Super creamy and cheesy! This easy side dish is perfect for potlucks. Save time by using hash browns!

2 lb (900g) bag frozen diced hash browns, thawed
1 cup onions, chopped
1/4 cup melted butter
1 cup cheddar cheese, shredded
1 can (10.5oz/284ml) cream of chicken soup
2 cups sour cream
1/2 tsp onion salt
1/4 tsp pepper
1 tbsp fresh chives, chopped

Steps:

  • Preheat oven to 350F.
  • Add all the ingredients to a large bowl and stir to combine. Spread in a 9x13 baking dish.
  • Bake for 1 hour.
  • Turn the oven to broil on low. Broil for 1 minute or until the top starts to brown. Keep an eye on it because it will burn easily!
  • Remove from oven and serve hot.

Sometime back there was a topic in CC, ( Community Cafe ) about " White Trash/ Redneck Comfort Foods ". I decided to try to come up with a recipe that fit that topic. I think with this recipe it fits the topic very well.Thanks to Kim for Recipe#63684, which the potato part of the recipe is based on. Even if your not " White Trash or Redneck " I think you might like this. 2 1/2 cups potatoes, peeled and diced into 2 inch chunks
1 1/2 tablespoons vegetable oil
3 tablespoons parmesan cheese (the stuff in the green shaker )
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt (or to taste )
1/8 teaspoon cayenne pepper
1/2 teaspoon black pepper (or to taste )
6 ounces diced Spam
3 tablespoons margarine
3 tablespoons all-purpose flour
1 cup milk

Steps:

  • Preheat your oven to 450 degrees.
  • In a 3 cup bowl with lid, add all the potato ingredients,cover and shake until potatoes are well coated.
  • Place on a cookie sheet that has been lined with aluminum foil and sprayed with cooking spray, bake for 25 minutes, stirring once or twice during baking.
  • While potatoes are baking, melt margarine in a medium sized skillet add Spam and lightly brown.
  • Add flour and cook until " flour taste " is gone about 5 minutes.
  • Then add a little milk at a time, stirring until desired thickness is reached ( you might need a little bit more milk ) add salt and pepper to taste.
  • Divide potatoes between two plates, and cover with gravy.

1 (10.75 ounce) can cream of chicken soup
½ cup melted butter
½ cup chopped onion
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix potatoes, mozzarella cheese, sour cream, cream of chicken soup, butter, onion, salt, and black pepper together in a casserole dish.
  • Bake in preheated oven until hot throughout and bubbly on top, about 30 minutes.

1 (32 ounce) package frozen hash browns, thawed
1/2 cup margarine, melted
1 teaspoon salt
1 (10 3/4 ounce) can cream of chicken soup
1 cup sour cream
1 medium onion, diced
2 cups cheddar cheese, grated
2 cups corn flakes (topping)
1/4 cup margarine, melted (topping)

Steps:

  • Combine all ingredients, except the corn flakes and 1/4 cup margarine.
  • Put in a 12x9-inch pan.
  • Crush corn flakes and mix with margarine.
  • Sprinkle on top.
  • Bake for 45 minutes at 350°F or until bubbly.

9 large potatoes
8 ounces cream cheese
1 cup sour cream
2 teaspoons onion salt
1 teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish, and set aside.
  • Bring a large pot of lightly salted water to a boil. Cook potatoes in boiling water until tender. Drain, and transfer to a large mixing bowl. Mash until smooth. Stir in cream cheese, sour cream, onion salt, salt, and pepper. Beat until light and fluffy. Transfer to the prepared casserole dish, and dot with pieces of butter.

8 -10 medium potatoes

1/2 cup milk
8 ounces sour cream
8 ounces cream cheese

Steps:

  • Peel and cut up potatoes; boil until tender. Drain. Season with salt, pepper and butter; whip using milk if needed. In separate bowl beat together sour cream and cream cheese until well blended; add to potatoes.
  • Beat all ingredients until light and fluffy.
  • Pour in to buttered 2 quart casserole; dot with additiona butter if you like and sprinkle with paprika. Bake 325º oven for 30 minutes.

2 tablespoons butter

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain. Mash the potatoes with butter, milk, salt and pepper until smooth. Add cream cheese and onion dip; mix well. , Spread in a greased 2-1/2-qt. baking dish. Sprinkle with paprika. Cover and refrigerate for 8 hours or overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 50-60 minutes or until heated through.

26 oz. bag frozen hash browns
1/2 c melted butter
4 oz. sour cream
1 can soup (recipe calls for cream of mushroom, Dianne uses cream of celery)
2 cups sharp cheddar cheese
1 large onion, finely chopped
salt and pepper to taste
crumbled potato chips, fried onion rings, bread crumbs crushed Ritz crackers - anything crunchy.

Steps:

  • Let frozen hash browns thaw a little to make mixing easier. Mix all ingredients together, put in a lightly greased 9 x 13 pan and bake at 350 for approximately 45 minutes. Remove from oven, stir well and sprinkle with crunchy topping. Return to the oven and bake an additional 15 minutes. This dish is vegetarian, but ground beef and garlic can be added. Dianne has used Italian sausage or chicken mango sausage with Parmesan and Romano cheeses. Gruyere and cheddar can be used rather than just cheddar. Use your imagination. She does.
