- In a shallow bowl, combine flour, salt if desired and pepper; dredge the meat. In a large skillet, brown meat on both sides in oil. Remove and keep warm. , In the pan drippings, saute the celery, onion and garlic for 3-4 minutes. Combine the soup, brown sugar, Worcestershire sauce, vinegar and mustard; stir into the vegetables. Return meat to the pan. Cover and simmer for 1-1/2 to 2 hours or until meat is tender.

- Heat grill to high. Thickly slice the potato, then lay slices on a large non-stick baking tray and brush with oil. Grill for 10 mins until browned. Flip over the potatoes, add the mushrooms and tomatoes to the tray and brush with oil, then return verything to the grill for another 10 mins until cooked.
- Heat remaining oil in a frying pan. Season the steaks, then sear for 1 min on each side for rare, 1½ mins for medium or 2½ mins for well done. Remove and leave to rest. Add a splash of water to the pan, crumble in the stock cube, then boil to make a thin gravy, adding any steak juices from the plate. Serve the steaks with the veg, a handful of watercress and the gravy.

- Heat the grill to about 500 ºF
- Place the 6 steaks on a large clean cutting board and let them sit at room temperature between 20 and 30 minutes.
- Sprinkle the coarse salt and black pepper evenly over both sides of the steak.
- Drizzle the oil over both sides of the steak and pat down to make sure there's oil, salt and pepper coating all sides of the steaks.
- Place the steaks on the hot grill on a 45 degree angle to the grill grates and close the BBQ lid.
- After 6 minutes, lift the lid and flip the steaks over, once again on a 45 degree angle to the grill grates and close the BBQ lid.
- Open the lid and test the centre of the steaks with a meat thermometer. Your steaks should be close to 145 ºF for medium. This is our favourite internal temperature. If you prefer your steaks medium rare, reduce the cooking time by 1 to 2 minutes per side and aim for 135 ºF.
- Move the steaks to a serving dish and tent with aluminum foil for about 10 minutes. Letting them rest will give you juicier steaks.
- Serve the steaks with compound butter or sauce (try our chimichurri sauce) and your favourite side dish. Enjoy!

- For the Steak Seasoning: Add ingredients to a mortar and pestle then coarsely grind. Alternatively, add ingredients to a heavy duty Ziplock bag, squeeze all the air out, then crush ingredients with a meat pounder, rolling pin, or heavy bottomed skillet.
- For the Herb Butter: Add ingredients to a bowl then stir with a fork to combine. Scoop herb butter onto a sheet of plastic wrap then shape into a thick log and refrigerate until firm (if time is of the essence you can freeze for 20-30 minutes.) Can be done ahead of time.
- For the steaks: Trim steaks of any big hunks of fat to avoid flare ups on the grill then pat dry with a paper towel. Rub each side with oil then season generously with the steak seasoning and press gently into steaks so it adheres - you should use most if not all of the seasoning.
- Light 2/3 or 1/2 of your grill burners (2 of 3 burners, or 1 of 2 burners, depending on how many burners you have) then heat on high for 10-15 minutes, or until the grill reaches 500 degrees. Add steaks to the lit side then sear on each side for 1-1/2 minutes (adjust accordingly if your steaks are bigger or smaller than 1lb cut 1-1/2" thick,) keeping the lid closed between flipping.
