FLAVORED CHEESE BALLS



Flavored Cheese Balls image

Make all 3 flavors of cheese balls or prepare just 1 or 2, adjusting the ingredients accordingly.

Yield Makes three 4-inch cheese balls

Number Of Ingredients 20

1/2 cup (1 stick) unsalted butter, softened
3 packages cream cheese (8 ounces each)
2 tablespoons fresh lemon juice
1/2 teaspoon Worcestershire sauce
5 dashes hot sauce (such as Tabasco)
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground white pepper
8 ounces sharp orange cheddar cheese, finely shredded
2 tablespoons store-bought chutney
3/4 cup dried cranberries, finely chopped
Water crackers, for serving
6 ounces Roquefort cheese
1 shallot, minced (about 1 tablespoon)
2 teaspoons brandy (optional)
1 cup toasted walnuts, coarsely chopped
Vegetable chips (such as Terra Chips Sweets & Beets), for serving
8 ounces goat cheese
2 tablespoons finely chopped scallions
1/3 cup fresh curly-leaf parsley, finely chopped
1 English cucumber, cut into 1/8-inch-thick slices, for serving

Steps:

  • Put butter, cream cheese, lemon juice, Worcestershire sauce, hot sauce, salt, and pepper into the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until combined. Divide equally among 3 medium bowls.
  • Stir cheddar cheese and chutney with base mixture in the first bowl. Form into a ball. Roll cheese ball in cranberries to coat before serving. Serve with crackers.
  • Stir blue cheese and shallot with base mixture in second bowl; add brandy, if desired. Form into a ball. Roll in walnuts to coat before serving. Serve with chips.
  • Stir goat cheese and scallions with base mixture in remaining bowl. Form into a ball. Roll in parsley to coat before serving. Serve with cucumber slices.

1 stick unsalted butter, room temperature
3 (8 ounce) blocks cream cheese, room temperature
2 tablespoons lemon juice
5 dashes hot sauce
1/2 teaspoon kosher salt
1/3 cheese ball base
8 ounces finely shredded cranberry sharp cheddar cheese (regular sharp can be used as well)
2 tablespoons whole berry cranberry sauce
1/3 cheese ball base (recipe above)
6 ounces gorgonzola cheese
1 shallot, minced
1 teaspoon finely chopped rosemary
2 teaspoons white wine
1 cup toasted walnuts, chopped
1/3 cheese ball base (recipe above)
6 ounces soft Brie cheese
1 Granny Smith apples, peeled, cored and cut into small cubes
1 teaspoon fresh thyme leaves
1 cup toasted pecans, chopped

Steps:

  • For cheese ball base: Add all ingredients to the bowl of an electric mixer and mix together until smooth. Equally divide mixture into three portions and move each portion to a small bowl. For cranberry and sharp cheese ball: Mix together cheese ball base, shredded cheese and cranberry sauce. Once combined shape into a ball and place in the refrigerator. Refrigerate until ready to serve. Serve with crackers, fruit slices, vegetables, vegetable chips or pita chips. For walnut and Gorgonzola cheese ball: Mix together cheese ball base, gorgonzola cheese, shallot, rosemary and white wine. Once combined shape into a ball and place in the refrigerator. Let sit for about 30 minutes to harden, roll in walnuts and refrigerate until ready to serve. Serve with crackers, fruit slices, vegetables, vegetable chips or pita chips. For apple and Brie cheese ball: Mix together cheese ball base, Brie cheese, apple and thyme. Once combined shape into a ball and place in the refrigerator. Let sit for about 30 minutes to harden, roll in pecans and refrigerate until ready to serve. Serve with crackers, fruit slices, vegetables, vegetable chips or pita chips.

1 pound cream cheese, at room temperature
8 ounces sharp cheddar cheese, finely grated (about 2 1/2 cups)
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
Ground pepper
1 cup finely chopped pecans

Steps:

  • In a large bowl, with an electric mixer, beat cream cheese with cheddar, mustard, Worcestershire sauce, and a generous pinch of pepper until well combined. Mix in 1/4 cup pecans. Cover cheese mixture with plastic wrap, and chill at least 2 1/2 hours or up to overnight.
  • Divide the cheese mixture in half, and shape each half into a ball. Spread remaining 3/4 cup pecans on a plate, and roll balls in pecans to coat completely, pressing nuts to adhere. Serve chilled.

8 ounces orange sharp cheddar cheese, finely shredded
2 tablespoons chutney (I used bottled mango chutney from grocery store)
3/4 cup dried cranberries, finely chopped

2 teaspoons brandy (optional)
1 cup toasted walnuts, coarsely chopped
8 ounces goat cheese
2 tablespoons finely chopped scallions

Every Christmas, I make these cheese balls for an annual get-together. They aren't only for the holidays, however. You'll find they freeze well and last for a week in the refrigerator. I have even re-formed leftovers into smaller balls. I do my cooking in an 1892 home we're fixing up (my husband's a renovations contractor). We have a son, 3, and a baby daughter born last spring.

Number Of Ingredients 11

1 package (8 ounces) cream cheese, softened
4 cups shredded cheddar cheese, room temperature
2 tablespoons 2% milk
2 tablespoons finely chopped onion
2 tablespoons Worcestershire sauce
Coarsely ground pepper
1/2 cup (2 ounces) crumbled blue cheese
Minced fresh parsley
1/4 teaspoon garlic powder
Finely chopped pecans
Assorted crackers

Steps:

  • In a large bowl, beat the cream cheese, cheddar cheese, milk, onion and Worcestershire sauce until fluffy. If a smoother spread is desired, process in a food processor until creamy. , Divide into thirds (about 1 cup each). Shape first portion into a ball; roll in pepper. Add the blue cheese to the second portion. Shape into a ball; roll in parsley. Add garlic powder to the remaining portion. Shape into a ball; roll in nuts. , Cover and refrigerate. Let stand at room temperature 1 hour before serving. Serve with crackers.

1 (8 ounce) package cream cheese, softened
1 lb shredded cheddar cheese
2 tablespoons milk
1/8 teaspoon black pepper
3 tablespoons Worcestershire sauce
4 ounces blue cheese, crumbled
2 cloves garlic, minced
3/4 cup finely chopped nuts (walnuts or pecans)

Steps:

  • Mix all ingredients thoroughly.
  • Divide mixture in half and place each half on a sheet of plastic wrap.
  • Draw up the sides of the plastic wrap tightly around each ball and firmly secure (a twistie tie or rubber band works well).
  • Refrigerate 6-8 hours or until firm.
  • Remove plastic wrap and roll in nuts before serving (or may roll in chopped parsley if someone is allergic to nuts).
