CREAMY PARMESAN SPINACH ORZO
Steps:
- In a deep pot, bring 6 cups water to a boil. Add 1 tablespoon kosher salt.
- Add orzo pasta and and cook for 7-9 minutes, until al-dente.
- Drain orzo, reserving one cup of the pasta water.
- Add drained orzo to a pan on medium heat.
- Add cream cheese, garlic, spinach, salt, pepper, and parmesan cheese, adding reserved pasta water as needed.
- Stir until the cheeses are melty and the orzo is all covered in creamy sauce.
- Serve and enjoy!

Steps:
- In a large saute pan heat up olive oil, add, chopped onions and cook until translucent; 3-4 minutes;
- Add spinach and cook until wilted, for about another 2 minutes;
- Add pasta and stir to coat it all with olive oil, onion and spinach mixture;
- Add stock, cover the pan and cook according for about 8 minutes until the pasta is cooked through;
- Turn off the heat, add cheese and black pepper, stir and taste. If needed add some salt. Serve immediately

SPINACH PARMESAN ORZO
Steps:
- In a wide saute pan, heat olive oil and add garlic, saute 1-2 minutes over medium heat until limp. Add roughly chopped spinach, salt and pepper, cover and cook 3-4 minutes, stirring occasionally. Place spinach mixture in blender and puree until smooth. Reserve.
- Bring a large pot of salted water to a rolling boil. Add orzo and stir gently. Cook 4-7 minutes checking occasionally. The pasta should be firm but cooked through. Coat a large flat pan with olive oil and have ready. Strain orzo through a large strainer shaking off excess water. Immediately spread hot pasta out on the tray for a minute or two to cool slightly and release as much steam from the orzo as possible. Toss orzo with spinach puree and grated cheese and serve immediately.

It's a snap! A 10 oz pakage of frozen chopped spinach , thawed and squeezed to drain, can be substituted for fresh spinach.

Steps:
- Melt butter in 3 quart saucepan over medium heat. Cook garlic, onion and carrot in butter about 2 minutes, stirring occasionally until carrot and onion are tender.
- Stir in broth, orzo and spinach.
- Heat to boiling; reduce heat. Cover and simmer 15 to 20 minutes, stirring occassionally until broth is absorbed.
- Stir in salt, pepper, Parmesan cheese and basil before serving.

- Heat olive oil in a medium-sized pot over medium heat. Add garlic, salt and pepper and saute for 1 minute until garlic is fragrant
- Add flour to form and stir for one minute. Add about 1/4 cup of the milk to the pot and whisk to work out any lumps. When lumps are gone, add the remaining milk and whisk to combine. Bring to a simmer and cook for about 8 minutes or until sauce is thickened.
- Add chopped spinach to sauce. Cook an additional 2 minutes or so until spinach is soft and dark. Remove sauce from heat and stir in parmesan cheese. When cheese has melted, add orzo and stir to combine. Serve with extra parmesan cheese and serve immediately. Enjoy!
