GREEK CAULIFLOWER
A twist on cheese sauce for cauliflower. Nice tangy taste of feta and richness of eggs. NOTE: I re-wrote the instructions more clearly. There is NO hot sauce in this, as mentioned by one reviewer. It called for whisking 1/2 cup OF THE HOT CHEESE sauce, NOT 1/2 cup hot sauce. :)

Steps:
- Wash and separate cauliflower into florets and cook in a large saucepan in boiling water until tender, about 15 minutes. Drain and arrange in a 9 x 13-inch baking pan.
- Preheat oven to 300°F.
- In a saucepan, melt butter; add flour and stir over high heat until browned slightly. Add milk and cook, stirring, until thickened. Add cheese; cook until cheese is melted.
- Slightly beat eggs in small bowl. Whisk in 1/2 cup of the hot cheese sauce into eggs, to temper.
- Whisk egg mixture gradually into the remaining cheese sauce. Season to taste with salt and pepper. Pour over cauliflower and sprinkle with paprika. Bake for 15 minutes, until bubbly.

Steps:
- Wash and separate cauliflower into flowerets.
- Bring water, milk and salt to a boil.
- Add cauliflower and boil 20 minutes or until done.
- Drain.
- Add oil and lemon juice, salt and pepper.
- Toss lightly.

GREEK CAULIFLOWER DIP
Steps:
- Place the cauliflower, garlic and chicken broth in a deep saute pan. Bring to a boil. Reduce to a simmer. Cover and cook until , about 50 minutes. Drain.
- Place the cauliflower and garlic in a food processor. Puree until smooth. Add remaining ingredients. Process until smooth. Serve with crackers.

- In a large pot, or deep pan heat the olive oil, add the cauliflower, potatoes, and spices, pepper and sauté, browning the cauliflower a bit.
- Add some hot water until cauliflower is about half way covered (you can always add more later if needed). Stir gently.
- Lower heat, assemble cauliflower so that that stems face down. Cover pot and let it simmer for about 30-50 minutes (check that the cauliflower is very soft, but not falling apart, also the sauce should not be watery).
