This meatloaf spaghetti is a super-quick and delicious three-ingredient recipe that turns leftovers into a feast. Variations are included.

3 slices leftover meatloaf (or any quantity you have left)
1 (26-ounce) jar pasta sauce
1/3 cup water
1 (16-ounce) package spaghetti pasta
1/2 cup grated Parmesan cheese

Steps:

  • Gather the ingredients.
  • Bring a large pot of salted water to a boil.
  • Meanwhile, cut the meatloaf into small pieces and combine in a large skillet with the pasta sauce. Rinse pasta sauce jar out with the water and add that to skillet.
  • Place the skillet over medium heat and bring to a simmer, stirring frequently. Make sure that you stir from the bottom so the sauce doesn't burn. As the sauce cooks down, it will more easily stick to the skillet.
  • Cook the pasta according to package directions in the pot of boiling water until al dente. Drain the pasta, then place it on a serving platter. It's helpful to use tongs to do this.
  • Top the pasta with the pasta sauce and the shredded Parmesan cheese and serve immediately.

Number Of Ingredients 11

2 tablespoons oil (I'm using olive oil)
2 pounds ground meat of your choice, such as beef, pork, turkey, chicken, lamb (I'm using beef)
1 onion, diced (I'm using yellow onion)
2 cloves garlic, minced
1/4 cup tomato paste
3/4 cup liquid of your choice, such as beef stock, chicken stock, water or wine (I'm using red wine)
One 28-ounce can tomato product (I'm using crushed tomatoes)
2 tablespoons oregano (if you have it)
Salt and pepper
1 pound dry pasta (I'm using rigatoni)
3 tablespoons grated hard cheese (I'm using Parmesan)

Steps:

  • Heat a large saucepan over medium heat and add the oil. When hot, add the meat and cook, without stirring, until browned, 3 to 5 minutes. Break it up with a wooden spoon, then add the onion and garlic and cook, stirring, until starting to soften, about 2 minutes. Add the tomato paste and cook for 2 to 3 minutes. Add the wine and bring to a simmer. Add the crushed tomatoes and oregano and season with salt and pepper. Simmer until thickened and the flavors come together, about 1 hour.
  • About 20 minutes before the sauce is done, bring a large pot of water to a boil and salt liberally. Drop in the pasta, give it a stir and cook until al dente according to the package instructions. Drain the pasta and add it to the sauce. Remove from the heat, toss in the cheese and serve.

Start with a simple meatloaf then pour on pasta sauce for quick Italian flavor.

1 lb. lean ground beef
2 eggs
1 cup Progresso™ Italian Style Bread Crumbs
1/4 cup grated Parmesan cheese
1/4 cup finely chopped onion
1/8 teaspoon pepper
1 (14-oz.) jar tomato pasta sauce

Steps:

  • Heat oven to 350°F. In large bowl, combine all ingredients except pasta sauce; mix well. Add 1 cup pasta sauce; mix well. Press mixture into ungreased 8x4-inch loaf pan.
  • Bake at 350°F. for 40 minutes. Pour remaining pasta sauce over meatloaf. Bake an additional 15 to 20 minutes or until thoroughly cooked in center and meat thermometer registers 160°F. Let stand 10 minutes before serving.

This is really good basic recipe. Sometimes, I like to add in some garlic and chopped green chilies to the loaf or use Pepper Jack cheese. You can pretty much spice this up to your taste.

2 cups cooked shell pasta or 2 cups elbow macaroni (8 oz.)
1 cup soft breadcrumbs (crusts removed)
1 cup grated colby-monterey jack cheese or 1 cup mozzarella cheese
1/4 cup chopped pimiento
3 eggs
1 cup hot half-and-half cream
1/4 cup melted butter
3 tablespoons chopped onions
1 teaspoon salt
1/8 teaspoon pepper
1/2 lb lean ground beef (I use ground round)
1/4 cup chopped onion
1 (10 3/4 ounce) can cream of mushroom soup
1 cup milk
1/2 teaspoon Kitchen Bouquet (browning sauce)
salt
pepper
1 dash nutmeg

Steps:

  • In large bowl, combine macaroni, bread crumbs, cheese and pimiento.
  • In separate bowl, beat eggs.
  • Add half-n-half, butter, onion, salt and pepper.
  • Beat until well combined.
  • Combine egg mixture with macaroni mixture, mixing lightly but thoroughly.
  • Turn into a greast 9 x 5 inch loaf pan, smoothing top.
  • Set pan in shallow pan with water.
  • Bake at 350 for 1 hour or until set.
  • Meanwhile, prepare meat sauce by sauteeing meat and onion in skillet until browned.
  • Drain off fat.
  • Add all remaining ingredients.
  • Stir until well blended and heat through.
  • Thin with more milk, if desired.
  • Remove macaroni loaf from pan onto serving platter.
  • Cut into slices.
  • Serve with meat sauce.

2 pounds lean ground beef
1 tablespoon minced garlic
Salt and freshly ground black pepper
1/8 cup vegetable oil
1/4 cup diced onions
One 29-ounce can tomato puree
Two 12-ounce cans tomato paste
One 15-ounce can crushed tomatoes
1 tablespoon beef base
1 tablespoon chicken base
1/2 cup grated Parmesan
1 teaspoon garlic salt
1 teaspoon freshly ground black pepper
1 teaspoon dried basil
1 teaspoon chopped parsley leaves

Steps:

  • Brown ground beef with minced garlic and salt and pepper, to taste. Drain ground beef and set aside.
  • Place oil and onions in a saucepan and saute on high heat until soft. Add all cans of tomato products. Fill the tomato puree can with hot water and dissolve beef and chicken base in this water. Add this water and base mixture to saucepan. Add all other ingredients and heat through. Once hot, add the browned ground beef and simmer on low heat for approximately 1 hour, stirring occasionally.
  • Serve over your favorite pasta -- enjoy!!!!

LEFTOVER MEATLOAF PASTA

Since there are only two of us in the house, whenever I make something like meatloaf we have at least half of it leftover and usually don't eat it. I came up with this solution using things I had on hand to try and make it a little more interesting and appetizing the next day.

1/2 loaf of leftover meatloaf, crumbled (I prefer Yes, Virginia There is a Great Meatloaf)
2 green onions, sliced
2 -3 cups Baby Spinach, fresh
1 teaspoon garlic, minced
1/2 green bell pepper, diced
1/2 tomatoes, diced
1 (8 ounce) can oregano and basil tomato sauce
1/2 teaspoon basil
salt & pepper
extra virgin olive oil
1/4 cup wine (I had white zinfandel on hand and it worked great)
1/2 lb spaghetti, cooked
cheese, to serve on top (blend of romano, parmegiano, and asiago are good)

Steps:

  • Heat oil in pan and saute onions and green bell peppers. Season with salt and pepper. When peppers and onions begin to soften, add garlic and basil.
  • Add crumbled meat loaf. Do not overcook, just make sure to heat all the way through.
  • Pour in wine and allow to boil 1-2 minutes.
  • Add tomatoes and baby spinach.
  • Top with tomato sauce, season again with salt and pepper, and cover.
  • Lower heat and simmer until spinach is wilted.
  • Toss with pasta and top with cheese.

100 g pasta (like rotini, or lasagne, or spaghetti)
1/4 cup breadcrumbs
1 tablespoon white wine
12 ounces ground round
12 ounces ground turkey
2 garlic cloves, finely chopped
3 1/2 ounces mushrooms, finely chopped
2 eggs, beaten
1 tablespoon italian seasoning
1/4 cup sour cream
4 green onions, finely chopped
2 tablespoons parsley, finely chopped
1/4-1/2 cup spaghetti sauce

Steps:

  • Grease loaf pan.
  • Cook pasta until al dente (good way to use up leftover pasta), drain set aside.
  • Soak breadcrumbs in wine.
  • Add beef, turkey, eggs, garlic, mushrooms, Italian seasoning, green onions and sour cream to breadcrumb mixture.
  • Place half the meat mixture into greased loaf pan.
  • Form a trough through the meat along the length of the loaf pan.
  • Fill the trough with the pasta and two tablespoons of sauce.
  • Cover with remaining meat mixture.
  • Top with spaghetti sauce.
  • Bake for 50-60 minutes draining excess fat and juices at least twice.
  • Cool at least 5 minutes before serving.

1 lb mixture of ground chuck and ground pork (if you do not)
like this get 1 pound chuck
1 sweet onion
1 lb pasta (we use Rotini)
1 (28 ounce) can crushed tomatoes
14 ounces tomato sauce (no salt added)
1 teaspoon olive oil
4 -5 garlic cloves
grated parmesan cheese
basil
salt
pepper

Steps:

  • 1. Saute onions in small amount of olive oil until light brown. If using fresh garlic, dice up two cloves and put in with onions.
  • 2. Once onions are soft and light brown, mix in meat, and sprinkle with Mrs Dash salt/pepper. Saute until brown.
  • 3. Add in can of crushed tomatoes and can of tomato sauce and stir.
  • 4. Simmer for 45 minutes at least. Taste and add more seasoning if needed.
  • 5. Boil water for pasta and cook pasta for 8 to 10 minutes. We like our pasta al dente (not too soft). Taste as you go.
  • 6.When ready - strain - make sure all the water is gone. Put a little sauce on pasta so it does not stick. Keep the rest of the sauce in the bowl so you can each have as much as you want. A salad is a great side dish -- add grated parmesan if you like.
