1 ½ pounds new red potatoes
1 tablespoon vegetable oil
1 onion, chopped
1 clove garlic, crushed
1 cup chicken broth
1 cup chopped fresh parsley
½ teaspoon ground black pepper

Steps:

  • Peel a strip of skin from around the center of each potato, place the potatoes in cold water. Set aside.
  • Heat oil in a large skillet over medium high heat. Saute onion and garlic for 5 minutes or until tender. Pour in broth and 3/4 cup of the parsley; mix well. Bring to a boil.
  • Place the potatoes into a large pot full of salted water. Bring the water to a boil; then reduce heat. Simmer covered, for 10 minutes or until the potatoes are tender.
  • Remove potatoes with a slotted spoon to a serving bowl. Sprinkle the black pepper into the skillet and stir.. Pour the peppered sauce over potatoes and sprinkle with remaining parsley.

CELERY-PARSLEY SOUP

A little butter and just one potato give this bright green soup a luxurious texture, but the clean, vibrant flavors (thanks to plenty of parsley, spinach and an entire bunch of celery) are like a spring tonic. Garnish with a drizzle of olive oil or a dollop of yogurt and serve with a crusty baguette, if you like.

2 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
1 bunch celery, chopped (reserve prettiest leaves for garnish)
2 leeks, white and light green portions only, sliced into half-moons
1 large Yukon Gold potato, peeled and diced
1 large clove garlic, thinly sliced
1 teaspoon coarse sea salt
4 handfuls baby spinach (about 4 ounces)
Leaves from 1/2 bunch fresh flat-leaf parsley (about 1 cup)
1/2 cup low-fat (1%) plain Greek yogurt
2 tablespoons lemon juice

Steps:

  • Melt butter with oil in a soup pot over medium heat.
  • Add celery, leeks and potato and cook, stirring occasionally, until leeks are tender, about 6 minutes.
  • Add garlic and salt and cook for 2 minutes more.
  • Add 3 cups water and bring mixture to a boil.
  • Lower heat and simmer until potato is tender, about 10 minutes.
  • Combine spinach and parsley in a blender, and then carefully ladle hot soup over vegetables.
  • Allow liquid to cool briefly (during this time it will wilt spinach) and then purée until smooth.
  • Add yogurt and lemon juice and purée again until soup is very smooth.
  • Serve soup garnished with celery leaves.

1 red onion, chopped

Steps:

  • Heat oil in a stockpot over medium-high heat; stir in onion. Cook and stir until onion has softened and turned translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add potatoes and celery and saute until celery is tender and slightly browned, 3 to 5 minutes. Add water, bouillon cube, garlic salt, and pepper. Bring to a boil and cook until potatoes are tender, 20 to 25 minutes.

Steps:

  • Boil a large saucepan of water. Fill a 6 quart (6 L) saucepan approximately ¾ full with cold water, and place it on the stove. Set the heat to high, and allow the water to come to a full boil. The pot will boil more quickly if you place a lid on it.
  • Cook the parsley for 1 minute. Once the water is boiling, place 1 pound (450 g) of fresh parsley in the pan. Allow the parsley to cook until the leaves become bright green and wilted. That should take approximately 30 seconds to 1 minute. Keep a careful eye on the parsley so you know when it's done. If you cook it too long, you may dilute some of its flavor.
  • Drain the parsley and set it in cold water. When the parsley is finished cooking, transfer it immediately to a colander to drain it. Next, place it in a bowl of ice cold water. Let it sit for approximately 1 minute to stop the cooking process. Drain it in the colander a final time to remove the water. While you're draining the cold water from the parsley, it's a good idea to give the leaves a squeeze with a towel or spin them in a salad spinner to ensure that you get rid of any excess moisture.
  • Chop the parsley. When the parsley is dry, gather all of the leaves in a pile. Use a sharp knife to give them a rough chop. Be careful not to press on the parsley too hard with the knife or you may bruise the leaves. There's no need to remove the stems from the parsley. 24 oz Baby Potatoes (1 bag (red or white))
1 Sweet Onion (Large, chopped)
1 bunch Parsley (stemmed removed, leaves finely chopped)
2 tbs Olive Oil

Steps:

  • If you bought pre-washed potatoes, place them in a pot of water and bring to boil. If they're not pre-washed, then scrub your potatoes to make sure that they're clean. Once the water is boiling, add a generous amount of salt (1 to 1.5 tablespoons). Let the potatoes boil for about 30 minutes, until fork tender.
  • Chop your onions. Heat up olive oil in a skillet and then add your onions, sprinkle with some salt and pepper. Sauté the onions until soft, and set aside.
  • Wash and dry your parsley (you will need the whole bunch). Cut off the stems and chop the leaves.
  • Drain the potatoes, add them to the onions, and then add parsley. Combine and mix everything together, adjust seasoning with salt and pepper and serve.

2 leeks, thoroughly rinsed and chopped
2 garlic cloves, minced
2 parsnips, diced (or parsley root, celery root, or even carrots)

¼ cup dry white wine
2 cups water

4 cups Yukon Gold Potatoes (about 1.5 pounds), cut into cubes
2 Large Leeks, (white and pale green part only), halved lengthwise, rinsed and sliced into 1/4 inch slices
2 Large Parsnips (about 1 pound), peeled and cut into cubes
1 Garlic Bulb, roughly chopped
2 Slices Bacon (optional)
1 tbsp Vegan Butter or Cooking Oil
5 cups Chicken Broth
1 cup Water
1-2 tsp Sea Salt
1/2 tsp Pepper
2 tsp Italian Seasoning
3 Sprigs Thyme
1 Bay Leaf
Parmesan cheese
Chopped parsley or green onion
Bacon pieces

Steps:

  • Prepare the vegetables: Cut the potatoes into cubes. Cut the dark green part off of the leeks and discard it. (You can also save it for making a vegetable broth.) Slice the white and light green part of the leek in half and rinse well to remove any dirt. Then slice the leek into ¼ inch slices.
  • In a large pot or Dutch oven, cook the bacon over medium heat until it is crisp. Then, remove the bacon and set it aside for later. Drain the bacon drippings, leaving less than half in the pot. (about 1 tbsp drippings)
  • Add the leeks and butter. Saute for 5 to 8 minutes, or until the leeks are slightly softened, but do not let leek brown. Add the garlic, salt, pepper. Cook for 2 minutes, stirring frequently.
  • Mix in the potatoes, parsnip, broth, thyme, Italian seasoning, and water. Bring the soup to a boil. Then, reduce the heat to a simmer and cook covered for 25 to 30 minutes, or until the potatoes and parsnip and very tender. Remove the bay leaf.
  • Use an immersion blender to blend the soup to your desired consistency. Or, transfer the soup in batches to a high-powered heat-proof blender and blend until smooth. If the soup is too thick, add a bit more broth or water to reach your desired consistency.
  • Taste the soup and adjust the flavor as necessary; adding more salt to enhance the flavor.
  • Serve and garnish with chopped bacon, parmesan cheese, and chopped parsley (optional). Enjoy!

1 1/2 lbs potatoes, peeled (can use a mixture of white and red potatoes)
2 parsley roots, scrubbed (or 2-3 celery stalks)
1 1/2 tablespoons olive oil (or butter- I recommend using half oil, half butter)
1 yellow onion, finely chopped
2 bay leaves
1/3 cup dry white wine
2 cups parsley, chopped
salt
fresh ground black pepper (or use white pepper)
6 cups water (or vegetable stock)
1/3 cup cream (or half and half or water)

Steps:

  • Quarter the potatoes lengthwise and thinly slice. Chop the celery fine or, if using parsley root, grate.
  • Melt the oil(or butter) in a soup pot and add the potatoes, celery, onion, and bay leaves.
  • Cook over medium heat for 5-7 minutes, stirring occasionally. Raise the heat, add the wine, and let it reduce until syrupy. Add 1 1/2 cups parsley, 1 1/2 teaspoons salt, and the water; bring to a boil.
  • Lower the heat and simmer, partially covered, until the potatoes have broken apart, about 30 minutes.
  • Stir in the cream and remaining parsley and heat through.
  • Taste and season with more salt if needed. Add the pepper. Remove the bay leaves and serve.

  • Roast 2 heads garlic(with skin left on) that have been rubbed with olive oil, covered with foil(and add a little water to the pan), in a 350*F. oven for 45 minutes. Remove skins and add with the onions and potatoes. You may run the soup through a food mill if desired.

  • Boil 1 bunch greens(mustard greens are especially good) 10-15 minutes, drain, coarsely chop, and add to soup with 2-3 pinches of red pepper flakes. Serve with a few shavings of Parmesan cheese.

6 medium potatoes, preferably a mealy variety like russet, peeled and diced

4 ounces vegan cream cheese, diced
1/2 cup firmly packed chopped fresh parsley
2 tablespoons minced fresh dill
1/4 cup quick-cooking oats
2 cups rice milk, or as needed
Salt and freshly ground pepper to taste

Steps:

  • Heat the oil in a soup pot. Add the onion and sauté over medium-low heat until translucent. Add the garlic and continue to sauté until both are golden.
  • Add the water with bouillon cubes, potatoes, and bay leaves. Bring to a rapid simmer, then lower the heat. Cover and simmer gently until the potatoes are just tender, about 20 to 25 minutes.
  • Remove about 1/2 cup of the hot liquid with a ladle and transfer it to a small mixing bowl. Combine with the cream cheese and whisk together until smooth and creamy. Stir into the soup along with the parsley and dill.
  • Slowly sprinkle in the oats. Simmer for another 20 to 25 minutes over very low heat, or until the potatoes are completely tender.
  • Add enough rice milk to give the soup a slightly thick consistency, then season with salt and pepper. Discard the bay leaves. Heat through and serve. This soup thickens as it stands; thin as needed with additional rice milk, then adjust the seasonings.

This Easy Potato Soup recipe is the real deal. Shared with me from the granddaughter of an Idaho potato farmer, this homemade soup is creamy, thick, and luxurious, even without the optional cheesy garnish. It is truly the best potato soup I've ever had. And it only takes about 30 minutes to make!

4 cups diced Russet potatoes (2 large potatoes, about 2 pounds)
1 cup diced carrots (about 2 large )
1 clove garlic (mashed and diced)
3 cups water
1 tablespoon Better Than Bouillon Chicken Base (chicken or turkey flavor is great)
1/4 cup fresh chopped parsley (or 1 tablespoon dried parsley)
1 teaspoon kosher salt
1/2 cup butter (one stick)
1/2 cup all purpose flour
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
4 cups milk (whole milk is best)
cheddar cheese
chopped green onions
chopped parsley

Steps:

  • Boil the veggies. Peel the potatoes (2 large potatoes, about 2 lbs) and dice them. I like a fairly small dice, about 1/2 inch. Place in a stock pot or 3 quart pot. If you have not quite 4 cups of potatoes, or more like 5 cups, don't sweat it that's fine.
  • Peel the carrots and dice about the same size as the potatoes. Add to the pot.
  • Smash and mince 1 clove of garlic and add to the pot.
  • Add 3 cups of water to the potatoes and carrots. The water should be just barely covering the vegetables, so add a little more or less to make sure they are just barely covered. (We are not draining these potatoes, this water will be part of the soup.)
  • Add a heaping tablespoon of Better Than Bouillon Base. The Roasted Chicken flavor is great, but I also love the Turkey base, it has really rich flavor. If you don't have Better than Bouillon, you can use a couple teaspoons of bouillon granules or cubes. Those are much saltier than the paste so be careful.
  • Chop about 1/4 cup fresh parsley, or use 1 tablespoon dried parsley. Add it to the pot.
  • Add 1 teaspoon kosher salt. Bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium to keep it at a steady simmer. Vent the lid (tilt it so that steam can escape.) Simmer for about 20 minutes, until the potatoes and carrots are very tender. You should be able to smash one with a fork easily. Remove from heat.
  • Use a potato masher and roughly mash the mixture to your desired texture. I like a velvety soup with some chunks. You can leave it very chunky by not mashing at all, or if you want an ultra smooth soup you can use an immersion blender.
  • Make the white sauce (bechamel). Meanwhile, in a 2 quart pot or larger, melt 1/2 cup butter over medium heat. Once it is melted, add 1/2 cup flour and use a whisk to stir it together into a paste. Add 1/2 teaspoon kosher salt and 1/2 teaspoon pepper. Cook this mixture for 1-3 minutes, stirring constantly.
  • Slowly add the 4 cups of milk, 1 cup at a time. Use the whisk to incorporate the milk into the roux (roux=butter/flour mixture) every time you add more. See photos. It should take a few minutes to add all the milk.* If you dump it in all at once, you will have flour chunks in your soup. Don't be like that.
  • Once all the milk is added, keep stirring often so the bottom doesn't scorch. Your heat should still be on medium. Wait until the mixture has come to a boil (consistent bubbles rising from the center) and then let boil for 1 minute, stirring. Remove from heat.
  • Pour the white sauce into the pot with the potatoes, using a spatula to scrape all that goodness in. Stir the mixture together.
  • Serve warm and garnish with extra chopped parsley, shredded cheddar cheese, and chopped green onions.
  • Store leftovers in the fridge for up to 5 days. Don't freeze this soup! The potatoes absorb tons of moisture, making the white sauce separate, and then it gets grainy on you. No thanks. Time to invite a friend over for soup and stories. I mean shouldn't that be a thing anyway?
