Meatless fajitas with oven-roasted vegetables such as peppers, onion, and cauliflower. This dish is flavorful, satisfying, healthy, plant-based, protein-rich, gluten-free, and easy to make. A great vegan dinner recipe that is perfect for families.

1 head of a small cauliflower
2 red peppers (sliced)
2 orange peppers (sliced)
1 medium/large onion (sliced)
2 tsp chili powder
1 tsp paprika
1 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
3/4 tsp sea salt ((or less/more to taste))
black pepper to taste
cayenne pepper (to taste)
1-2 tbsp oil
6 small tortillas
One 15 oz can black beans (rinsed and drained)
Pinch of salt
Pinch of onion powder
1 tsp balsamic vinegar
guacamole
fresh greens (e.g. cilantro) (to taste)
vegan cheese sauce ((optional))
hot sauce ((optional))

Steps:

  • This recipe has a video for easy instructions (see below).
  • Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
  • Chop the cauliflower into small florets (the smaller the pieces, the faster they will cook), slice the peppers and onion into medium-thick slices/strips and spread the vegetables into an even layer on a baking sheet (lined with parchment paper).
  • Drizzle with 1-2 tbsp oil and add all spices. Toss with your hands and roast the veggies in the oven for about 20-25 minutes until nicely browned and caramelized. Toss halfway. To warm the tortillas, pop them into the oven (wrapped in aluminium foil) for the remaining 10 minutes.
  • Heat the beans in a pan with the balsamic vinegar, a pinch of salt and onion powder.
  • To assemble fajitas: Top the tortillas with the roasted veggies, black beans, guacamole, and vegan cheese sauce (optional). Garnish with fresh greens and add some hot sauce on top (optional). Enjoy!

1 yellow bell pepper, sliced thin

1 1/2 tablespoons oil
2 teaspoons chili powder
1 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon cumin
1/4 teaspoon cayenne pepper
1/4 teaspoon cane sugar (optional to balance the spice)
1/2-3/4 teaspoon kosher salt
1/2 cup cilantro
Tortillas for serving (I got about 8-10 fajitas with this recipe, depending on how much you fill them)
Toppings of choice

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the peppers and onions in a large bowl and toss with the oil and spices. Toss well to combine, trying to coat the peppers with all of the spices.
  • Place mixture in a single layer on a baking sheet and roast for 25-30 minutes, until tender. Check on the mixture around 20 minutes, making sure they don't burn.
  • Remove from the oven and divide among tortillas. Top as you'd like! If you want a heartier meal, stir in a cup of black beans right after the peppers come out of the oven.
  • I love these with a bit of sour cream (vegan or regular) and a dollop of guacamole.

1 red onion, cut into 1/2 inch thick slices
1 tablespoon balsamic vinegar
2 garlic cloves, minced
12 whole wheat tortillas
4 cups warm cooked brown rice
salsa
cilantro

Steps:

  • Preheat oven to 450. Coat a baking pan with nonstick cooking spray.
  • In a large bowl, toss the eggplant with the oil to coat. Add the zucchini, bell peppers, onion, vinegar, and garlic, tossing to mix well. Transfer the mixture to the prepared pan. Roast, uncovered, stirring once or twice, until the vegetables are tender, 25-30 minutes.
  • Heat a dry large frying pan(not one with a non-stick surface) over medium heat. One at a time, heat the tortillas in the hot pan on each side until softened, about 20 seconds per side.
  • To serve: divide the tortillas among individual plates. Spread an equal amount of the vegetable mixture and rice on each tortilla. Top with 1/2 tablespoon of the salsa. Fold in both sides of each trotilla up over the filling, then roll to close.

1/4-1/3 cup balsamic vinegar
1 onion, sliced into thin strips

1/2 lb jicama, cut in matchsticks
salt and pepper

1 orange bell pepper, stemmed, seeded and sliced
1 red bell pepper, stemmed, seeded and sliced
1 yellow bell pepper, stemmed, seeded and sliced
1 medium white onion, sliced
1 zucchini, outer green parts only, cut into 3-by-1/4-inch sticks
3/4 teaspoon smoked paprika
1/2 teaspoon kosher salt, plus more to taste
Freshly ground black pepper
1 large clove garlic, grated
1 tablespoon chopped fresh oregano leaves
Nonstick cooking spray, for the pan
Eight to ten 5- to 6-inch white corn tortillas
One 8-ounce bag shredded Monterey Jack and Cheddar mix
Lime wedges, for serving
Sour cream and salsa verde or roja, for dipping (optional)

Steps:

  • Heat the oil in a 12-inch cast-iron pan over medium-high heat. Add the peppers, onion and zucchini. Season with the smoked paprika, salt and pepper. Toss to coat with the oil. Cook, stirring occasionally, until the vegetables are softened and browning, 10 to 12 minutes. Add the garlic and oregano and stir to combine. Cook until fragrant, 1 to 2 minutes. Turn off the heat.
  • Heat a large nonstick pan over medium-high heat. Grease the pan with the cooking spray. Carefully place a tortilla in the hot pan. Add 3 tablespoons cheese to half of the tortilla, spreading the cheese to the edges and allowing some to spill over to create a cheesy crust. Top with a hearty spoonful of the cooked pepper mixture, then top with another 3 tablespoons cheese. Fold the bare half of the tortilla over the cheese and pepper filling. Press down to flatten with a spatula. Cook until the cheese is melted and crusty and the tortilla is browned, 3 to 4 minutes. Flip and cook for another 2 to 3 minutes. Remove to a serving platter. Season with salt and a squeeze of lime. Repeat with the remaining tortillas, peppers and cheese, wiping down the pan as needed. Serve with sour cream and salsa for dipping, if desired.
