8 roma (plum) tomatoes, diced
½ cup Italian dressing
¼ cup finely chopped fresh basil
¼ cup diced red onion

Steps:

  • Bring a large pot of lightly salted water to a boil. Place the penne pasta in the pot, cook 10 minutes, until al dente, and drain.
  • In a large bowl, toss the cooked pasta with the tomatoes, Italian dressing, basil, red onion, and Parmesan cheese.

2 tablespoons butter
2 tablespoons olive oil
4 cloves garlic, minced
1 medium onion, finely diced
Two 15-ounce cans tomato sauce or marinara sauce
Dash of sugar (or more to taste)
Salt and freshly ground black pepper
1 1/2 pounds fettuccine
1 cup heavy cream
Grated Parmesan or Romano, as needed
Chopped fresh basil, for serving

Steps:

  • Heat the butter and oil in a large skillet over medium heat. Add the garlic and onions and saute for a minute or so. Pour in the tomato sauce, add sugar, salt and pepper to taste and stir. Cook over low heat for 25 to 30 minutes, stirring occasionally.
  • Cook the pasta according to the package directions. Drain, reserving 1 cup of pasta water.
  • Remove the sauce from the heat and stir in the cream. Add cheese to taste, then check the seasoning. Stir in the pasta and thin with a little pasta water if needed. Add the chopped basil and serve immediately.

2 tablespoons olive oil
1 brown onion (large)
2 garlic cloves, crushed
2 kg medium tomatoes, peeled and chopped
1 teaspoon salt
1/2 cup dry red wine
2 teaspoons brown sugar
2 tablespoons tomato paste
2 tablespoons fresh basil leaves, finely chopped
2 tablespoons fresh parsley, finely chopped
2 tablespoons fresh oregano, finely chopped
1/2 teaspoon cracked black peppercorns
2 bay leaves

Steps:

  • Heat the oil in a large saucepan, cook the onion and garlic together, stiriing until the onion is soft. Add the tomatoes, salt and wine and simmer uncovered for about 15 minutes or until the tomatoes are soft.
  • Add the remaining ingredients, simmer uncovered for 10 minutes or until thickened. Remove bay leaves from sauce.
  • When cooled refrigerate for up to 3 days.
  • Use sauce as desired.

1 bunch of fresh basil
1 medium onion
2 cloves of garlic
1 kg ripe tomatoes, or 2 x 400g tins of quality chopped tomatoes
olive oil
1 tablespoon red wine or balsamic vinegar
480 g dried wholewheat spaghetti
15 g Parmesan cheese

Steps:

  • Pick the basil leaves onto a chopping board (reserving a few baby leaves to garnish), then roughly chop the remaining leaves and finely chop the stalks.
  • Peel and finely slice the onion and garlic. If using fresh, cut the tomatoes in half, then roughly chop them or carefully open the tins of tomatoes.
  • Put a saucepan on a medium heat and add 1 tablespoon of olive oil and the onion, then cook for around 7 minutes, or until soft and lightly golden.
  • Stir in the garlic and basil stalks for a few minutes, then add the fresh or tinned tomatoes and the vinegar.
  • Season with a tiny pinch of salt and pepper, then continue cooking for around 15 minutes, stirring occasionally.
  • Stir in the chopped basil leaves, then reduce to low and leave to tick away. Meanwhile...
  • Carefully fill a large pot three-quarters of the way up with boiling water, add a tiny pinch of salt and bring back to the boil.
  • Add the spaghetti and cook according to packet instructions - you want to cook your pasta until it is al dente. This translates as 'to the tooth' and means that it should be soft enough to eat, but still have a bit of a bite and firmness to it. Use the timings on the packet instructions as a guide, but try some just before the time is up to make sure it's perfectly cooked.
  • Once the pasta is done, ladle out and reserve a cup of the cooking water and keep it to one side, then drain in a colander over the sink and tip the spaghetti back into the pot.
  • Stir the spaghetti into the sauce, adding a splash of the pasta water to loosen, if needed.
  • Serve with the reserved basil leaves sprinkled over the top and use a microplane to finely grate the Parmesan cheese, then sprinkle over.

1/4 cup fresh basil leaves

1/2 lb short pasta (penne, rigatoni, etc. or thin long pasta)
12 oz grape, cherry, or roma tomatoes chopped
3 TBLE extra virgin olive oil
2 cloves fresh garlic sliced thin
reserved pasta water

Steps:

  • Heat the olive oil over medium-low heat in a large frying pan
  • When heated add the garlic and simmer over low heat for 3 minutes making sure not to burn the garlic
  • Add in the tomatoes and stir to coat the tomatoes with the olive oil
  • Meanwhile, cook the pasta
  • When pasta is done transfer to the tomato mixture (plus a little of the pasta water) in the frying pan and give a good stir
  • Serve and top with grated Italian Romano or Parmesan Cheese

Steps:

  • Cook the pasta in a large pot of well-salted water, making sure to keep it quite al dente.
  • Put butter in a wide deep skillet over medium heat. Add drained pasta to the pan and season with salt, pepper and crushed red pepper, if using.
  • Add tomato sauce gradually and stir to coat pasta, using only enough sauce for a light coating (you may not need the entire 2 1/2 cups).
  • Transfer pasta to a warm serving bowl and dot top with spoonfuls of ricotta. Sprinkle lightly with pecorino and garnish with a few torn basil leaves.

12-14 tomatoes ((fresh, garden tomatoes work best- appx. 8-10 lbs))
2 tablespoons olive oil
1 large onion (chopped)
8 ounces mushrooms (fresh, chopped)
2 teaspoons soy sauce ((see notes above))
6 cloves garlic
10-12 basil leaves (chopped)
1 tablespoon oregano (finely chopped)
2 tablespoons brown sugar
1 tablespoon Kosher salt ((or to taste))
1 teaspoon pepper ((or to taste))

Steps:

  • Bring a large pot of water to a boil. Place tomatoes a few at a time in the water and remove after 10-15 seconds.
  • Immediately place tomatoes in an ice-water bath and remove skins and stems. Cut tomatoes into fourths and place in a food processor or blender.
  • Process tomatoes a few times, you want them to be the consistency of crushed tomatoes (don't over process). Set aside.
  • Heat oil in a large skillet. Add onions and saute until they become soft and transparent.
  • Add mushrooms and cook for about 2-3 minutes. Add soy sauce and garlic and continue to cook until mushrooms become soft.
  • Add tomatoes, basil, oregano, brown sugar, salt and pepper.
  • Bring to a simmer, stirring occasionally for at least one hour. The longer the better! Ideally 2+ hours.
  • Serve over cooked pasta.

I have been cooking a version of this dish practically since I first encountered it in a "60-Minute Gourmet" column, the brainchild of the late Pierre Franey, in January 1986. Why Pierre published the recipe in mid-winter is a mystery. To make the sauce my way you chop tomatoes; you put them in fat, whether that's olive oil, butter or, I suppose, rendered bacon fat; you cook them until they've broken down a bit and given up their liquid; and you dress pasta with the resulting sauce. (Pierre peeled the tomatoes first, because that was his style. He was a chef!) With good tomatoes, you can make this sauce in its most basic form - with no more than tomato, oil and salt - and it will be terrific. But you can jazz it up in a variety of ways; butter in place of oil changes its character noticeably. Parmesan is an obvious and welcome addition. Cooking a bit of chopped onion or minced garlic in the butter or oil - with or without rosemary, tarragon or thyme - before adding the tomatoes adds depth. Chopped basil at the end ... well, to me this is practically essential.

4 tbsp olive oil
1 large red chilli , deseeded and finely chopped, optional
16 spring onions , cut into long strips
300g cherry tomato
pinch golden caster sugar
juice 1 lemon
grated parmesan , to serve

  • Cook the penne according to the pack instructions. While the pasta is cooking, heat the oil very gently and add the chilli, if using, and the spring onions. Slowly cook the spring onion until wilted, then add the cherry tomatoes and sprinkle with the sugar. Turn up the heat and cook until the tomatoes are blistered.

Steps:

  • Bring a large pot of generously salted water to a boil. Cook pasta according to package directions, reserving ½ cup pasta water. Drain pasta and return it to pot.
  • Heat a large skillet over medium. Add pancetta; cook, stirring occasionally, until fat has rendered and pancetta is crispy, 8 to 9 minutes.
  • Add oil and garlic to skillet; cook over medium, stirring occasionally, until softened slightly and fragrant, about 1 minute. Add tomatoes and salt; increase heat to medium-high and cook, stirring often, until some tomatoes have burst and tomato skins soften, about 4 minutes. Reduce heat to low. Using a wooden spoon, lightly break and mash about a third of tomatoes to release their juices further.
  • Add tomato mixture, cheese, and ¼ cup reserved pasta water to pot with pasta. Cook over medium-low, stirring constantly, until sauce clings to noodles, 1 to 2 minutes, adding more pasta water if needed. Remove from heat. Add basil and stir to combine. Serve with more basil and cheese.

3 tablespoons olive oil
4 large ripe tomatoes, peeled,seeded and chopped
2 sprigs fresh thyme or 1/2 teaspoon dried thyme
1 bay leaf
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
6 small zucchini, trimmed (about 1 1/2 lb)
2 cloves garlic, smashed
cayenne pepper
1 tablespoon freshly grated parmesan cheese

Steps:

  • In saucepan, heat 1 tablespoon of the oil over medium heat.
  • Add tomatoes, thyme, bay leaf, sugar, salt and pepper, cook, uncovered, for 7 to 10 minutes or until excess moisture has evaporated.
  • Remove bay leaf.
  • Meanwhile, slice unpeeled zucchini lengthwise into long wide strips about 1/8 inch thick.
  • (Use a veggie slicer or I find a veggie peeler is best, in long single swipes.) In a large frypan, heat 1 tablespoon of the remaining oil over high heat.
  • Add half of the zucchini strips and half of the garlic, sprinkle with a pinch of cayenne, cook, stirring almost constantly for about 3 minutes or until zucchini is tender and golden, being careful not to break it.
  • Remove to paper towel lined baking sheet and keep warm in low oven.
  • Repeat with remaining oil, zucchini, garlic and cayenne.
  • Arrange zucchini mixture on warmed serving platter.
  • Pour sauce over and sprinkle with parmesan.
  • Serve immediately.

½ an onion- diced
8 garlic cloves, rough chopped
3 tablespoons olive oil
2 lbs juicy ripe tomatoes, diced (about 6 cups chopped, save juices)
¼ cup splash vermouth, red wine or white wine
1 teaspoon kosher salt
½ teaspoon fresh cracked pepper
15-20 basil leaves, torn, more for garnish
Pptional: fresh grated Pecorino Romano cheese (or Parmesan), or vegan parmesa, or try this Vegan Cheesy Sprinkle
Optional additions: chili flakes, Kalamata olives or capers

Steps:

  • Set a big pot of salted pasta water to boil on high to cook pasta. Cook pasta according to directions on the package.
  • Make the Fresh Tomato sauce. In a large skillet heat olive oil over medium-high heat. Add chopped onions, saute 3-4 minutes, until tender. Turn heat to medium. Add the rough chopped garlic. Saute a few minutes until garlic is fragrant and golden. Add the chopped tomatoes and all their juices and seeds. Turn heat up to medium-high.
  • Add vermouth or wine, cook this off then bring to a simmer and simmer 5 minutes until tomatoes begin to break down and wine cooks off a bit.
  • Stir in salt and pepper.
  • Turn heat to low, simmer on low, covered, until pasta is cooked is ready to add.
  • When pasta is cooked to al dente, drain and add it to the fresh tomato sauce, continuing to cook pasta on low for a few minutes in the sauce. Stir in the basil leaves.
  • Divide among bowls and top with fresh grated Pecorino cheese and top with fresh basil ribbons.

3 medium ripe tomatoes (about 1-3/4 lbs, seeded and chopped)
Salt and freshly ground black pepper
1 to 2 cloves garlic (minced)
1-1/2 tablespoons balsamic vinegar
6 ounces fresh mozzarella (cut into 1/2-inch cubes)
4 tablespoons extra-virgin olive oil (divided)
1/4 cup fresh basil (chopped)
1/4 cup fresh parsley (chopped)
2 tablespoons capers (drained (optional))

Steps:

  • Bring a large pot of salted water to a boil for the pasta.
  • Place the tomatoes in a large bowl and season to taste with salt and pepper. Add the garlic, balsamic vinegar and mozzarella. Drizzle with 2 tablespoons of the olive oil and toss to combine. Let sit for 15 minutes to allow the tomatoes to give off their juices, then add the basil, parsley and capers.
  • Cook and drain the pasta according to package directions and transfer to a large serving bowl. Drizzle with the remaining 2 tablespoons olive oil, toss, then add the tomato-herb mixture and combine thoroughly. Taste and adjust the seasoning as needed.
  • To serve, plate individual portions and sprinkle with additional parsley and basil if desired.

1 small garlic clove
3 lb tomatoes
2 tablespoons fresh lemon juice
1 teaspoon salt
1 teaspoon sugar (optional)
1/2 teaspoon black pepper
1 lb dried capellini (angel-hair pasta)
1/2 cup chopped fresh basil
Accompaniments: finely grated Parmigiano-Reggiano
extra-virgin olive oil for drizzling (optional)

Steps:

  • Mince garlic and mash to a paste with a pinch of salt using a large heavy knife.
  • Core and coarsely chop two thirds of tomatoes. Halve remaining tomatoes crosswise, then rub cut sides of tomatoes against large holes of a box grater set in a large bowl, reserving pulp and discarding skin. Toss pulp with chopped tomatoes, garlic paste, lemon juice, salt, sugar (if using), and pepper. Let stand until ready to use, at least 10 minutes.
  • While tomatoes stand, cook pasta in a 6- to 8-quart pot of boiling salted water, uncovered, until al dente, about 2 minutes. Drain in a colander and immediately add to tomato mixture, tossing to combine. Sprinkle with basil.
