New potato salad with shallots, parsley & vinaigrette image

Get creative with the classic potato salad - this one has a lovely fresh tang

1 kg new potatoes, scrubbed
1 teaspoon Dijon mustard
2 tablespoons white wine vinegar
6 tablespoons extra virgin olive oil
3 small shallots, very finely chopped
1 handful fresh flat-leaf parsley, roughly chopped

Steps:

  • Gently boil the potatoes in salted water until tender. Drain and leave to cool slightly.
  • Whisk the mustard with the vinegar and slowly add the olive oil. Add the chopped shallots and parsley and season well with sea salt and freshly ground black pepper.
  • Slice the cooked potatoes in half and dress with the shallot and parsley vinaigrette.

Potato salad made with an herbed oil and vinegar dressing - excellent for lunch boxes, picnics, and anyplace you want a lighter salad - and no mayo!

Number Of Ingredients 4

2 pounds white potatoes
2 T cider vinegar, divided
2-3 T olive oil
2 T finely minced parsley

Steps:

  • Cook potatoes in their skins.
  • When cool enough to handle, quarter. Sprinkle 1 T vinegar over them, stir gently to distribute. Let cool completely, marinating in the vinegar.
  • Mix remaining vinegar, 2 T oil, and parsley, let sit to meld.
  • Cut potatoes into bite sized pieces. Toss with the dressing, adding up to another T of oil if you find it is needed. Chill before serving.

5 lbs yukon gold potatoes
2 tsp sea salt (for boiling potatoes + more or to taste for seasoning the potatoes)
1 bay leaf (optional)
3/4 cup unsalted butter (or 12 Tbsp, melted)
1 bunch parsley (finely chopped (1 cup))

Steps:

  • Scrub potatoes with a clean scouring pad or the rough back of a sponge (no need to peel them). Slice potatoes into 1 - 1 1/2" thick pieces, transfer to a pot and add enough warm water to barely cover potatoes. Sprinkle with 2 tsp salt add bay leaf.
  • Bring to a boil then boil partially covered for about 15 minutes or until easily pierced with a fork. Drain potatoes. Drizzle with melted butter and toss to coat (note: it's easier to toss in a large mixing bowl).
  • Sprinkle with 1/2 tsp salt or to taste. Add 1 cup chopped parsley and toss to combine. Toss again just before serving to re-coat with any butter that has collected at the bottom.

2 1/2 pounds russet potatoes, 3 medium-large potatoes, peeled and cubed
2 ribs celery, finely chopped
1/2 small to medium yellow skinned onion, finely chopped
3 tablespoons chopped pimento, drained
3 tablespoons sweet pickle relish
1/3 cup mayonnaise, eyeball it
1/3 cup yellow mustard, eyeball it
Salt and pepper
2 tablespoons chopped parsley, optional

Steps:

  • Boil potatoes in salted water 10 to12 minutes, or until just tender. Drain the potatoes and spread out onto a cookie sheet to cool quickly, about 10 minutes.
  • In a bowl, combine celery, onion, pimento, relish, mayonnaise and mustard.
  • When you are ready to serve, combine cooled potatoes with other ingredients. Stir the potatoes to combine and season with salt and pepper.

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and chop.
  • Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.

5 pounds yellow-fleshed potatoes
1/3 cup white-wine vinegar
1/2 cup vegetable oil
2 cups minced fresh parsley leaves

Steps:

  • In a kettle combine the potatoes with enough salted cold water to cover them by 2 inches, bring the water to a boil, and simmer the potatoes, removing the small ones as they are done, for 30 to 40 minutes, or until they are tender. Drain the potatoes and let them cool until they can be handled. Peel the potatoes and cut them into bite-sized pieces.
  • In a large bowl whisk together the vinegar and salt and pepper to taste, add the oil in a stream, whisking, and whisk the dressing until it is emulsified. Add the potatoes and the parsley and combine the salad well.

2 red onions, peeled and shaved
4 bulbs fennel, thinly sliced
1 cup chopped parsley
1 1/2 tablespoons of orange zest
Salt and freshly ground black pepper to taste
1 cup extra-virgin olive oil
1/3 cup cider vinegar
2 tablespoons Dijon mustard
4 cloves garlic, minced
1 tablespoon salt
12-ounce can anchovy fillets, plus their packing oil
3 bunches fresh Italian parsley

Steps:

  • Cook the potatoes in salted boiling water until tender, about 10 minutes. Drain. Put onions, fennel, parsley and zest in a large serving bowl. Place all dressing ingredients, except the Italian parsley, in a blender and emulsify, about 30 seconds. Add the Italian parsley incrementally and process until liquefied and bright green. When the potatoes are cool, add them to the other vegetables. Pour on the dressing and blend well. (Salad and dressing can be made a day ahead.)

2 teaspoons coarse salt
2 tablespoons unsalted butter
