Steps:
- Preheat oven to 425 degrees.
- Spray cookie sheet with non-stick cooking spray.
- Mix butter, Panko and Parmesan cheese together in a bowl. Lay Tilapia fillets on cookie sheet. Top with Parmesan mixture.
- Bake for 15-20 minutes.

PARMESAN CRUSTED TILAPIA
This is a very simple recipe that I have altered from a recipe I found some years ago. It's quick and easy, fresh and most of all, my picky husband and son love it! I serve it with Brown and Wild Rice and a vegetable (my fav is steamed broccoli). Note that I use Bookbinder's Breadcrumbs in this recipe, as they add a nice lemony flavor that really makes the dish. I've used plain breadcrumbs and it's just not as good. I've also found that using an enamel cast iron baking dish produces a superior result.

- Preheat oven to 425 degrees.
- Lightly spray a glass or enamel baking dish to assist in cleanup.
- Wash and pat dry 1-2 pounds of Tilapia filets, and place in the dish side by side.
- Season fish with any desired seasonings (salt, pepper, other spice blends). In a separate bowl, measure grated parmesan, breadcrumbs, and enough olive oil to make a moist crumble.
- Spoon over the top of the fish to cover the filets.
- Bake in oven for 15 minutes or until fish flakes easily.

- Spray baking pan(s) with nonstick cooking spray.
- Preheat oven to 400.
- Place beaten eggs in a shallow dish. Stir in mayo and lemon juice. Stir until well-combined.
- In a separate shallow dish, stir together breadcrumbs, parmesan cheese, and the herbs/spices. Mix well.
- Dip each fillet into the egg/mayo/lemon juice mixture (coat both sides). Let excess drip off, then dip into breadcrumb/cheese mixture to coat both sides.
- Place coated fillets in prepared baking pan(s). Bake, uncovered at 400 for 20-30 minutes or until fish is white and flaky inside.

- Thaw and wash tilapia fillets if frozen. Pat dry on paper towels.
- Combine crumbs, parmesan, italian seasoning and garlic powder on a plate, mixing well.
- On a different plate, pour 1 tbsp lemon juice.
- Working 1 at a time, place a fillet on the plate in the lemon juice, sprinkle with desired amount of kosher salt (be careful about how much salt is in your parmesan, crumbs, and other seasonings), black pepper, and garlic powder. Turn the fillet over in the lemon juice and sprinkle seasoning on the other side.
- Dredge fillet in the parmesan mixture patting it all over to coat.
- Place in an oiled baking dish, repeat with remaining fillets.
- Sprinkle a little lemon juice over fillets and drizzle or spray them lightly with olive oil.
- Bake at 425ºF for about 20 minutes or until they easily flake with a fork and edges are browning (you can sprinkle some more parmesan on top if desired). You can also bake these faster at 450ºF.
PESTO CRUSTED TILAPIA
A couple of weeks ago at work, we had this AMAZING pesto crusted salmon left over from a meeting. I have wanted to recreate the recipe ever since, and decided to give it a try with tilapia. I'm sure you could use this topping on any fish and it would be fantastic -- I'm dying to try it with a nice big piece of salmon. It is such an easy recipe and I'm sure it would be even better with homemade pesto.

- Preheat oven to 375 degrees.
- Cover a baking sheet with foil and coat with non-stick cooking spray.
- Place fish fillets on baking sheet and sprinkle with black pepper. No salt is needed as pesto and parmesan cheese are both pretty salty.
- In a small bowl, combine pesto, breadcrumbs, and parmesan cheese (hands or a fork will do).
- Divide the topping evenly over the fish fillets, spreading with your fingers and pressing into the fish.
- Bake for 10 minutes at 375 degrees, then switch to broil to crisp up the crust for the last 2-5 minutes.
- If the middle of the fillet flakes with a fork and is completely opaque, it's time to dig in!
- Serve with steamed broccoli and brown rice pilaf for a healthy dinner.

- drizzle 9x9 glass pan with olive oil.
- place filets in pan and flip to coat in oil.
- apply garlic salt, pepper, and basil to each filet.
- carefully pack cheese on top of filets. try to not get on bottom of pan as it will burn.
- bake for ~5-10 min until fish flakes with fork, and cheese is lightly browned.
