GNOCCHI WITH VODKA CREAM SAUCE

9 potatoes, scrubbed
Kosher salt
2 pounds all-purpose flour
1 egg yolk
10 ounces Parmesan, grated, plus more for serving
2 tablespoons mixed finely chopped herbs (equal parts basil, chives, and parsley)

2 tablespoons butter
1 tablespoon finely chopped shallots
1 tablespoon vodka
1 tablespoon heavy cream
1 cup Gabriel's Tomato Sauce, recipe follows
14 ounces canned or fresh ripe tomatoes
3 tablespoons olive oil
6 fresh basil leaves
Kosher salt and freshly ground black pepper

Steps:

  • To make the gnocchi: place the potatoes in a large pot. Cover with water. Add salt and bring the water to a boil over high heat. Reduce the heat to medium and simmer the potatoes until they are tender, about 35 minutes. Drain the potatoes. When they are just cool enough to handle, peel them then pass them through a food mill.
  • In a large bowl, mix the flour with the egg yolk, cheese and warm potatoes. Work the mixture until it becomes a smooth dough, then incorporate the herbs. Form the dough into 2 balls.
  • On a lightly floured work surface, roll each ball of dough into a 'rope' about 1/2-inch thick. Cut the 'ropes' into 3/4-inch pieces. Arrange the gnocchi on a lightly floured baking sheet. (You can freeze the gnocchi at this point and use straight from freezer.)
  • Shortly before serving, bring a large pot of salted water to boil over high heat. Reduce the heat so the water maintains an active simmer. Working in small batches, drop gnocchi into the water. Cook the gnocchi until they float 3 to 4 minutes, then remove with a slotted spoon and drain fully in a colander.
  • To make the sauce: Melt the butter in a large skillet over medium heat. Add the shallots and cook, stirring occasionally, until they soften. Add the vodka, cream, and tomato sauce, and simmer until the flavors blend, 2 to 3 minutes.
  • Immediately before serving, add the gnocchi to the sauce and heat, stirring gently to coat. Spoon the gnocchi into warm bowls and serve.
  • Puree whole tomatoes without their liquid in a food mill. Heat the oil in a large deep skillet over medium heat. Add the pureed tomatoes. Add the basil, season with salt and pepper and simmer, stirring frequently until the sauce is concentrated, about 25 minutes. Remove the basil and refrigerate or freeze until ready to use.

1/4 cup extra-virgin olive oil
1 pound ground meat of choice (beef, veal or pork)
1/2 cup red wine
1 large yellow onion, diced
8 cups (2 quarts) prepared red sauce, such as marinara
3 tablespoons minced fresh thyme
2 cloves garlic, thinly sliced or minced
Salt and freshly ground black pepper
2 cups heavy cream
4 cups cooked gnocchi
1/2 cup ricotta
1/4 cup grated Parmesan

Steps:

  • In a saucepan over medium-high heat, add the olive oil and heat to the verge of smoking. Add the ground meat and cook, stirring, for 2 minutes. Reduce the heat to medium and continue to stir and cook until the meat is medium well, about 5 minutes. Next, deglaze the pan with the wine, stirring and scraping. Then add the onions and continue to cook until well cooked off, an additional 5 minutes.
  • To the same pan, add the red sauce, thyme, garlic and salt and pepper to taste. Continue to cook over medium heat until the sauce comes to a boil; reduce the heat to low and simmer for 30 minutes.
  • Add the cream and cook on low heat for 10 minutes. Add the cooked gnocchi and stir with a spoon to allow the sauce to coat the gnocchi. This should take 2 minutes.
  • To serve, spoon the sauced gnocchi into a bowl, top with the ricotta and finish with Parmesan cheese.

2 large baking potatoes
1 cup unbleached flour
2 tablespoons dried basil
2 tablespoons dried oregano
1 teaspoon salt
1/2 teaspoon garlic powder
1 (14 ounce) can tomato sauce
2 tablespoons dried basil
1/2 cup soymilk (or more to taste)

Steps:

  • Preheat the oven to 400 degrees. Scrub the potatoes and poke all over with a fork. Place on a baking sheet and bake for 1 hour. Remove the potatoes and peel the skin off. Mash the potatoes in a bowl until there are as few lumps as possible.
  • In another bowl, add the flour and seasonings, mix, and make a well in the center. Add the potatoes and slowly mix together to form a smooth dough. Add more flour if needed.
  • Dust a work surface with more flour, take sections of the dough, and roll out into a ½ inch thick rope. Cut the rope into ¾ inch long pieces. Take each piece and pinch the ends to form an oval ball, and roll with the tines of a fork to get a striped design on one side.
  • In batches, drop the gnocchi into heavily salted boiling water and scoop out with a slotted spoon after they rise to the surface. Keep warm in a bowl in the oven.
  • Meanwhile, heat the tomato sauce, basil and soy milk in a saucepan over low heat until it begins to bubble. Add more soy milk for a lighter, creamier sauce. Pour the sauce over the gnocchi, toss and serve.

Very quick and easy to make. All you need is the gnocchi (see my Gnocchi recipe), or any other pasta.

300 ml cream
150 g blue cheese, crumbled
125 g prosciutto, coarsely torn
70 g breadcrumbs (1 cup)
50 g parmesan cheese, grated (2/3 cup)

Steps:

  • Bring cream to the boil in a small saucepan, then simmer for 2min or until slightly reduced.
  • Add blue cheese to pan, season to taste with pepper, reduce heat to low-medium then cook, stirring occasionally, for 2-3min or until cheese has melted (don't worry if mixture isn't completely smooth).
  • Spread the gnocchi over the base of a large baking dish, scatter with prosciutto pieces then pour over the blue cheese sauce. Sprinkle with breadcrumbs and parmesan.
  • Bake in 180oC oven for 15-20min or until sauce is bubbling and crumbs are golden.

GNOCCHI IN FONTINA SAUCE

1 pound refrigerated gnocchi
6 tablespoons unsalted butter
2 tablespoons chopped shallots
8 ounces Italian fontina cheese, cubed
⅓ cup heavy cream
3 tablespoons freshly grated Parmesan cheese
1 tablespoon chopped fresh basil

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the gnocchi, and cook until tender, about 5 minutes. Drain, and set aside.
  • Once the gnocchi goes into the pot, start the sauce, as you want the gnocchi to be done first. Melt the butter in a saucepan over medium heat. Add the shallots, and cook for a few minutes, until tender. Stir in the cream, and heat to almost a boil. Gradually mix in the fontina and parmesan cheeses, being careful not to boil. Stir until smooth, then remove from the heat immediately, or the sauce may clump.
  • Place gnocchi into serving dishes, and spoon the sauce over them. Garnish with chopped fresh basil.

2 teaspoons olive oil
3 cloves garlic, minced
1 (14.5 ounce) can petite diced tomatoes
salt and freshly ground black pepper to taste
½ teaspoon Italian seasoning
1 tablespoon basil chiffonade (thinly sliced fresh basil leaves)

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes.
  • Meanwhile, heat olive oil in a heavy skillet over medium-high heat. Add garlic and sauté until fragrant, about 1 minute.
  • Add tomatoes with liquid and season with salt and pepper. Cook tomato sauce until slightly thickened, 5 to 10 minutes.
  • Once gnocchi float to the top, drain, and transfer to a serving dish. Top gnocchi with tomato sauce and sprinkle with basil chiffonade.
