RED CABBAGE BRAISED IN CIDER AND BEER



Red Cabbage Braised in Cider and Beer image

4 ounces bacon
4 ounces unsalted butter
1 pound onions, thinly sliced
2 pounds cabbage, shredded
2 tart green apples, cored, peeled and thinly sliced
1 tablespoon sugar
2 ounces red wine vinegar
8 ounces white chicken stock
6 ounces dark beer
4 ounces apple cider vinegar
1 tablespoon cornstarch
Salt and freshly ground black pepper

Steps:

  • Saute the bacon in a large skillet over medium-high heat until it is crisp. Add the butter and melt. Add the onions and saute for about 3 minutes or until they are translucent. Add the red cabbage and continue to cook, stirring frequently, for another 3 minutes. Add the rest of the ingredients, except for the cornstarch and seasonings. Bring to a boil and turn the heat down to a simmer. Cover and simmer for approximately 30 minutes or until cabbage is soft and tender. Make a slurry by mixing the cornstarch with a small amount of water or chicken stock. Blend the slurry into the braising liquid and bring to a boil. Reduce the heat to a simmer. Season, to taste,with salt and black pepper.

1 small onion, sliced
2 bay leaves

1 large head cabbage, cored and thinly sliced or shredded
1 bottle beer

Steps:

  • In a large pot, add the oil and cook the bacon until browned and crispy. Add the onion and the bay leaves and season with salt and pepper. Add the cabbage, stirring to mix. Add the beer, season and cover. Braise until the cabbage has wilted, stirring occasionally, about 30 minutes.
  • Remove the bay leaves and serve immediately.

1 large head Savoy cabbage, quartered, cored, leaves separated and torn into large pieces
2 tablespoons butter
2 tablespoons olive oil
2 tablespoons chopped fresh flat-leaf parsley
1/2 bunch fresh chives, chopped
Salt and freshly ground black pepper

Steps:

  • Bring a big pot of water to a boil over high heat adding 2 to 4 tablespoons of salt to make the water taste like the sea. Add the vinegar, and then the cabbage and boil over high heat until the cabbage is wilted (don't overcook it - it should still have tooth), 2 to 3 minutes. Drain, then toss in a bowl with the butter, oil, the parsley, chives, and salt and pepper, to taste.

1 cup thickly diced bacon
1 yellow onion, thinly sliced
Kosher salt
12 ounces IPA-style beer
2 tablespoons cider vinegar
1 large or 2 small heads savoy cabbage, quartered, cored and thinly sliced
3 tablespoons brown mustard (my favorite is Bertman Ballpark)
1/2 cup chopped fresh chives
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Heat a large Dutch oven over medium-high heat. Add the bacon and cook until crisp, about 5 minutes. Add the onions along with a pinch of salt and cook until the onions are translucent, 3 to 5 minutes. Add the beer, vinegar and another large pinch of salt. Cover and cook until the cabbage is wilted but is still slightly crisp. Stir in the mustard and taste for seasoning. You might want to add some additional salt, mustard and/or vinegar at this time.
  • Remove the cabbage from the heat and stir in the chives and parsley.

1 (3-pound) corned beef brisket
4 garlic cloves, smashed
2 large shallots, peeled and halved
2 tablespoons pickling spice
2 teaspoons caraway seeds
2 (12-ounce) bottles beer (not light)
1/2 cup Irish whiskey
6 carrots, peeled and cut into 2-inch pieces
6 red potatoes, cut into 2-inch dice
4 sprigs fresh dill
Kale leaves, for plating

Steps:

  • Preheat the oven to 250 degrees F.
  • Put the corned beef into a large roasting pan (preferably with a lid). Add the garlic, shallots, pickling spice, caraway seeds, beer and whiskey. Cover and place in the oven. Braise 3 hours, turning the meat once. At the end of the 3 hours, add the carrots, potatoes and dill. Cover again and place back in the oven for an additional 2 hours. Remove from the oven. Line a platter with kale leaves, place the corned beef in the center and mound the carrots and potatoes around it. Serve immediately.

2 large eating apples, each sliced into six wedges
thumb-sized piece of ginger, peeled and finely grated
50g butter
100ml chicken or vegetable stock
300ml alcoholic ginger beer
½ tbsp light brown soft sugar
2 tsp coriander seeds, crushed
1 star anise
2 tbsp cider vinegar

Steps:

  • Heat the slow cooker to low. Put all the ingredients in the slow cooker and add a good grinding of black pepper and 1 tsp salt. Stir well, then cook for 5 hrs.

1 lb beer bratwurst
2 large onions, chopped
1 large green bell pepper, chopped
1 medium cabbage, chopped and washed
1 (14 1/2 ounce) can del monte diced tomatoes
1 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons canola oil

Steps:

  • Poke holes in the beer bratwurst and pre-cook the package in the microwave for about 4 minutes. (This gets alot of the grease out.) After pre-cooking, cut the bratwurst into 1/2 inch slices and set aside.
  • Put onions, bell peppers, and cabbage in a pot with oil. Cover and cook on medium for about 30 minutes. Check it often and stir.
  • Add bratwurst, tomatoes, salt, and pepper. Cook for another 20 minutes. Serve.
  • (**Use the Del Monte tomatoes with basil, garlic, and oregano.).

  • Melt the butter in a large skillet over medium heat.
  • Add the sausages and brown on all sides, about 5 minutes.
  • Add the beer and mustard and simmer until slightly reduced, about 3 minutes.
  • Add the cabbage, stir to combine, cover and simmer for 5 minutes.
  • Stir again and cook for an additional 2-4 minutes until the cabbage is wilted but still green.
  • Season with salt and pepper to taste.

9 cups sauerkraut (not canned)
1/4 lb smoked bacon (preferably slab, cut crosswise into 1/4-inch pieces)
2 medium onions, thinly sliced
4 medium carrots, cut crosswise into 1/4-inch -thick slices
5 1/2 cups beer, such as paulaner (Oktoberfest lager (44 ounces)
1 cup chicken broth
3 bay leaves
1 teaspoon salt
1/2 teaspoon whole black peppercorn
1 tablespoon vegetable oil
1 3/4 lbs smoked sausage (assorted smoked and precooked fresh sausages such as smoked kielbasa cut into thick slices, frankfur)
1 lb smoked boneless pork loin (Canadian bacon, cut into 4 slices)

Steps:

  • Preheat oven to 325°F.
  • In a large bowl soak sauerkraut in cold water to cover 20 minutes, changing water once halfway through soaking.
  • While sauerkraut is soaking, in a large heavy skillet cook bacon pieces over moderate heat, stirring, until golden.
  • Pour off all but about 2 tablespoons drippings and add onions to bacon.
  • Cook mixture, stirring, until onions are softened.
  • Drain sauerkraut well in a colander, pressing out excess liquid, and in a large flameproof roasting pan combine with bacon mixture, carrots, beer, broth, bay leaves, salt, and peppercorns.
  • Bring sauerkraut mixture to a boil on top of stove and boil 1 minute.
  • Cover pan tightly with foil and braise in middle of oven 4 hours.
  • Sauerkraut may be prepared up to this point 1 day ahead, cooled, uncovered, and chilled, covered with plastic wrap. Reheat sauerkraut before proceeding.
  • If desired, in a heavy skillet heat oil over moderate heat until hot but not smoking and in batches brown sausages.
  • Add sausages and pork loin to sauerkraut, partially submerging them.
  • Braise sausages and sauerkraut, covered tightly with foil, in middle of oven 30 minutes and transfer with a slotted spoon to a heated platter, discarding bay leaves if desired. (Do not eat bay leaves if leaving as garnish.).
