SKILLET-ROASTED AND CREAMED MUSHROOMS AND ONIONS
Talk about umami! Whenever mushrooms, onions, and garlic are cooking, that's when everybody in the house is salivating for dinner, because the scent is so intoxicating. This particular dish is so crave-worthy, you might want to make a double batch!

Steps:
- Skillet-roast the garlic cloves: Heat a large skillet over medium heat and add the unpeeled garlic cloves. Cook, stirring occasionally, so that the skin gets charred on all sides, 15 to 20 minutes. Remove from the heat and wrap the garlic cloves in a clean kitchen towel for a few minutes to cool and soften. Peel off the skins and set aside.
- Heat the same skillet over medium-high heat and add the mushrooms to the dry skillet. Cook, stirring occasionally, until the mushrooms have released their natural juices and begin to soften and brown, about 10 minutes. Remove the mushrooms from the skillet and set aside.
- Melt the butter in the same skillet, then add the thawed pearl onions and the peeled skillet-roasted garlic cloves. Toss to coat completely in the butter.
- Cook, stirring occasionally, over medium-high heat until the onions begin to caramelize and turn golden, 5 to 7 minutes.
- Sprinkle the sugar and 1 teaspoon of salt over the top of the onions and garlic, then add the vegetable stock, vinegar and thyme sprigs, stirring often and scraping the browned bits from the bottom of the pan. Then add the reserved mushrooms back into the pan, tossing with the onions and garlic.
- Simmer over medium-high heat until the liquid begins to thicken, 2 to 3 minutes, then stir in the cream, nutmeg, and Parmesan to coat and bring to a simmer so that the sauce warms through completely, 2 minutes. Add salt and pepper to taste before serving.
SCRAMBLED EGGS WITH MUSHROOMS, ONIONS AND PARMESAN CHEESE
I'm not sure if I came up with this on my own or if it's a common recipe but I had a craving for eggs with cheese and mushrooms last night, when I started to make it and get the ingredients, I discovered to my dismay that we were totally out of cheese which is quite unusal in my house, anyway, I sauted some sliced fresh muchrooms and chopped onions in butter, added some parmesan cheese, let it saute for about 15 minutes, then scrambled eggs and added it to the other ingredients....was pleasantly surprised, it came out very tasty and I will be making it again, DH an DS loved it.

Steps:
- Heat saucepan, Add butter till it's melted.
- Add mushrooms and onions, stir well.
- Add Parmesan cheese.
- Saute on low heat for about 15 minutes.
- In a separate bowl, scramble egg and milk.
- Add egg and milk mixture to other ingredients.
- Scramble as you would if you were making plain scrambled eggs.

MUSHROOM AND PARMESAN ORZO
This side dish is easy to make and really tasty,, everyone loves it! Try to use a good-quality Parmesan or romano cheese for this, the common store-bought brand that you buy off the shelves will not do this recipe any justice. The pasta will thicken up upon sitting so it is best served right away, or shortly after cooking. I have even added in toasted sliced almonds to the pilaf after cooking. If you want a creamier textured dish then add in another 1/2 cup broth. It is important to lightly brown the orzo with the onions and garlic in butter before adding in the broth this really improves the flavor. You will love this!

Steps:
- In a saucepan, melt butter and saute the onion and garlic for about 2 minutes.
- Add in the orzo to the onion/garlic mixture, and saute the orzo until golden brown (about 6-7 minutes, could take more or less time to brown).
- Slowly add in the broth, lemon juice and mushrooms; stir to combine.
- Simmer covered on low heat for about 15-20 minutes, or until pasta is JUST firm-tender and most of the liquid is absorbed (do not overcook the orzo!).
- Remove from heat and add/mix in the Parmesan cheese, salt and pepper; toss to combine.
- Transfer to a large bowl and serve immediately.

CREAMY PARMESAN MUSHROOM CHICKEN
If you prefer a lot of sauce, then just double the ingredients, a can of sliced drained mushrooms may be used in place of fresh, but fresh is always better to use.

Steps:
- Prepare a large serving dish or plate (make certain that it has high sides to hold the sauce from spilling).
- Season chicken with salt and pepper.
- Brown and cook the chicken breasts in oil on both sides until juices run clear and chicken is cooked through.
- Place the cooked chicken in the serving dish.
- In the same frypan, saute the onions, garlic and fresh mushrooms in 1/4 cup butter until onions are soft (about 4-5 minutes).
- Sprinkle with flour; stir until coated (about 1 minute).
- Add in cream or milk (if using) bring to a boil simmer for about 2 minutes or until thickened.
- Remove from heat.
- Stir in 1/2 cup Parmesan cheese.
- And pour the sauce over chicken in serving dish.
- Sprinkle with more grated Parmesan cheese before serving.
- Serve this on top of cooked linguini or spaghetti pasta.

This is a combination that has so many uses...and I'm sure your creative mind will come up with lots of your own! This may seem like sooo much in your skillet, but it cooks down.

Steps:
- Cut onion into large dice.
- Heat oil in large skillet over medium-high heat. When oil starts to sizzle, add onions.
- Cook until edges start to brown. Stir frequently.
- While onion cooks, cut tomatoes and mushrooms into large dice. Cut green onions into small dice.
- Rough chop basil and then bruise slightly.
- When onion is ready, add rest of vegetables.
- Combine well and lower heat to medium.
- Cook 5 minutes, stir occasionally.
- Add water, puree, garlic, pepper and salt (or Mrs. Dash).
- Combine very well. Lower heat to simmer. Cook another 5-6 minutes or until mushrooms start to give off their liquid and and start to soften.
- DO NOT COVER.
- Remove from heat. You want this dish to have consistency and not become mushy. This will not have alot of liquid when done.
- This can be divided, and packaged up for the freezer. It has a very long freezer shelf life.
- This makes a very good starter to a tomato sauce. It makes a very different pasta sauce when you add some sour cream or plain yogurt. It is wonderful for soups and stews. I use it mixed with some yogurt to top my salmon patties. It's yummy over baked potato or stirred into a bean dish.
- * Save those stems! Clean them, cut off the very bottom and then cut the rest of the stems into small pieces. Put into a freezer container, just cover with water, add scant pinch of salt, seal and freeze. You can add to this container at any time, just make sure the the stems are covered by water. Now they are ready, water and all to use in a soup or stew!
- ** I like to use a combo of fresh ground peppers, such as pink, and green along with the black. Nowadays, you can buy that type of combo in a handy small grinder in your supermarket.
