BAKED HAM AND CHEESE PARTY SANDWICHES
These small, delicious sandwiches are perfect for any party. They are so good that even the pickiest of eaters will eat these.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- In a bowl, mix together butter, Dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the prepared baking dish. Layer about half the ham onto the rolls. Arrange the Swiss cheese over the ham, and top with remaining ham slices in a layer. Place the tops of the rolls onto the sandwiches. Pour the mustard mixture evenly over the rolls.
- Bake in the preheated oven until the rolls are lightly browned and the cheese has melted, about 20 minutes. Slice into individual rolls through the ham and cheese layers to serve.

VEGETABLE PARTY SANDWICHES
This is my sister's recipe which she makes for parties and holiday events. The sandwiches are always a popular food item! In Spring of 2007, this recipe was featured in two North Carolina newspapers by the famous Food Editor, Helen Moore. Plan ahead because the vegetable mixture needs to be refrigerated 25 hours for the flavors to blend well. The recipe yields 112 party-size, quartered sandwiches. Preparation time, not refrigeration time, is stated.

Steps:
- Dissolve gelatin in water according to directions.
- In a large bowl, mix dissolved gelatin with carrots, celery, cucumber, onion, lemon juice and mayonnaise. Refrigerate for 25 hours.
- When ready to make sandwiches, if mixture is too jelled to spread well, add 1/3 to 1/2 cup more mayonnaise.
- Using an electric knife, trim crusts from bread edges. Spread vegetable mixture on bread and make 28 sandwiches. Cut into quarters.
- Layer cut sandwiches in a large plastic container with damp paper towels between layers until serving time.

- Mix cream cheese, horseradish and soup mix till smooth.
- Remove all crust from bread and flatten with a rolling pin.
- Spread cream cheese mixture on bread.
- Cut roast beef to fit bread then put 1 slice on top of cheese mixture.
- Roll the bread up like jelly roll and cut in slices or just in half.
- I serve these as appetizers and everybody seems to like them.

Party sandwiches are so good! You might now be able to find Pepperidge Farms party rolls, so use any soft small roll. They will work as well.

- 1. 1. Preheat oven to 350 degrees 2. In a small sauce pan melt butter, mustard, poppy seeds, Worcestershire sauce and small onion. Simmer for a few minutes.
- 2. 3. Remove rolls from packages. (Do not separate rolls.) Cut rolls in half horizontally creating 1 top and 1 bottom per package. Spread mixture above on cut sides of top and bottom of rolls.
- 3. On the bottom half of rolls layer Swiss cheese and ham on top of spread. Cover with top halves of rolls, which you have spread with mixture above. Cut into sections before baking. (You will cut each roll, so you will have a little sandwich) , and wrap in aluminum foil. Bake for 15 to 20 minutes or until cheese has melted. Enjoy!

- Place 3 slices of bread on your worktop. Spread each with a thin layer of the cream cheese mixture (you should use about ½ of it).
- Now, take 2 slices of cheddar and place these on top of one slice. Add 1 or 2 slices of ham (see note 4) and top this with lettuce.
