakes, bay leaves, onion halves and a pinch of salt in a very large saucepan or skillet. Place over the indirect-heat side of the grill and bring to a simmer. Cook, uncovered, for about 45 minutes, stirring occasionally and using a potato masher to smash the whole tomatoes at the halfway mark. Discard the onion and bay leaves.
- Make the pesto: In the bowl of a food processor, pulse together the garlic and nuts until chopped. Add the basil with a pinch of salt and pulse until it makes coarse crumbs. Transfer to a mixing bowl and add the Parmesan and olive oil. Mix until well combined. Season with salt and pepper.
- Place a large pot of salted water over the direct-heat side of the grill and bring to a boil. Cook the pasta 2 minutes less than the package directions, then scoop out into the tomato sauce, adding 1/2 cup pasta water. Toss to coat, then remove from the heat. (If the pasta is too dry, add some more pasta water.) Stir half the pesto mixture into the pasta. Plate and serve immediately with more pesto over the top.

- Heat olive oil in a shallow soup pot.
- Sauteé garlic until golden, then add onions and peppers.
- Sauteé until onions are starting to become translucent, then add beef, and season with salt and pepper.
- Brown until cooked through (about 10-15 minutes).
- Drain grease.
- Add wine (if using) and allow to cook for a couple of minutes.
- Add tomato sauce, tomatoes, boullion cube, parsley, oregano, thyme and basil, salt and pepper and sugar.
- Stir to combine and bring to a boil.
- Boil for about 1 minute then reduce heat to med-low and simmer 20 minutes.
- Serve over spaghetti, top with parmesan cheese and serve with crusty french bread.
