Steps:
- Make Classic Shortbread dough (recipe follows), adding 1/2 cup parmesan, 1 tablespoon lemon zest and 2 teaspoons pepper with the butter. Roll into tiny balls, then bake 8 to 12 minutes at 300 degrees.
- Classic Shortbread dough: Beat 2 sticks butter, 1/4 cup granulated sugar and 1/2 cup confectioners' sugar until fluffy. Whisk 2 cups flour and 1 teaspoon salt, then stir into the butter mixture.

ITALIAN PARMESAN MEATBALLS
Cheesy meatballs are simmered in marinara sauce, finished with fresh basil and served with your favorite pasta shape.

Steps:
- Grate the bread on the large holes of a box grater into coarse crumbs and put into a large bowl along with the milk and set aside for 5 minutes to allow the bread to soak up the milk. Add the meatloaf mix, Parmesan, parsley, onion, garlic, egg, 1 teaspoon salt and a few grinds of pepper and mix until just combined. Shape the meat mixture into 18 meatballs. Refrigerate for at least 1 hour or up to overnight.
- Bring the marinara sauce to a very light simmer in a large Dutch oven or large wide pot. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Working in batches, add half the meatballs and cook, turning occasionally until browned on all sides, about 6 minutes. Transfer the meatballs to the marinara sauce as they are browned. Heat the remaining 2 tablespoons oil in the skillet and repeat with the remaining meatballs.
- Bring the sauce to a boil, lower the heat, and simmer, covered, gently stirring occasionally until the meatballs are cooked through, about 15 minutes. Remove from the heat and stir in the basil. Adjust the seasoning with additional salt and pepper. Serve over hot pasta.

- Preheat oven to 325.
- Process slice of bread in food processor for fresh bread crumbs.
- Combine all ingredients including bread crumbs in mixing bowl.
- Shape into balls and place on baking sheet.
- Make for 20 - 25 minutes until done.
- Add to spaghetti sauce of your choice and serve over pasta or on sandwich rolls.
PISTACHIO ENERGY BALLS
These healthy snacks are made for pistachio lovers. A quick pistachio butter is loaded with dates, oats, honey and coconut, then rolled in chopped pistachio for a delicious nutty crunch.

- Preheat the oven to 375˚ F. Spread the pistachios on a baking sheet and bake until lightly toasted, 8 to 10 minutes. Immediately transfer to a food processor and pulse until finely chopped. Remove and set aside 2 tablespoons of the chopped pistachios for coating.
- Add the vegetable oil and a big pinch of salt to the remaining pistachios in the food processor. Process, scraping down the sides as needed, until the pistachios start to clump, then continue processing until creamy and smooth, up to 10 minutes total.
- Scrape the pistachio mixture into a medium bowl and add the oats, dates, coconut and honey. Beat with a mixer on medium-high speed until combined.
- Roll the mixture into 3/4- to 1-inch balls (you should get 12 to 15 balls). Roll in the reserved chopped pistachios. Set on a plate and refrigerate until firm, about 30 minutes.
LEMON PARMESAN RISOTTO BALLS
Steps:
- For the risotto: Heat the vegetable stock in a pot next to the risotto pot. Keep a ladle in it to use.
- Saute the onion in the olive oil until wilted, add in the garlic and cook for another minute or so. Add in the Arborio rice and saute for a few minutes. Add in just enough stock to cover the rice and stir frequently.
- As the rice absorbs the stock add the remainder of the stock and let the risotto cook through. (16 to 20 minutes). If it is not tender add some hot water until the risotto is tender.
- When cooked through add in the lemon juice, lemon peel, Parmesan, mozzarella and half-and-half. Mix thoroughly. Let it cool for 1 hour or so.
- To fry the balls: Heat the oil to 375 degrees F in a large pot. Place the panko bread crumbs in a shallow dish. Using a small spoon or small ice cream scooper form the risotto into 1-inch balls and roll them in the bread crumbs. Set aside until complete. Place a few balls in the hot oil at a time. Cook the balls for 2 to 3 minutes. Drain them on paper towels. Sprinkle with Parmesan and serve.
LEMON PARMESAN RISOTTO BALLS
Saw these being made on foodnetwork.tv and they looked very interesting. Inactive cooling time is an hour.

- RISOTTO:.

- Saute the onion in the olive oil until wilted, add the garlic and cook for another minute or so.
- Add in the Arborio rice and saute for a few minutes, making sure all the rice pieces are toasted slightly.
- Add in just enough stock to cover the rice and stir frequently.

- Allow to cool for an hour or so.
- FRY THE BALLS:.
- Heat the oil to 375F in a large pot.
- Place the panko bread crumbs in a shallow dish.
- Using a small spoon or small ice cream scooper form the risotto into 1" balls and roll them in the bread crumbs.
- Set aside until complete.
- Place a few balls in the hot oil at a time.
- Cook the balls for 2-3 minutes.
- Drain them on paper towels.
- Sprinkle with Parmesan and serve.
- *Use with a marinara type sauce for dipping.

CHICKEN PARMESAN MEATBALLS
My husband got this recipe from a co-worker who raved about how good it was. We made it with a pound of ground turkey and 2 chicken breasts ground in the food processor. We loved it. A raw Tuscan kale salad that has been shredded and tossed with shallots, Pecorino, olive oil, tsp of lemon juice, salt, and pepper goes great with this dish. - Preheat oven to 400°F, setting rack to upper third part of oven.
- In a large bowl, using your hands, gently mix together first 11 ingredients.
- Shape into lacrosse-ball size balls (that would be somewhere between golf and tennis) and place a few inches from each other on a foil-lined baking sheet.
- In a small bowl, mix one spoonful of your pizza sauce with olive oil. Brush this mixture on top of each meatball. Bake for 20 - 25 minutes.
- Remove meatballs from oven, spoon some sauce on top of each meatball, and cover each with a slice of cheese.
- Broil another 3 to 5 minutes until cheese is bubbly and golden.
- Heat remaining sauce in a small saucepan.
- Serve meatballs with a dollop of sauce.

- Mix 1 1/4 cups of the flour, the sugar, cheese, salt, pepper and yeast in large bowl. Beat in water, egg whites and oil until smooth. Stir in remaining flour until smooth. Scrape batter from side of bowl.
- Cover and let rise in warm place about 30 minutes or until doubled in size.
- Spray 12 medium muffin cups with nonstick cooking spray. Stir down batter, beating about 25 strokes.
- Divide batter among muffin cups. Let rise uncovered 20-30 minutes or until batter rounds over tops of cups.
- Bake in preheated 400 degree oven for 15-20 minutes or till golden brown.

- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain.

- In a medium bowl, mix rice, spinach, cheese, lemon juice, salt, pepper and 2 eggs.
- Shape mixture into 1 inch balls.
- In a pie plate, using a fork, beat 1 tbls water with remaining egg.
- Dip rice balls in egg, then into bread crumbs to coat evenly.
- In a 5 quart Dutch oven, heat 3/4 inch of oil over medium heat.
