Pasta with Chicken, Spinach, Tomatoes, and Feta Cheese image

This chicken pasta recipe is the perfect example of the balance you'll find on the Mediterranean diet. Whole grain pasta, plenty of veggies, a bit of cheese, and lean protein make this chicken and pasta recipe a flavorful, filling, and figure-friendly option.

4 ounce dried whole grain or whole wheat penne pasta
Nonstick cooking spray
1.25 pound skinless, boneless chicken breast halves
3 tablespoon canola oil or olive oil
2 tablespoon red wine vinegar
1 teaspoon finely shredded orange peel
2 tablespoon orange juice
1 tablespoon honey
1 tablespoon Dijon-style mustard
0.5 teaspoon salt
0.25 teaspoon ground black pepper
1 teaspoon canola oil or olive oil
1 pound grape tomatoes, halved (3 cups)
4 cloves garlic, minced
10 ounce fresh baby spinach
0.75 cup crumbled feta cheese or goat cheese (chèvre) (3 ounces)
3 tablespoon pine nuts, toasted

Steps:

  • Cook pasta according to package directions; drain.
  • Meanwhile, lightly coat the rack of an indoor electric grill with cooking spray. Preheat grill. Place chicken on grill rack. If using a grill with a cover, close lid. Grill until chicken is no longer pink (170°F). (For a covered grill, allow about 6 minutes. For an uncovered grill, allow 12 to 15 minutes, turning once halfway through grilling.) Cut chicken into bite-size pieces.
  • For dressing, in a small bowl whisk together 3 tablespoons oil, vinegar, orange peel, orange juice, honey, mustard, salt, and pepper; set aside.
  • In a 5- to 6-quart Dutch oven heat 1 teaspoon oil over medium-high heat. Add tomatoes and garlic; cook for 1 minute, stirring frequently. Stir in pasta and chicken; remove from heat.
  • Gradually add spinach and dressing to chicken mixture, tossing gently until spinach is slightly wilted. Transfer mixture to a serving bowl. Sprinkle with cheese and pine nuts.

2 tablespoons extra-virgin olive oil
1 1/2 pounds boneless skinless breasts, (split in half)
1 teaspoon kosher salt (divided)
1/4 teaspoon freshly ground black pepper
2 cans diced tomatoes with basil, garlic, and oregano ((14.5-ounce cans))
2 cups water
1 pound whole wheat fettuccini pasta (or substitute another long, straight pasta such as spaghetti)
4 ounces reduced-fat feta cheese (divided)
Finely chopped fresh basil (optional)

Steps:

  • In a large pot or Dutch oven with a lid, heat the olive oil over high for 1 minute, then add the chicken breast halves. Sprinkle with 1/2 teaspoon salt and the black pepper. Cook the chicken on one side for 8 minutes, moving it around in the pan a little to prevent sticking, but not too much, so that a nice crust will form. Lower the heat as needed if the chicken seems to be cooking too quickly. Flip, sprinkle with the remaining 1/2 teaspoon salt, then cook for 5 additional minutes, until the chicken is cooked through.
  • Add the diced tomatoes and water. Stir in the pasta and cook, uncovered, for 5 minutes. Cover and let cook an additional 10 minutes.
  • Remove the lid, stir, then add three-quarters of the feta. Stir once more, then let cook uncovered for 5 additional minutes. Serve warm, sprinkled with the remaining feta cheese and fresh basil.

12 ounces ditalini or other small tubular pasta
2 tablespoons olive oil
3 tablespoons fresh lemon juice
1 cup (4 ounces) crumbled feta cheese
1 pound plum tomatoes, cut into 1/4-inch chunks (3 cups)
3 cups (12 ounces) shredded, cooked rotisserie chicken (skin removed)
1 cup torn fresh basil leaves

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente, according to package directions. Drain; rinse well under cold water.
  • Transfer to a large bowl; toss with oil, lemon juice, feta, tomatoes, chicken, and basil; season generously with salt and pepper. Serve at room temperature or chilled.

1/2 pound penne
3 cloves garlic, thinly sliced
Pinch of crushed red pepper flakes
1/2 cup extra-virgin olive oil
Freshly ground black pepper
1 cup chopped cooked chicken
1 cup diced cucumber
1 cup halved cherry tomatoes
1/2 cup crumbled feta cheese

Steps:

  • Bring a large pot of salted water to a boil. Add the penne and cook according to the package directions; drain and rinse under cold water. Transfer to a large bowl.
  • Meanwhile, make the dressing: Combine the garlic, red pepper flakes and olive oil in a small saucepan. Cook over medium heat, stirring, for 3 minutes; let cool. Season with salt and black pepper.
  • Add the chicken, cucumber, cherry tomatoes and feta to the pasta. Pour the dressing over the pasta salad and toss to coat. Season with salt and black pepper. Chill for up to 3 hours.

1/2 lb thin spaghetti
1/4 cup extra virgin olive oil
1 small onion, chopped
3 garlic cloves, chopped
4 fresh plum tomatoes, cored and chopped
1 teaspoon dried oregano
1/2 teaspoon salt
1/3 cup dry white wine
4 ounces feta cheese, crumbled
1/8 teaspoon cracked black pepper

Steps:

  • Bring 4 quarts water to a boil and lightly salt. Prepare spaghetti following package directions.
  • Remove 1/4 cup of the cooking water and reserve; drain pasta.
  • Meanwhile, heat olive oil in large skillet over medium heat.
  • Add onion and cook 3 minutes, stirring occasionally.
  • Add garlic and cook for 1 minute, stirring so garlic does not burn.
  • Stir in tomatoes, oregano and 1/2 teaspoon salt. Cook for 2 minutes.
  • Add wine and cook for 1 minute.
  • Add feta cheese, spaghetti and reserved water and toss with pepper.
  • Serve immediately.
