A wonderful casserole, even for those who don't particularly care for squash!

2 teaspoons vegetable oil
3 crookneck yellow squash, diced
½ sweet yellow onion, diced
2 tablespoons water, or as needed
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
½ cup shredded Cheddar cheese
½ (6 ounce) box dry bread stuffing mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish.
  • Heat oil in a skillet over medium heat; cook and stir squash and onion until tender, 8 to 10 minutes. Add water and simmer to soften squash, 2 to 4 minutes. Stir cream of chicken soup, sour cream, and Cheddar cheese into squash mixture; mix well.
  • Transfer squash mixture to the prepared baking dish; top with stuffing mix.
  • Bake in the preheated oven until cheese is bubbling and stuffing is browned, about 30 minutes.

  • In a rocks glass, muddle the orange, cherry, sugar and bitters. Add ice. Pour the Scotch and club soda into the glass.

Cooking it in the crockpot makes it so easy to have dinner ready in no time. It is suggested that this be served with a Scotch beer or ale and some heavy crusty bread.

2 shoulder lamb chops
1/3 cup pearl barley
1 large carrot, peeled and cubed
2 leeks, white part only, cut into 1/2-inch pieces
1 -2 celery rib, thickly sliced
6 cups water
salt
pepper
1/4 cup parsley, chopped

Steps:

  • In the slow cooker, combine the lamb, barley, carrot, leeks, celery and water.
  • Cover and cook on low for 5 to 7 hours, until meat is very tender and falling apart; add salt and pepper to taste.
  • Ladle into serving dishes and garnish with parsley.
  • Enjoy!

8 ounces elbow macaroni
16 ounces corned beef, chopped
1/2 lb sharp cheddar cheese, shredded
1 cup milk
10 1/2 ounces cream of mushroom soup, undiluted
1/2 cup dry breadcrumbs
2 tablespoons chopped onions, optional at my house
1 dash garlic salt, optional at my house

Steps:

  • Preheat oven to 350 degrees.
  • Cook the macaroni in 2 quarts salted boiling water for 8
  • minutes until tender.
  • Drain.
  • Mix mushroom soup and milk together.
  • Add the corned beef, shredded cheese, (garlic salt and onion).
  • Spray a 13 x 9 pan with cooking spray or grease generously.
  • Alternate layers of corned beef mixture and cooked macaroni.
  • Sprinkle top with breadcrumbs.
  • Bake uncovered for 45 minutes.
