GARLIC-PARMESAN CHICKEN WINGS
This buttery garlic-parmesan sauce is so simple and tastes sinfully delicious. A friend baked plain chicken wings for her Super Bowl party but realized at the last minute that she didn't have Tabasco sauce on hand to make Buffalo sauce. She called in a panic, and this is the sauce I advised. All her party guests raved about it. Some reviewers have stated these wings are as good as or better than Wingstop's. We don't have a Wingstop in our area, so I'll take their word for it! (Note: In response to reviewers' recommendations to decrease the amount of butter, this recipe has been adjusted from 1/2 cup to 1/4 cup of butter. Thanks!)

GARLIC AND PARMESAN CHICKEN WINGS
The trick to keeping these oven-baked chicken wings crispy, is parboiling the wings in a flavorful liquid, which helps season the chicken and produce a surface texture in the oven that your guests will swear came straight out of a deep fryer.

BUFFALO WILD WINGS PARMESAN GARLIC WINGS RECIPE
The Buffalo Wild Wings parmesan garlic wings are crispy, deep-fried wings that are covered in a creamy and cheesy sauce. The parmesan garlic wings are actually a make-ahead recipe as you have to season and chill the wings overnight.

Steps:
- Take a resealable bag and add the wings, oil, salt, and pepper to it. Seal the bag and shake it for a minute so that the wings get covered with the marination.
- Place the wings in the refrigerator to chill overnight. Then, take them out of the bag and pat them dry.
- Pour canola oil in a large skillet so it covers about an inch of it. Heat the oil to a temperature of 375℉.
- Gently place the wings in the oil and fry them for 4-5 minutes. Take them out and let them rest for a couple of minutes. Then, refry them at the same temperature for another 5 minutes.
- Take them out and drain the excess oil using a paper towel.
- Cut the bottom end of the garlic head, drizzle some olive oil over it, and wrap the garlic head in aluminum foil. Then, place the garlic in the oven which is heated to a temperature of 350℉. Roast the garlic for about 30 minutes.
- After that, take the foil-wrapped garlic out of the oven and unwrap it.
- Squeeze the softened garlic out in a food processor jar. Then, add the parmesan and mayonnaise to the jar. Pour the vinegar and lemon juice into the jar. Also, add the salt, pepper, red pepper flakes, basil, marjoram, oregano, and thyme to the jar.
- Close the jar and pulse it a few times until everything is well mixed. Refrigerate the sauce for a couple of hours before using it.
- Place the wings in a large mixing bowl and pour the parmesan garlic sauce over them. Toss them well until all of the wings get coated with the sauce completely.
- Your delicious Buffalo Wild Wings Parmesan Garlic wings are ready!

Steps:
- Grate the zest of 1 lemon and set aside; juice both lemons. Combine the garlic and olive oil in a large microwave-safe bowl and microwave until the garlic starts sizzling, 1 to 2 minutes; let cool. Add the lemon juice, herb sprigs, 1 teaspoon each salt and pepper, and the chicken wings. Using your hands, rub the wings with the oil mixture; firmly press the wings down, making sure they are covered with some of the herbs and garlic. Cover and refrigerate at least 4 hours or overnight, stirring once or twice.
- Meanwhile, pulse the butter, basil leaves, lemon zest and 1/2 teaspoon each salt and pepper in a mini food processor until combined. Cover and refrigerate until ready to use.
- Preheat a grill to medium high and prepare for indirect grilling: On a charcoal grill, bank the coals to one side; on a gas grill, turn off half the burners. Remove the basil butter from the refrigerator. Remove the wings from the marinade. Brush the grill grates with olive oil and place the wings on the cooler side of the grill (indirect heat). Cover the grill and cook, turning the wings once, until almost completely cooked through and the skin is beginning to crisp, about 30 minutes. Move to direct heat and grill, turning often, until the skin is crisp and lightly charred, 10 to 15 more minutes.
- Transfer the wings to a large bowl. Add the basil butter and toss to coat. Add the parmesan and season with salt and pepper; toss again. Serve with lemon wedges.
GARLIC-PARMESAN CHICKEN WING APPETIZER
If you love GARLIC these are for you, they pack a punch but man is it good! I had these at a hot wing bar and they were the most delicious wings I had ever had. The problem was trying to recreate them. I still haven't been able to make them exactly the same way but these are pretty close. If you are looking for something a little different than the traditional hot wings make a batch of these and I bet you they will go just as quickly!

Steps:
- Boil the wings for approximately a half hour to cook off all the fat.
- Drain in a colander and rinse off any remaining fat particles.
- In a food processor, combine the 3 heads of garlic, olive oil and Tabasco sauce.
- Puree until smooth.
- In a dish combine the cheese, breadcrumbs and pepper.
- Mix well.
- Dunk the cooked wings into the garlic puree and then immediately into the dry mixture to coat.
- Place in a shallow baking dish.
- Repeat until all wings are coated.
- Bake in 425 degree oven for 35 minutes. This will make them crunchy and brown.
- Check them at approximately 25 minutes, depending on the size of the wings they may already be done and you don't want the breading to burn.
- Remember, they are already cooked since they were boiled first so once the crust is browned they can be taken out.
- Every oven varies as does the chicken size so watch them carefully.
- Once they burn they don't taste the same. Enjoy!
- These will keep overnight if you want to make them a day ahead. I bread them and then put them in the fridge. This way all I need to do is pop them in the oven once my guests arrive. They take approximately 45 minutes if I make them this way, but check them at 30 minutes again to be safe.

Steps:
- For the chicken wings: Toss the wings with the 1 teaspoon salt and 1/4 teaspoon black pepper in a large bowl and set aside.
- Place the cubed cheese in a food processor and pulse 6 to 8 times until the cubes break up into smaller pieces, then process until the cheese resembles coarse sand, about 30 seconds. Transfer the cheese to a large bowl and reserve 2 to 3 tablespoons in a small bowl for sprinkling on the cooked wings if desired.
- Place the rosemary and garlic in the food processor and process until the garlic is finely chopped. Transfer to the large bowl with the cheese. Whisk in the flour, cornstarch, paprika, cayenne, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Place half of the seasoned flour on a rimmed baking sheet. Set the wings on top and pour the remaining seasoned flour over the wings. Press the wings firmly into the seasoned flour until they are completely coated.
- Preheat a 6-quart air fryer to 390 degrees F for 3 minutes. Working in batches, lay the wings in the air fryer in a single layer so they are not touching. Cook, flipping after about 7 minutes, until the wings start to brown and become crispy, 15 minutes total. Transfer the wings to a platter and sprinkle with the reserved 2 to 3 tablespoons of cheese.
- Meanwhile, make the sauce.
- For the sauce: Combine the cheese and cream in a small saucepan over medium heat. Cook, stirring frequently, until the cheese melts into the cream, 3 to 4 minutes. Stir in the crème fraîche and cook until warmed through, 1 to 2 minutes. Transfer to a small bowl and stir in the chives, paprika, cayenne, 1/4 teaspoon salt and 1/8 to 1/4 teaspoon black pepper.
- Serve the wings with the sauce on the side for dipping.

- Prep. Preheat oven the 425 F and line a rimmed baking sheet with parchment paper. Place an oven-safe wire rack inside the baking sheet. Aggressively pat dry the wings (3 pounds) in paper towels, and place in a large bowl.
- Coat wings. Combine baking powder (1 1/2 tablespoons), salt (1 teaspoon), and black pepper (1/2 teaspoon) together in a small bowl. Sprinkle half the baking powder combo over the wings, toss, then sprinkle the other half. Toss until the wings are fully and evenly coated.
- Bake. Spread wings onto the prepared baking sheet in a single layer. Bake in preheated oven for 45-50 minutes.
- Sauce. Melt butter (6 tablespoons) over medium heat in a small saute pan. Add the minced garlic (6 cloves), and toast until fragrant (1-2 minutes) stirring constantly as it can burn easily. Remove from heat, and stir in black pepper (1/2 teaspoon), salt (1/2 teaspoon), half the parmesan (1/4 cup), and lemon zest (4 teaspoons).

- Place wings on a parchment or silpat lined baking sheet (they can be close together or even touching, but not on top of one another). If you are making plain wings, go ahead and dust with salt and pepper, to your liking.
- Bake at 425F for about 15 minutes* on each side, until wings are browning and cooked through.
- Remove wings and place in a prep bowl. Add parmesan cheese and garlic salt, then cover and shake vigorously until wings are coated evenly.
- Use tongs to place wings back on a lined baking sheet and return the tray to the oven for an additional 5 - 7 minutes, until crispy and perfect. If your oven has a convection setting, use it now for best results.
