The most delicious pink sauce pasta with a cheesy tomato cream sauce. So simple and so delicious!

300 g pasta of choice, I used penne
2 tbsp butter
1 tbsp olive oil
1 small red onion, minced
4 garlic cloves, minced
1.5 cups tomato passata (or puree or sauce-not tomato paste)
1 tsp dried basil
1 chicken bouillon cube, crumbled
pinch sugar
sprinkle of red chili flakes
salt and pepper to taste
1/2 cup heavy cream
1/2 cup milk
1/3-1/2 cup shredded mozzarella cheese

Steps:

  • Cook the pasta to al dente according to package instructions, then drain, reserving some of the pasta water.
  • Heat a large skillet over medium heat and add the butter and olive oil. Once the butter has melted, add the onion and cook for 4-5 minutes until softened. Add the garlic and cook for another minute.
  • Add the tomato passata, dried basil, crumbled chicken bouillon cube, sugar, red chili flakes and salt and pepper to taste. Simmer for a few minutes, then add the cream, milk and the shredded mozzarella.
  • Add the cooked pasta, toss to combine and warm through for a few minutes. If sauce is too thick, add a splash of pasta water. Enjoy immediately!

1 pound pasta of your choice (I prefer short ones like rigatoni, penne, etc.)
1 tablespoon extra-virgin olive oil
2 tablespoons butter
3 cloves garlic, minced
1/2 large onion, finely diced
One 16-ounce jar roasted red peppers, drained and roughly chopped
1 cup vegetable or chicken broth
1/4 cup heavy cream
2 tablespoons finely minced fresh parsley, plus more for serving
Several leaves fresh basil, chopped, plus more for serving
1/2 cup Parmesan shavings, plus more for serving

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta according to the package directions.
  • Meanwhile, add the oil and butter to a large skillet over medium-high heat and melt the butter. Add the garlic and onions and saute until starting to soften, 2 to 3 minutes. Add the chopped red peppers and cook until hot, 2 to 3 minutes.
  • Carefully transfer the contents of the skillet to a food processor or blender. Put on the lid and puree the pepper mixture until totally blended (there will still be some texture to the peppers).
  • Pour the pepper puree back into the skillet. Add the broth, 1/2 teaspoon salt and some pepper, and stir until heated. Splash in the cream and stir to combine. Add the parsley and basil and stir to combine. Taste and adjust the seasoning if you need to.
  • Drain the pasta and add it to the skillet. Add the Parmesan, and then stir it together to coat the pasta.
  • Serve in bowls with extra Parmesan and a sprinkling of parsley and basil on top.

¾ cup water
1 cup heavy cream

Steps:

  • Place tomato puree in a measuring cup. Add enough water to make a total measure of 1 cup, place in a medium bowl. Stir in cream, ginger, cayenne pepper, lemon juice, cumin, 1 teaspoon salt, black pepper to taste, and sugar. Cover and refrigerate until needed.
  • Heat oil in a large frying pan over a medium-high heat. Add the mustard seeds. As soon as they begin to pop, add the garlic. Stir once and add the shrimps. Stir and fry until they just turn opaque, sprinkling with salt and pepper to taste.
  • Pour in the pink sauce and stir. As soon as the sauce is bubbling, the dish is ready to be served with hot cooked pasta or rice.

10 sprays fry-light (or other 1-cal per spray oil)
17.5 oz (500g) boneless chicken thighs ( (any skin and visible fat removed), cut into chunks)
large pinch salt and pepper
1 large brown onion (peeled and chopped)
3 cloves garlic (peeled and minced)
1 red pepper (chopped (seeds discarded))
2 portobello mushrooms (sliced)
1 chicken stock cube (or 1 tsp bouillon for gluten free)
2 tbsp tomato puree
1 tsp dried oregano
28 oz (800g) tinned chopped tomatoes
10.5 oz (300g) dry spaghetti ((gluten free if required))
Handful of small basil leaves to serve
1/4 tsp chill flakes

Steps:

  • Heat a large frying pan and spray with the fry-light.
  • Add in the chicken and cook for 8-10 minutes until the outside of the chicken starts to brown (if you don't move it around to much it will brown a lot quicker).
  • Add in the onion and cook for a further 5 minutes until softened.
  • Add in the garlic and red pepper and cook for 2 more minutes, then add in the mushrooms.
  • Crumble on the stock cube (or bouillon), add the tomato puree and oregano and stir to combine.
  • Add the tinned tomatoes, stir and bring to a gentle simmer. Simmer for 15-20 minutes.
  • Whilst the sauce is simmering, fill a large pan with boiling water from the kettle and add the spaghetti. Cook for 10-12 minutes until al dente.
  • Drain the spaghetti then divide between 4 bowls. Top with the chicken and sauce and sprinkle on the basil leaves and chilli flakes before serving.

12 oz. weight Pasta Of Your Choice (I Prefer Short Ones Like Rigatoni, Penne, Etc.)
4 tbsp. Butter
1/2 whole Large Onion, Finely Diced
3 cloves Garlic, Minced
1 jar (15.5 Ounces) Roasted Red Peppers, Drained And Roughly Chopped
1 c. Vegetable Or Chicken Broth
1/2 tsp. Salt, More To Taste
Freshly Ground Black Pepper
1/2 c. Heavy Cream (more To Taste)
1/2 c. Parmesan Shavings (more For Serving)
Finely Minced Parsley
Chopped Fresh Basil (if You Have It!)

Steps:

  • Cook pasta in salted water according to package directions. Melt 2 tablespoons butter in a large skillet over medium-high heat. Add the onions and garlic and saute for 2 to 3 minutes or until starting to soften. Add the chopped red peppers and cook for 2 to 3 minutes, until hot. Remove the skillet from the heat. Carefully transfer the contents of the skillet to a food processor or blender. Place on the lid and puree the pepper mixture until totally blended (there will still be some texture to the peppers.) 2 tbsp. Olive Oil
1/2 whole Medium Onion, Finely Diced
2 cloves Garlic, Minced
1/2 c. Heavy Cream
Flat Leaf Parsley, Finely Minced
Fresh Parmesan, Shaved Or Grated
1/2 lb. (to 1 Pound) Pasta: Orecchiette, Penne, Fusilli, Etc.

Steps:

  • Roast red peppers, and then place in a Ziploc bag to allow to sweat. Peel the charred skins from the peppers, then removed seeds. Set aside.Lightly toast pine nuts in a skillet. Set aside. Puree peppers with pine nuts. Set aside.Cook pasta according to package directions.In a skillet or pot over medium heat, drizzle in olive oil. Add diced onions and garlic and cook until soft. Pour in pepper puree and stir together. Add plenty of salt. Pour in cream and stir to combine. Taste and add more salt, if necessary. Add cooked pasta, and then stir together. Place pasta into a bowl, top with chopped parsley and plenty of shaved Parmesan.Give thanks for Italy.Repeat as necessary.

4 red bell peppers, charred and peeled
1/2 cup chopped canned tomatoes in puree
2 cups heavy cream
1/2 cup freshly grated pecorino romano cheese
1/2 cup coarsely shredded fontina
2 tablespoons ricotta cheese
1 1/2 teaspoons kosher salt
1 lb imported pasta shells (conchiglie rigate)
4 tablespoons unsalted butter

Steps:

  • Preheat oven to 500°.
  • Bring 5 quarts of water to a boil in a big pot.
  • Halve the peppers, remove the seeds, and puree them in a blender; you should have about 1 cup puree.
  • In a big bowl, combine all the ingredients except the pasta and butter.
  • Parboil the pasta for 4 minutes; drain and add to the ingredients in the bowl; tossing to combine.
  • Divide the pasta mixture among 6-8 individual, shallow, ceramic gratin dishes (1 ½ to 2 cups capacity).
  • Dot with butter and bake until bubbly and brown on top, about 7-10 minutes.

This simple recipe from Mark Bittman's "Quick and Easy Recipes" is incredibly useful, easy to make and delicious. It keeps fairly well so you can keep it on hand all the time! If you're so inclined, you can flavor it with any number of herbs (thyme, basil and parsley are fine) or spices, like cumin or chile powder (or minced chiles). Bottled or canned pre-roasted peppers can be substituted for the peppers but the results will not be as fresh tasting. ----------->* USES * -- Add a couple tablespoons of puree to the cooking liquid of any simmering grain--rice, couscous, or quinoa, for example. -- Use in place of or with tomatoes in pasta sauce.   • Preheat oven to 200c. Wash, deseed and cut the peppers in half. Place on a baking tray with same rosemary, thyme and garlic gloves. Cook in oven until Pepper skin goes soft.
  • Remove the skin from the peppers and slice them.
  • Put in the a blender with same olive oil. Blend until smooth and add the seasoning.
  • Pass through a fine sieve.

1 lb pasta, of your choice (farfalle, fusilli or gemelli are nice choices)
1 (16 ounce) jar roasted red peppers, drained
1 tablespoon extra virgin olive oil
2 cloves garlic, finely chopped
1 shallot, finely chopped
1 cup dry white wine or 1 cup vegetable broth
1 (28 ounce) can crushed tomatoes
1/2 cup flat leaf parsley, chopped
1/4-1/2 teaspoon crushed red pepper flakes (optional)
salt & freshly ground black pepper
freshly grated pecorino romano cheese, for serving

Steps:

  • Cook pasta in a large pot of boiling salted water according to package directions. (I usually boil mine for 7 minutes, and its perfect eveytime)
  • For the sauce: Place drained roasted red peppers in a blender or food processor, and puree until smooth.
  • Heat olive oil in a large skillet over medium high heat.
  • Add the garlic and shallots and saute for 2-3 minutes.
  • Next add the roasted red pepper puree and saute for another 2 minutes more.
  • Stir in the white wine or vegetable stock, and reduce suace for another two minutes.
  • Then stir in the crushed tomatoes, taste the sauce and add salt, pepper and/or crushed red pepper according to you and your family's taste.
  • Stir in half of the chopped parsley.
  • Cover sauce and simmer until pasta is ready.
  • Drain pasta, toss with the sauce, and pour into a serving dish.
  • Top with remaining chopped parsley and Pecorino Romano cheese, and serve.
