Mushroom sauce provides a wonderful addition to this pasta dish that's ready in just 20 minutes - a perfect side for your Halloween meal.

8 oz uncooked pappardelle pasta
2 tablespoons butter or margarine
1 medium sweet onion, thinly sliced, separated into rings
4 packages (4 oz each) wild mushroom blend
2 teaspoons chopped fresh sage leaves
1 teaspoon chopped fresh thyme leaves
1 cup whipping cream
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
Fresh sage or thyme leaves, if desired

Steps:

  • Cook and drain pasta as directed on package; cover to keep warm.
  • Meanwhile, in 12-inch nonstick skillet, melt butter over medium-high heat. Cook onion in butter 8 to 10 minutes, stirring occasionally, until soft and golden. Add mushrooms, chopped sage and thyme; cook until mushrooms are tender, about 5 minutes. Stir in whipping cream, cheese, salt and pepper.
  • Pour sauce over cooked pasta; toss gently to coat. Garnish with herbs.

12 ounces penne pasta (cooked to al dente)
4 tablespoons unsalted butter
1 tablespoon rosemary, minced
1 1/2 cups heavy cream
1/2 teaspoon salt
1/2 teaspoon black pepper

1/2 cup parmesan cheese, grated
2 tablespoons parsley, chopped for garnish

Steps:

  • In a large skillet set over medium heat, melt the butter. Add the rosemary and cook, stirring, for 2-3 minutes.
  • Add Penne pasta, cream, salt, pepper and nutmeg. Toss to coat and let reduce 2-3 minutes, gently stirring, or until lightly thickened.
  • Add Parmesan to taste, tossing to combine and heat through. Transfer to serving dish and sprinkle with parsley.

1 medium yellow onion, quartered and very thinly sliced (about 3 cups)
Salt and freshly ground black pepper
1/2 cup finely chopped fresh chives
1/4 cup finely chopped fresh Italian parsley leaves
1/4 cup finely chopped fresh tarragon leaves
1 (1-pound) box thin spaghetti
2 lightly packed teaspoons lemon zest (from 1 medium lemon)

Steps:

  • Bring a large pot of heavily salted water to a boil over high heat.
  • Heat 2 tablespoons oil in a large frying over medium-high heat. When it shimmers, add onion, season well with salt and freshly ground black pepper, and cook, stirring occasionally, until soft and translucent, about 5 to 6 minutes. Remove from heat, stir in half of herbs, and set aside.
  • Cook pasta according to the package directions. When pasta is cooked, reserve 1 1/2 cups pasta water, and drain pasta.
  • Return pot to stove and add in onion mixture, remaining 1/4 cup oil, remaining herbs, reserved pasta water, and zest, and season well with salt and pepper. Stir until evenly combined. Add pasta and toss until pasta is well coated. Taste and adjust seasoning, as necessary.

Steps:

  • In a large pot of boiling salted water add the spaghetti and cook until it is al dente. Meanwhile, in a large skillet set over moderately low heat, melt the butter, add the rosemary and cook it, stirring, for 1 to 2 minutes. As soon as the pasta is cooked, drain and add it to the pan. Add the cream, salt, pepper and nutmeg. Toss to coat and let reduce 1 to 2 minutes, gently stirring, or until lightly thickened. Add Parmesan to taste, toss to combine and transfer to serving dish. Sprinkle with parsley.

4 tablespoons butter
1/2 teaspoon salt
1/8 teaspoon cayenne
1/8 teaspoon nutmeg

1/4 cup chopped fresh mint leaves
1/4 cup chopped fresh chives
1 (16 ounce) package angel hair pasta

Steps:

  • Combine cream, butter, salt, nutmeg and cayenne in a saucepan and simmer 15 minutes, or until sauce is slightly reduced and thickened.
  • While the sauce is reducing, get the water ready for the pasta and cook as directed.
  • Whisk in Parmesan cheese and herbs to the cream mixture and simmer for another 5 minutes.
  • Add cooked chicken to the cream mixture.
  • Serve pasta topped with the creamy herb and chicken mixture.

1 pound short pasta, such as shells, cavatappi, chiocciole, farfalle, ditali or wagon wheels
12 ounces fresh, whole-milk ricotta (about 1 1/2 cups)
3/4 cup freshly grated Parmesan, plus more for serving
1/2 cup extra-virgin olive oil, plus more for serving
1 tablespoon coarsely ground black pepper, plus more for serving
2 1/2 cups coarsely chopped soft herbs, such as basil, chives, fennel fronds, parsley, mint, tarragon, chervil or dill (try for a combination of at least 3 kinds)

Steps:

  • Bring a large pot of well-salted water to a boil over high heat. Add the pasta and cook until al dente, according to package instructions. Reserve 2 cups pasta cooking water, then drain the pasta.
  • In the same pot, make the sauce: Add ricotta, Parmesan, olive oil, pepper and a large pinch or two of salt, and stir until well combined.
  • Add 1 cup pasta water to the sauce and stir until smooth. Add the pasta and herbs, and continue to stir vigorously until the noodles are well coated. Add more pasta water as needed for a smooth, soupy sauce. Taste and add more salt if needed.
  • To serve, spoon the pasta into bowls and finish with more Parmesan, olive oil and pepper.
