  • Pierce 4 large russet potatoes with a fork. Bake directly on the oven rack at 350 degrees until tender, about 1 hour. Let cool, then quarter lengthwise and scoop out the flesh, leaving a 1/4-inch shell. Brush both sides with melted butter and season with salt and pepper. Bake, skin-side up, at 450 degrees until crisp, about 15 minutes. Add your favorite team toppings. (For cheesy skins, flip the baked shells over before topping, sprinkle with 1 cup grated cheddar cheese and bake an extra 5 minutes.)

5 lb yukon gold potato, peeled and cooked
2 cups shredded cheddar cheese
4 oz cream cheese
16 oz bacon, cooked and crumbled
1 bunch scallion, sliced
½ tablespoon salt
½ tablespoon black pepper
1 tablespoon onion powder
20 oz ham, sliced
1 lb cheddar cheese, 1 block, sliced into 20 1-inch (2-cm) squares
1 qt canola oil, for frying
2 cups all-purpose flour
8 large eggs, beaten
4 cups panko breadcrumbs
¼ cup shredded parmesan cheese
2 tablespoons fresh parsley, chopped

Steps:

  • In a large bowl, mash the potatoes until there are no lumps.
  • Add the cheddar cheese, cream cheese, bacon, scallions, salt, pepper, and onion powder.
  • Mix until smooth.
  • Transfer the mixture to a baking sheet lined with parchment paper. Smooth out the top.
  • Lay a 1-inch (2.5 cm) square of cheddar cheese in the center of a slice of ham. Fold the edges of the ham over the cheese, making a tight parcel. Repeat with the remaining ham and cheese.
  • Press a ham-and-cheese square into the potato mixture, making sure to leave 1 inch (2-cm) of space on all sides. Repeat with the rest of the squares.
  • Push the potato mixture around to cover up and seal the tops of the ham squares, then smooth out again.
  • Freeze for 30 minutes, then slice the mixture into squares so each square has a ham square in the middle.
  • Place the flour, eggs, and panko into 3 separate medium bowls.
  • Dip a square into the flour, shaking off any excess. Dredge in the egg, then in the panko. Repeat with the remaining squares.
  • Heat the oil in a large pot until it reaches 350°F (180°C).
  • Fry the potato squares two at a time until golden brown, about 4-5 minutes, then drain on paper towels.
  • Garnish the potato dippers with shredded Parmesan cheese and chopped parsley. Serve warm.

3 tablespoons canola oil
1 tablespoon grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon paprika

8 bacon strips, cooked and crumbled
1-1/2 cups shredded cheddar cheese
1/2 cup sour cream
4 green onions, sliced

Steps:

  • Preheat oven to 475°. Cut potatoes in half lengthwise; scoop out pulp, leaving a 1/4-in. shell (save pulp for another use). Place potato skins on a greased baking sheet. , Combine oil with next 5 ingredients; brush over both sides of skins. , Bake until crisp, about 7 minutes on each side. Sprinkle bacon and cheddar cheese inside skins. Bake until cheese is melted, about 2 minutes longer. Top with sour cream and onions. Serve immediately.

350g new potatoes
375g ready-rolled puff pastry
100g crème fraîche
50g thinly sliced ham
125g brie or camembert cheese, halved and sliced
green salad , to serve (optional)

Steps:

  • Boil the potatoes in salted water for 8-10 mins, until tender but still firm. Leave to cool, then slice.
  • Heat the oven to 200C/180C fan/ gas 6. Unroll the pastry with its baking parchment on a baking tray. Reserve 1 tbsp of the crème fraîche, then spread the rest over the pastry, leaving a 2cm border around the edge. Season. Layer the potatoes, ham and cheese over half of the pastry, seasoning the potatoes as you go.
  • Fold over the other half of the pastry and use a fork to seal the edges. Trim with a knife for a neat finish - the pie should look like a big sausage roll. Mix a little water into the reserved crème fraîche, then brush all over the pastry. Make a few cuts along the length, then bake for 35-40 mins until golden. Leave to cool for 10 mins, then serve with a salad, if you like.

Number Of Ingredients 6

4 medium baking potatoes
2 tsp olive oil
2 rashers streaky bacon
75g soured cream
1 chopped spring onion or 2 tbsp finely chopped chives
75g cheddar coarsely grated

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Put the baking potatoes on a baking tray. Prick all over with a fork and rub with a little oil. Cook potatoes in oven for 1 hr until golden and cooked all the way through. Remove from oven. Allow potatoes to cool for 15 mins.
  • While potatoes are cooking, heat 1 tsp oil in a medium frying pan and fry the bacon for 5-8 mins until crisp. Leave to cool, then transfer to a board and finely chop.
  • Cut the slightly cooled potatoes in half and scoop the flesh from the skin into a large bowl, leaving a little around the edges. Put the skins back on the baking tray, scooped side up.
  • Mash the potato flesh and soured cream together using a fork or masher. Stir in the cooled bacon, most of the spring onion or chives and half of the cheddar. Season to taste.
  • Divide the potato mixture evenly between the cavities of the potato skins. Sprinkle the remaining cheddar over each filled potato half. Return the potatoes to the oven for 20 mins until golden and bubbling.
  • Sprinkle over the remaining spring onion or chives and serve hot.

  • Wash and pat dry potatoes.
  • Rub each potato with shortening.
  • Prick potatoes several times with fork.
  • Bake for 1 hour at 375 degrees.
  • Cut in half, and scoop out inside leaving shell, and place on a cookie sheet.
  • In a large bowl, beat potatoes for 1 minute.
  • Add butter,onion,eggs, and pepper.
  • Continue until smooth and fluffy.
  • Fold in 1 cup of cheese and 1/2 cup of ham, fill potato shells with mixture.
  • Top with remaining 1/2 cup of cheese , and 1/2 cup of ham.
  • Sprinkle with paprika.
  • Bake at 375 degrees for 15-20 minutes or until potatoes are throughly heated, and cheese is melted.
