- Stir in sauce mix from chicken broth, Hamburger Helper, basil, pepper, and garlic.

- Stir in past, peas and mushrooms.
- Cover and simmer 10 minutes.
- Sprinkle with parsley.

- In a pressure cooker over medium-high heat, brown beef on both sides in oil. Add the water, carrots, celery, potato, onion, garlic and seasonings. Close cover securely; place pressure regulator on vent pipe. Bring cooker to full pressure over high heat. Reduce heat to medium-high and cook for 15 minutes. (Pressure regulator should maintain a slow steady rocking motion; adjust heat if needed.), Remove from the heat. Immediately cool according to manufacturer's directions until pressure is completely reduced. Discard bay leaf. Remove beef with a slotted spoon; when cool enough to handle, remove meat from bones. PASTA E FAGIOLI SOUP WITH GROUND BEEF AND SPINACH
this is a delicious hearty soup that is best if prepared a day ahead to blend the flavors, you can use fresh plum tomatoes in place of canned, make certain to blanch then peel the tomatoes firsly. Use your own favorite pasta sauce for this, homemade or purchased, if you like more beans then add in more! This makes a lot of soup but you can reduce to half or freeze for another meal. It is important to simmer this soup over a low heat uncovered for a longer time so that the soup will reduce and thicken and the flavors blend together, the longer it is simmered the better it will be, this soup can also be made in a crockpot but you will need to brown the beef with veggies in a skillet firstly --- the spinach may be replaced with zucchini or use both --- you will love this soup!

BEEF AND PASTA MUSHROOM SOUP
Most of the beef and mushroom soup recipes here include barley. I have never used barley, but am rather curious about it. BUT, anyone who knows me knows a couple of things: I shop frequently at the salvage store and I will take a shortcut anywhere I can get it in the kitchen when I'm in an experimental mood. This recipes uses a Hamburger Helper mix and sounds pretty good for a quick winter weeknight meal. Great, too, if you're on a budget. Those boxes of Hamburger Helper are only a buck at the salvage store, so that works for me, who is always looking for a bargin.

I have tried so many pasta bakes but this one from the Australian Women's Weekly is still the best IMHO! Easy and very delicious, reheats great and everyone loves it - what more could you want! - Preheat oven to 180 (350F).
- Heat oil in large pan; cook onion, garlic, bacon and carrot, stirring, til carrot is just tender - about 8 minutes *.
- Add mince and cook, stirring, til mince changes colour; then add undiluted soup, tomato paste, sauce and oregano and simmer, covered, about 15 mins or til mixture has thickened slightly.
- While beef mixture is simmering, cook pasta and drain. Stir pasta into beef mixture, then spoon into an oiled deep 8 cup capacity ovenproof dish and sprinkle with cheese. Bake, uncovered, for 15 mins or until browned slightly.
- *If you want to, you can add a stick of chopped celery along with the onion etc or add some mushrooms just before the mince.
TINY PASTA IN BROTH

- Add salt and pepper to taste, then drop in the soup pasta.

- In a tall stock pot over medium high heat, add the beef chuck, stock, and hot water, making sure you don't fill your pot more than 3/4 full. (When the liquid starts to boil, lower the heat to a simmer.) During the first 20 minutes of cooking, use a spoon to skim off the foam that comes to the surface and discard it.
- While the beef is cooking, prepare your vegetables. Peel and quarter your onion. Wash the celery, trim off the ends, and cut into 1-inch pieces. Rinse the carrots and trim off the ends. Peel the carrots and cut them in half horizontally. Rinse the parsley and remove the stems (with scissors, if you have them). Peel and smash your garlic. Rinse your basil and remove the leaves.
- After 20 minutes, add your onion, garlic, tomatoes, vegetables, herbs and seasonings to the pot and give it a quick stir. Cover the pot and keep the heat on low. Cook the soup for four hours, but remove about half of the carrots after 35 minutes. (You can refrigerate them after they cool and start bringing them to room temperature an hour before serving the soup.)
- When the soup is done, remove the meat to a bowl to shred or cut into chunks. Strain the soup into another pot (place a strainer over the empty pot and pour your soup through the strainer to remove the vegetables.) Discard the peppercorns. The vegetables in the strainer will be mushy, but you can save them to eat with salt and pepper if you wish.
