  • To make one of these cheese bowls, find two small bowls that fit snugly inside each other. Line a large plate with a circle of parchment paper. Spread a thin layer of finely grated parmesan in a circle on the parchment, making the circle slightly larger than the size of the bowls. Microwave until melted, about 2 minutes. Quickly pick up the parchment and drape it, cheese-side up, over an upside-down bowl; immediately top with the other bowl and let cool 2 minutes. Remove the top bowl, invert the frico bowl and carefully remove the parchment. Let harden 30 minutes, then fill with salad.

Steps:

  • Preheat the oven to 400 degrees F. Mix the parmesan, basil and lemon zest in a bowl.
  • Transfer a heaping tablespoon of the cheese mixture to a silicone- or parchment-lined baking sheet and lightly pat down. (A silicone baking mat is highly recommended for this recipe.) Repeat with the remaining cheese mixture, spacing the spoonfuls about 1/2 inch apart. Bake 3 to 5 minutes, or until golden and crisp. Let cool, then use a flat spatula to remove.

There's nothing more comforting to me than a bowl of tomato soup and a grilled cheese. This recipe takes your average grilled cheese to the next level with a coating of grated Parmesan. The result: crispy, delicious frico on the outside of the sandwich.

1/2 cup freshly grated Parmesan (3/4 ounce)
2 slices Muenster cheese (1 ounce)
2 slices Gruyere cheese (1 ounce)
Two 1/2-inch thick slices sourdough bread
1 tablespoon mayonnaise
1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
1/4 cup minced shallot (1 small shallot)
1 clove garlic, grated
Pinch crushed red pepper
One 15-ounce can cherry tomatoes
1/2 cup chicken stock (not low-sodium)
1 sprig basil, plus 1 tablespoon sliced basil leaves for serving
Kosher salt and freshly ground black pepper

Steps:

  • Heat a medium nonstick skillet over medium heat. Scatter the Parmesan on a plate.
  • Sandwich the Muenster and Gruyere between the bread slices, breaking the pieces of cheese to fit inside the bread. Spread the mayonnaise on the outside of the sandwich, then dip into the Parmesan, pressing to coat evenly on both sides. Cook in the preheated skillet until the bottom is golden brown, 3 to 4 minutes. Carefully flip with a fish spatula to loosen the sandwich from the skillet and cook until the other side is golden brown and the cheese inside is melted, 3 to 4 minutes. Cut in half to serve.
  • Heat the oil and butter in a small saucepan over medium-high heat. Add the shallot and cook, stirring often, until softened, 2 to 3 minutes. Add the garlic and crushed red pepper and cook, stirring, until fragrant, 30 seconds. Stir in the cherry tomatoes, breaking them up with a potato masher. Add the chicken stock, basil sprig, 3/4 teaspoon salt and a few grinds black pepper; stir to combine. Bring to a boil, reduce to a simmer and cook for 5 minutes.
  • Discard the basil sprig and ladle the soup into a large bowl. Top with the sliced basil and serve with the Parmesan frico grilled cheese.

5 cups (about 14 ounces) finely grated Parmesan cheese
4 teaspoons smoked paprika*
Nonstick vegetable oil spray

Steps:

  • Toss cheese and paprika in large bowl.
  • Spray small nonstick skillet with nonstick spray. Place over medium-low heat. Drop 1/4 cup cheese mixture in mound in center of skillet. Spread to 3- to 4-inch round. Cook until completely melted, bubbling all over, and browning at edges, about 1 1/2 minutes. Remove pan from heat; let stand until bubbling stops. Loosen edges and turn frico over. A delicate cracker made by baking mounds of grated cheese into weblike crisps, frico could feature a number of cheeses, be it Montasio, cheddar, Asiago or, in this case, the kinds featured in cacio e pepe. Using both Parmesan and pecorino gives a good mix of richness and tang, though you could just use Parmesan. (Pecorino on its own may be too salty once it concentrates in the oven.) Snack on these with wine or spritzes, or crumble them over pasta, salad, soup or anything that likes a grating of cheese.

3/4 cup freshly grated pecorino cheese (about 2 ounces)

  • Heat oven to 400 degrees, and line 2 baking sheets with parchment paper. In a medium bowl, gently toss together the cheeses.
  • Arrange heaping tablespoon-size mounds of the cheese mixture on the baking sheets, spacing them at least 1/2 inch apart. Using your fingers, gently pat down each mound to flatten. (It's O.K. if there are holes - the cheese will melt into a web.) Grind pepper over each round.

1 tablespoon all-purpose flour
1/4 teaspoon black pepper

a nonstick bakeware liner such as a Silpat pad

Steps:

  • Preheat oven to 375°F.
  • Using largest holes on a 4-sided grater, coarsely shred enough cheese to measure 1 cup.
  • Line a large baking sheet with nonstick liner. Stir together cheese, flour, and pepper. Arrange tablespoons of cheese 4 inches apart on liner, stirring cheese in bowl between tablespoons to keep flour evenly distributed. Flatten each mound slightly with a metal spatula to form a 3-inch round.
  • Bake frico in middle of oven until golden, about 10 minutes. Cool 2 minutes on sheet on a rack, then carefully transfer each crisp (they are very delicate) with metal spatula to rack to cool completely.

  • For the Citrus Vinaigrette:
  • Combine all the ingredients in a jar or a tight-sealing plastic container. Shake to blend.
  • For the Spinach Salad:
  • In a large bowl, combine all the ingredients. Drizzle with vinaigrette and toss to combine. Divide the salad among the Parmesan Frico Cups and serve immediately.

4 ounces feta cheese
4 ounces neufchatel cheese, softened or 4 ounces cream cheese
3 ounces frozen chopped spinach, drained and squeezed of all liquid (optional)

1 cup low-sodium parmesan cheese, shredded
1 tablespoon all purpose Greek seasoning or 1 tablespoon italian seasoning

Steps:

  • FILLING: Mix filling ingredients in a medium bowl. Microwave on high, 30 second at a time, stirring between intervals, until cheese is melted and the filling is warm throughout. Set aside.
  • FRICO CUPS: Mix parmesan cheese and seasoning in a small bowl. In a large non-stick skillet on medium heat, melt the butter (or use non-stick cooking spray) to just coat the bottom of the pan.
  • Sprinkle 3 thin circles of cheese in a 3" circular pattern each into the pan. Cook until they have melted and formed a light golden crust, about 3 minutes. (NOTE: If you are new to making frico cups, you may want to use a small skillet, and make one at a time).
  • Carefully lift and turn the layer of cheese with a spatula and cook until lightly golden on the 2nd side, about 1/2 a minute.
  • Immediately remove the frico from the pan and shape it by laying it over an inverted mini muffin tin.
  • Allow to cool slightly before filling. Fill with the cheese filling and serve immediately.

Steps:

  • Heat a nonstick skillet over medium heat. Sprinkle enough Parmesan cheese to just cover the bottom of the pan (for a 9-inch pan, use about 3-4 tablespoons cheese). When it is golden brown - which can take less than 1 minute - use a pair of tongs to grab the edge and gently lift it out of the pan. Turn and cook the other side briefly.
  • Blot excess oil on a paper towel.
  • Working quickly, shape the frico on a rolling pin to form a cylinder, oraround the base of a cup to form a basket.
