PASSOVER LEMON BARS



Passover Lemon Bars image

These tasty lemon bars have double the zest and zing from lemon in both the crust and filling. You will love them.

7 tablespoons unsalted melted butter
2 tablespoons sugar
1 vanilla bean scraped, or 2 teaspoons extract
¼ teaspoon kosher or sea salt
½ cup finely ground almonds
½ cup matzo cake meal
Zest from 1 lemon (preferably from an organic lemon)
1 cup plus 2 tablespoons sugar
3 tablespoons potato starch
3 large eggs
Finely grated zest from 2 lemons, (preferably from organic lemons)
½ cup fresh lemon juice (from about 2 - 3 medium lemons)
Pinch of kosher or sea salt
1 vanilla bean scraped, or 2 teaspoons extract
2 - 3 tablespoons powdered sugar, for dusting (optional)

Steps:

  • For the crust: Preheat oven to 350°F. Line an 8- x 8-inch baking dish with parchment paper or foil. Grease the parchment or foil. Heat butter until hot. Add sugar, vanilla, salt, almonds, cake meal, and lemon zest. Stir just to combine. Transfer crust to lined pan and press into the pan. Bake at 350°F until lightly browned, about 20 to 25 minutes. Set aside. For the filling: Decrease oven to 300°F. Whisk together sugar, starch, eggs, zest, juice, salt, and vanilla until well combined. Gently pour filling into baked crust. Bake the bars for 20 to 25 minutes until the center is no longer jiggly. Cool completely before garnishing with powdered sugar.

1 cup (250 ml) peanut butter
2/3 cup (157 ml) honey
4 cups (1 L) Cinnamon Whole Grain Cereal, Cinnamon Toast Crunch
1 cup (250 ml) Life smart dark chocolate, fruit and nut Muesli
1/2 cup (125 ml) dried cranberries
1/2 cup (125 ml) dried apricot, diced
Topping::
1/2 cup (125 ml) dark chocolate chips
1 tablespoon (15 ml) Irresistible coconut and avocat oil

Steps:

  • Heat peanut butter and honey in a large skillet over medium high heat for 1 minute or until mixture begins to bubble around the edges.Add cereal, muesli, cranberries and apricots, stirring to combine. Remove from heat and scrape mixture into a parchment lined 9 x 13 inch baking dish.Add chocolate chips and coconut avocado oil to a small bowl. Microwave in 30 second increments, stirring after each interval until melted. Spoon chocolate over bars.Refrigerate uncovered for 2 hrs or until set. Slice into 24 bars. Store bars in an airtight container in the refrigerator.Source : Metro

2 cups matzo cake meal, sifted
1 teaspoon vanilla
1 cup sugar
1 tablespoon sugar
1 tablespoon cinnamon
1/2 cup walnut halves
2 eggs

Steps:

  • Preheat oven to 325 degrees.
  • Cream sugar, and margarine.
  • Add vanilla and eggs and mix well.
  • Stir in cake meal .
  • Roll small balls of dough on ungreased cookie sheet or parchment lined sheets.
  • Make indentation in each. Add the walnut making sure to press in and cinnamon/sugar on top of each nut.
  • Bake for 20 minutes, rotating pan halfway.
