Cheese Straws - crispy, buttery, homemade cheese straws are easy and a great appetizer!

Number Of Ingredients 4

1 pound sharp Cheddar cheese
3 cups all-purpose flour
2 sticks unsalted butter, diced
1/2-1 teaspoon Cayenne pepper

Steps:

  • Preheat oven to 375. Butter two large baking sheets. Grate cheese in bowl of food processor and remove to another bowl.
  • Place flour and Cayenne pepper in food processor and pulse to combine. Add cheese and butter to food processor and run until well mixed and a ball of dough forms. If you don't have a food processor, just use a fork and stir until well mixed.
  • Press dough through cookie press onto cookie sheets. Bake at 375 for about 14 minutes or until golden brown.
  • You can also wrap the dough in wax paper and chill for thirty minutes, then slice thinly (about 1/4 inch) into cookies and bake. Or you can freeze the dough until needed.

1 sheet frozen puff pastry (from a 17.3-ounce package, such as Pepperidge Farm), thawed
1 tablespoon butter, melted
1 cup grated Cheddar
1 teaspoon cayenne
3/4 cup grated Parmesan
1 large egg

Steps:

  • Line a baking sheet with parchment.
  • Lightly roll out the sheet of pastry into a 10-by-12-inch rectangle, then brush with the melted butter. Sprinkle over the Cheddar, cayenne and 1/2 cup of the Parmesan. Using the rolling pin, press the cheese into the pastry. Cut the pastry into 12 strips. Twist each strip about 5 times and transfer to the prepared baking sheet. Place in the freezer for 20 minutes.
  • Preheat the oven to 400 degrees F.
  • Mix together the egg and 1 teaspoon water in a small bowl, brush the strips with the mixture and sprinkle over the remaining 1/4 cup Parmesan. Bake until golden brown and puffed, 10 to 12 minutes.

350g pack ready-rolled puff pastry
four handfuls grated parmesan (or vegetarian alternative)
handful flour, to roll pastry on

Steps:

  • heat oven to 220c/fan 200c/gas 7. Unroll a puff pastry, scatter over a couple of handfuls of grated Parmesan, then fold in half. On a lightly floured surface, roll out to the thickness of a £1 coin. Cut into 1cm strips, then twist the strips 3-4 times. Lay on a baking sheet, scatter over more cheese and bake for 12 mins, or until golden. Leave to cool, then keep in an airtight container for up to 2 days. As these cheese straws are very delicate, roll them in kitchen paper before packing into a plastic container.

  • Preheat the oven to 375°F. Line two baking sheets with parchment paper or Silpat baking mats.
  • Lightly flour your work surface then unfold the sheets of puff pastry and roll each until it is 10x12 inches in size. Brush both sheets of puff pastry with the egg wash.
  • Evenly sprinkle the grated Parmesan, gruyere and poppy seeds atop the puff pastry then use a rolling pin to lightly roll the toppings into the pastry.
  • Using a sharp knife or pizza wheel, cut each sheet of puff pastry into 12 1-inch strips. Twist the strips then arrange them on the baking sheets, spacing them 1 inch apart.
