ITALIAN PARMESAN MEATBALLS



Italian Parmesan Meatballs image

Cheesy meatballs are simmered in marinara sauce, finished with fresh basil and served with your favorite pasta shape.

2 slices stale white sandwich bread, crusts removed
1/3 cup milk
1 1/2 pounds meatloaf mix (beef, pork and veal or turkey)
2/3 cup grated Parmesan
1/4 cup chopped fresh flat-leaf parsley
1/2 onion, grated
2 garlic cloves, minced
1 large egg, beaten
Kosher salt and freshly ground black pepper
6 cups prepared marinara sauce
4 tablespoons olive oil
1/2 cup lightly packed fresh basil leaves, torn
Hot cooked pasta

Steps:

  • Grate the bread on the large holes of a box grater into coarse crumbs and put into a large bowl along with the milk and set aside for 5 minutes to allow the bread to soak up the milk. Add the meatloaf mix, Parmesan, parsley, onion, garlic, egg, 1 teaspoon salt and a few grinds of pepper and mix until just combined. Shape the meat mixture into 18 meatballs. Refrigerate for at least 1 hour or up to overnight.
  • Bring the marinara sauce to a very light simmer in a large Dutch oven or large wide pot. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Working in batches, add half the meatballs and cook, turning occasionally until browned on all sides, about 6 minutes. Transfer the meatballs to the marinara sauce as they are browned. Heat the remaining 2 tablespoons oil in the skillet and repeat with the remaining meatballs.
  • Bring the sauce to a boil, lower the heat, and simmer, covered, gently stirring occasionally until the meatballs are cooked through, about 15 minutes. Remove from the heat and stir in the basil. Adjust the seasoning with additional salt and pepper. Serve over hot pasta.

3/4 pound spaghetti
1 3/4 cups plain dried breadcrumbs, divided
1/2 cup whole milk
1 pound ground white-meat chicken
2 cups vegetable oil
3 ounces fresh mozzarella, cut into 16 pieces
3 cups marinara, warmed
chopped fresh parsley, for serving

Steps:

  • Preheat oven to 350 degrees. In a large pot of boiling salted water, cook pasta according to package instructions; drain.
  • Meanwhile, in a large bowl, combine 1/2 cup breadcrumbs, milk, 1 teaspoon salt, and 1/4 teaspoon pepper. Add chicken and stir until just combined (do not overmix). In a medium straight-sided skillet, heat oil over medium until it registers 350 degrees on a deep-fry thermometer.
  • Place remaining 1 1/4 cups breadcrumbs in a shallow dish. Divide chicken mixture into 4 portions and flatten each into a disk. Place 4 mozzarella pieces in center of each, then form disk into a ball around cheese. Coat balls in breadcrumbs and fry until golden brown, 5 minutes, turning once. With a slotted spoon, transfer meatballs to a paper-towel-lined rimmed baking sheet and let drain 1 minute.
  • Discard paper towels and transfer sheet to oven. Bake meatballs until chicken is cooked through, about 14 minutes. Divide pasta among four bowls and top each with marinara and a meatball. Sprinkle with parsley.

2 cups shredded mozzarella cheese (8 ounces)
1/2 cup grated Parmesan cheese (2 ounces)
1/2 cup crushed pork rinds or almond meal

2 cloves garlic, minced
1 1/2 pounds ground chicken
4 tablespoons olive oil, divided

1 (14.5-ounce) can whole peeled plum (Italian) tomatoes, undrained

Steps:

  • In a medium bowl, combine the egg, 1 cup of the mozzarella, the Parmesan, pork rinds, chopped basil, and garlic. Add the chicken and mix gently using your hands to combine. Form into 28 meatballs about 1 1/2 inches in diameter.
  • Select SAUTÉ on the Instant Pot. When the pot is hot, add 2 tablespoons of the olive oil. Add about half of the meatballs to the hot oil and cook until browned on all sides, turning the meatballs as needed, 6 to 8 minutes. Transfer the meatballs to a plate. Repeat with the remaining meatballs and 2 tablespoons olive oil.
  • Add the tomato paste to the pot. Cook and stir for 1 minute. Add the canned tomatoes and their juice, breaking them apart as you do so. Stir in the dried basil and garlic powder. Return the meatballs to the pot. Select CANCEL.
  • Secure the lid on the pot and close the pressure-release valve. Set the pot to HIGH pressure for 10 minutes. At the end of the cooking time, use a natural release to depressurize.
  • Top the meatballs with the remaining 1 cup mozzarella and let stand until melted before serving with the basil leaves.

1/3 cup milk
1 pound ground pork or veal
1 pound ground beef
1/2 cup finely chopped onion
1 1/4 cups finely grated Parmesan, preferably Parmigiano-Reggiano
1/4 cup chopped parsley
2 garlic cloves, finely chopped
1 tablespoon kosher salt
1 teaspoon black pepper
Olive oil, for frying
5 cups Simple Tomato Sauce (see recipe)
1/2 pound fresh mozzarella, torn into bite-sized pieces

Steps:

  • Heat oven to 400. Remove crusts from bread slices and discard. Tear remaining bread into small pieces and place in a small bowl. Pour milk over bread and let stand until liquid is almost absorbed, 5 to 10 minutes.
  • In a large bowl, combine pork or veal, beef, soaked bread, onion, 1/4 cup Parmesan, the parsley, the garlic, the salt and the pepper until just combined. Form meat into golf-ball-size rounds. (You should have about 25 meatballs.) Meatballs can be formed up to 24 hours ahead, covered and refrigerated before frying.
  • Fill a large skillet with 1/4-inch oil. Place over medium-high heat. When oil is hot, fry meatballs in batches, turning occasionally, until golden brown, 8 to 10 minutes per batch. Transfer fried meatballs to a paper towel-lined plate.
  • Spoon a thin layer of sauce over the bottom of a 9-by-13-inch baking pan. Sprinkle one-third of the Parmesan over sauce. Scatter half the meatballs over the Parmesan and top with half the mozzarella pieces. Top with half of the remaining sauce, sprinkle with another third of the Parmesan, and repeat layering, ending with a final layer of sauce and Parmesan.
  • Transfer pan to oven and bake until cheese is golden and casserole is bubbling, about 40 minutes. Let cool a few minutes before serving.

1 (26 ounce) jar marinara sauce

Steps:

  • In a large bowl, mix together the chicken, egg, Parmesan cheese, breadcrumbs, garlic powder, Italian seasonings, salt, pepper, and red pepper. Roll into 1 1/2 inch balls.
  • Heat 2 tablespoons oil in a large oven-safe skillet over medium heat. Roll half of the meatballs in Panko breadcrumbs and brown them on each side in the oil. Add more oil if needed as you go. Remove from the pan and set aside. Wipe out any Panko breadcrumbs and heat the remaining 2 tablespoons of olive oil over medium heat. Roll the remaining meatballs in Panko breadcrumbs and brown on each side. Remove from pan.
  • Preheat oven to 350 degrees. Pour marinara sauce in the oven-safe skillet (or any baking dish will do) and place the meatballs on top of the sauce. Bake meatballs for 20 minutes sprinkling the mozzarella on top for the last 5 minutes of baking. Garnish with basil and serve over pasta.

1 (15-ounce) can tomato sauce

1/2 teaspoon crushed red pepper flakes
22 Ritz crackers
1 large egg, (lightly beaten)
5 ounces Parmesan cheese, grated (divided)
2 teaspoons garlic powder
1 teaspoon pepper
2 pounds ground chicken
1 (8-ounce) package fresh mozzarella cheese, (cut into thin slices)
1 cup Panko crumbs
1/4 cup torn fresh basil leave

Steps:

  • In a large saucepan, heat 3 tablespoons olive oil over medium heat. Add garlic and cook 1 minute.
  • Add crushed tomatoes, tomato sauce, 1/4 teaspoon dried oregano, 1/4 teaspoon salt, and crushed red pepper flakes.
  • Simmer sauce for 10 to 15 minutes, stirring occasionally. Remove from heat and set aside.
  • Preheat oven to 350 degrees and grease a 9x13-inch baking pan.
  • Place crackers in a large zip-top bag and crush until finely crushed.
  • In a large bowl, combine crackers crumbs and egg. Stir to mix.
  • Set aside 1/2 cup of the parmesan cheese and add the rest to the large bowl with the cracker mixture. Also add the garlic powder, pepper, remaining oregano, 1 teaspoon of salt and the ground chicken.
  • Mix with your hands until evenly combined. Shape mixture into 18 meatballs. You can use a 1/4 cup measuring cup to help you get them the right size.
  • Place meatballs in prepared baking dish. Pour sauce over them.
  • Arrange the mozzarella cheese on top of the meatballs.
  • Bake for 40 to 45 minutes.
  • While the meatballs bake, stir together the remaining 2 tablespoons of oil, the panko crumbs and remaining 1/4 teaspoon of salt in a small bowl.
  • Heat a small nonstick skillet over medium heat. Add panko crumb mixture and cook, stirring frequently, until golden.
  • When meatballs are done cooking, sprinkle the remaining Parmesan cheese on them and then sprinkle on the Panko crumb mixture.
  • Sprinkle with basil and serve.

2 ounces Parmesan cheese, grated with a Microplane grater (about 1¼ cups), divided
2 tablespoons olive oil
⅓ cup dry red wine
1 (24-oz.) jar marinara sauce
6 ounces low-moisture part-skim mozzarella cheese, shredded (about 1½ cups)
Garlic bread, cooked spaghetti, or zucchini "noodles," for serving

Steps:

  • Combine eggs, chicken, prosciutto, panko, basil, salt, black pepper, crushed red pepper, garlic, and 1 ounce of the Parmesan in a large bowl. Gently mix with your hands to thoroughly combine, taking care not to overmix. Shape into 12 (1¾-inch) balls (about 2 ounces each).

Steps:

  • Preheat the oven to 375°F.
  • In a large mixing bowl, combine the ground chicken, ½ cup Italian breadcrumbs, 1 egg, and minced garlic. Mix well. Form into golf ball sized balls, place onto a plate, and freeze for 5 minutes.
  • Meanwhile, heat 2 inches of vegetable oil in a deep skillet or wok to 350°F.
  • Prepare a dredging station. Add flour to one bowl, whisk the 2 remaining eggs in the second bowl, and combine the Panko breadcrumbs, ½ cup of Italian breadcrumbs, garlic powder, and Italian seasoning in the third bowl.

  • Working in batches of 5-6 meatballs at a time, fry the meatballs for 6 minutes. Add the meatballs to the hot oil, flipping them over halfway cooking to evenly brown.
  • Arrange the meatballs in a casserole dish. Pour marinara sauce over the meatballs and top with sliced mozzarella.
  • Bake for 8 minutes, or until the cheese is melted.
