2 cups skim milk
2 tablespoons flour
1 cup parmesan cheese, shredded
2 teaspoons garlic

Steps:

  • Melt butter in small skillet or sauce pan over medium heat.
  • Whisk in flour to make a roux and gradually stir in milk.
  • Heat to a boil stirring frequently.
  • Reduce heat to thicken and add parmesan cheese and stir till melted.
  • Season with garlic, salt and pepper to taste.

1 cup Full Fat Milk
1 cup Chicken Broth (Use Veg Broth for Veg Version)

1/2 tsp Freshly Cracked Black pepper

Steps:

  • Heat butter in a pan.
  • Add garlic and fry for a few seconds.
  • Add flour and fry for a minute on low heat.
  • Add milk gradually and keep whisking continuously to make a lump free mixture.
  • Add chicken broth and cook until the sauce thickens.
  • Add parmesan cheese, garlic powder, salt and black pepper and cook until cheese melts.
  • Use the sauce as required.

FRESH PASTA WITH PARMESAN BUTTER SAUCE



Fresh Pasta with Parmesan Butter Sauce image

2 1/3 cups (300 grams) all-purpose flour, plus more for dusting
2/3 cup (100 grams) durum flour
4 eggs, room temperature, whisked
Water (if necessary)
Sea salt
1 cup vegetable stock
4 tablespoons butter
Freshly cracked black pepper
1 cup grated Parmigiano-Reggiano, plus more for garnish
Fresh parsley, mint or basil leaves, for garnish

Steps:

  • For the pasta: You can prepare the dough either using a stand mixer or by hand.
  • Using a stand mixer: In the bowl of a stand mixer fitted with the hook attachment, add the flours and mix to combine. Add the eggs and mix on medium speed until the dough come together and forms a ball. If the dough is dry, add a little water, 1 teaspoon at a time. Reduce the speed to low and mix until the dough is smooth, about 6 minutes. Wrap the dough with plastic wrap or a damp towel. Let it sit at room temperature for about 30 minutes.
  • By hand: On a wooden table or in a bowl, create a volcano shape with the flours. Then make a large hole in the middle. Break the eggs inside of the volcano. Whip the eggs with a fork to create a uniform color (until you can't see the difference between egg yolk and egg white). Then, little by little with the tips of your fork, start to incorporate the flour, starting from the center and moving out (never break or pass beyond the volcano). If the dough is dry, add a little water, 1 teaspoon at a time. When the mixture is uniform, use your hands and knead the dough until smooth. Wrap the dough with plastic wrap or a damp towel. Let it sit for about 30 minutes.
  • Flour the table and roll out the dough until very thin (until you can just see your hands through the dough). For pappardelle, roll the dough up into a log, lightly flouring the dough as you roll it. Slice into about 1-inch-thick slices. Unroll the slices and lay out the strips flat onto a floured sheet tray until ready to cook.
  • For the sauce: When ready to cook the pasta, bring a pot of water to a boil and add salt. Cook the pasta for 3 minutes.
  • Meanwhile, in a pan, bring the vegetable stock to a simmer. Add the butter and cooked pasta. Season it with freshly milled black pepper and salt. At the very end, add the Parmigiano-Reggiano little by little, stirring it in as you go. Garnish with fresh herbs and more cheese.

1/2 cup grated parmesan cheese (use a good grade of parmesan cheese, not the bottled stuff)
3/4 cup milk
1 dash ground nutmeg
1 dash pepper
cooked pasta or cooked mixed vegetables, to serve

Steps:

  • Microwave cream cheese, milk and parmesan cheese in 1-quart microwave safe container.
  • Microwave on MEDIUM (50%) 6-8 minutes or until sauce is smooth, stirring every 2 minutes.
  • Stir in seasonings.
  • Toss with hot cooked pasta or serve over cooked veggies.
  • You may want to add some garlic, extra pepper, or other spices because this is a very mild cheese sauce. I have used a couple of cloves of garlic sauted in a little butter, when I cook it on the stove, and really like it that way also.

1 tablespoon extra virgin olive oil
3 tablespoons butter
1 tablespoon chopped garlic (or minced)

1 -1 1/2 cup shredded parmesan cheese (grated will not work well, shredded works best!)

Steps:

  • Cook pasta according to directions.
  • When pasta is half way done, start with cream sauce in separate pot.
  • Add butter, olive oil and garlic and saute on med-low heat until butter is melted, then add red pepper flakes and saute.
  • Mix in flour until combined.
  • Add milk and chicken broth, bring to a boil, lower heat and stir until thickened.
  • Add parmesan and stir until melted.
  • Serve over pasta, and top with green onions.
  • Option: Add cooked, diced chicken.

2 Tbsp flour, all purpose variety
1/2 c chicken stock, not broth
1 c heavy cream
1/4 c parmesan cheese, freshly grated
white pepper, freshly ground, to taste
salt, kosher variety, freshly ground, to taste
OPTIONAL ITEMS (MORE ON VARIATIONS LATER)
skinned/seeded/chopped fresh tomatoes
cream cheese
baked garlic
freshly chopped herbs (basil, oregano, thyme, etc.)
a pinch of nutmeg during the holidays

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your ingredients.
  • 3. Add the butter to a saucepan over medium heat.
  • 4. If you are not using clarified butter, wait until the foaming subsides.
  • 5. Add the flour.
  • 6. Whisk until completely incorporated, about 1 quick minute.
  • 7. Chef's Note: Adding fat and flour together creates a roux. There are different stages of a roux; the longer your cook it, the browner it gets, and the nuttier it tastes. We want a light roux... no browning. So, 1 minute on the heat is about all you want.
  • 8. Slowly whisk in the chicken stock.
  • 9. Chef's Tip: Do not use hot chicken stock, or you will get lumps in your sauce.

  • 25. Chef's Note: When I use garlic in a sauce, I like to bake the garlic first. Place the garlic cloves on a piece of parchment paper and drizzle with a bit of olive oil. Pull the ends of the parchment paper together and twist together, like a beggar's pouch. Bake for about 20 minutes. Remove from the oven, and allow it to cool. Add a few pinches of salt, and then mash into a paste with the flat side of your kitchen knife.

Here's a quick and easy Parmesan cream sauce that makes pasta taste simply divine! It uses just a ingredients you might already have on hand.

1 tablespoon salted butter* (double all ingredients to serve with 1 pound pasta)
1 garlic clove, grated
1 tablespoon all purpose flour
1 cup 2% milk
1/4 teaspoon kosher salt
2 tablespoons shredded Parmesan cheese

Steps:

  • Measure out all ingredients in advance; the cooking process happens fast! If serving with pasta, cook 8 ounces pasta while you make the sauce.
  • In a small or medium saucepan over medium heat, melt the butter. Add the grated garlic and cook 30 seconds until fragrant but not browned.
  • Add the flour and whisk constantly for 1 minute to 90 seconds, until bubbly and golden. Do not overcook it: the flour can turn brown within a few seconds. Keep an eye on it!
  • Add a splash of milk and whisk it in: the sauce will instantly turn chunky. Constantly whisking, continue to add splashes of milk and whisk them in until the entire quantity is incorporated and the sauce is smooth.
  • Reduce the heat and whisk until the sauce thickens and no longer tastes like raw flour, about 5 minutes. Add the salt and Parmesan cheese. Taste and add a pinch or two more salt if desired.
  • If serving with pasta, drain the pasta, then add the sauce. Add a splash or two of milk to loosen the sauce and come to just the right creamy consistency. Taste and a few more pinches of salt, if necessary. (The sauce is best freshly made, so we don't recommend making it in advance).

  • Soak 1 pound cubed eggplant in warm salted water, about 15 minutes, then drain and squeeze dry. Season 1 cup flour with salt and pepper in a bowl. Beat 2 eggs with 1/2 cup milk in another bowl.
