A super easy and tasty recipe for smokey parsley and almond pesto

2 tbsp almonds (flaked)
1 clove garlic
25 g parsley
1/2 lemon (juice and zest)
1 tbsp parmesan cheese (grated)
100 ml olive oil
salt and pepper (I used smoked salt and pepper but that is purely optional)

Steps:

  • Toast the almonds in a dry pan for 40 seconds or until just golden and aromatic
  • Mince the garlic and then add all ingredients to a food processor and whazz to a sauce consistancy.
  • Serve as a dip or sauce for pasta or spread on to crusty bread.

2 cups packed, stemmed Italian parsley
Course salt
1/4 cup walnuts
1/2 cup freshly grated Parmesan cheese, or to taste
2/3 cup olive oil

Steps:

  • In a food processor place the garlic, parsley, pinch salt, walnuts, and cheese. Process until they form a paste. Gradually blend in olive oil, taste adjust your seasoning if necessary. Great with pasta, poultry, vegetables and rice.

1 cup (packed) parsley leaves
1/3 cup (generous) whole almonds, toasted (about 2 1/2 ounces)
1 tablespoon fresh thyme leaves or 1 teaspoon dried
2 garlic cloves
1/4 cup almond oil or olive oil
1/4 cup freshly grated Parmesan cheese (about 1 scant ounce)
1/4 cup canned low-salt chicken broth

Steps:

  • Finely chop parsley, toasted almonds, thyme and garlic in food processor. Gradually mix in oil and process until pureed. Mix in Parmesan cheese and chicken broth. Season pesto to taste with salt and pepper. (Can be prepared 3 days ahead. Store in airtight container in refrigerate.)

A friend of mine got this from a magazine and shared it with me to keep me from drooling over her lunch. (We didn't have leftovers for me to take to lunch, though!) If you make the pesto the night before, this is ready in the time it takes to cook the pasta. It's dinner QUICK!

1 lb penne or 1 lb farfalle pasta
3 garlic cloves
1/3 cup unsalted roasted almonds
1 1/2 cups flat leaf parsley
1/2 cup extra virgin olive oil, plus more for sauteeing the zucchini
1/3 cup freshly grated parmigiano-reggiano cheese
3 -4 medium zucchini, halved lengthwise and sliced crosswise 1/8 inch thick
1 pinch crushed red pepper flakes
salt and pepper

Steps:

  • Cook and drain pasta of your choice.
  • Meanwhile, in a food processor, finely chop garlic.
  • Add the almonds and pulse until they are coarsely chopped.
  • Add the parsley and 1/2 cup of the olive oil and process until the parsley is finely chopped.
  • Add the Parmigiano-Reggiano cheese and pulse just until the pesto is combined. Season with salt and pepper and scrape the pesto into a largeserving bowl.
  • In a large skillet, heat the remaining 1 tablespoon of olive oil, add the zucchini and cook over moderately high heat until tender and browned in spots, about 5 minutes. Add the crushed red pepper and season with salt and pepper. Add zucchini to the bowl with the pesto. Mix in the farfalle, toss well.
  • Serve with extra parm on top.

2 tablespoons honey
1/2 teaspoon salt
1/2 cup olive oil
1/2 cup grated Parmesan cheese

Steps:

  • Place basil, parsley, almonds and garlic in a small food processor; pulse until chopped. Add lemon zest, juice, honey and salt; process until blended. Continue processing while gradually adding oil in a steady stream. Add cheese; pulse just until blended., Store in an airtight container in the refrigerator for up to 1 week. Freeze option: Transfer pesto to ice cube trays; cover and freeze pesto until firm. Remove from trays and transfer to a resealable plastic freezer bag; return to freezer. To use, thaw cubes in refrigerator 2 hours.
