This is truly the Best Ever Italian Sausage Stuffing recipe. It is my mom's treasured family recipe that has been on our table every Thanksgiving. The stuffing includes sausage, onion, celery and fresh herbs. We love the crunchy top and soft and buttery middle.

16 ounces bread cut into 1-inch pieces (day old bread if possible)
1 Tablespoon extra-virgin oil
1 pound mild pork sausage (or sweet or spicy Italian sausage, casings removed (you could use turkey, chicken, or vegan sausage))
1/3 cup unsalted butter
1 cup finely chopped yellow
1 cup chopped celery (from 3 stalks)
1/2 cup chopped flat-leaf parsley
1 Tablespoon fresh chopped rosemary (no stems)
1 Tablespoon fresh chopped sage
1/2 teaspoon sea salt or more to taste
2 cups low sodium vegetable broth
1 egg lightly whisked

Steps:

  • Preheat oven to 350 degrees F.
  • Place the cubed bread on a baking sheet. Bake for 7-10 minutes, or until dried and toasted. They should be golden brown. Transfer the bread cubes to a very large bowl.
  • Add 2 cups of broth (I used vegetable) to a large sauce pan. Heat on medium-low.
  • Meanwhile, in a large skillet heat the oil over medium heat. Cook the sausages over medium heat for about 10 minutes, until browned and cooked through, breaking up the sausage with a fork while cooking. I didn't find ground sausage so I bought sausage in the casing and removed it from casing before browning it. Use ground sausage if you found it.
  • In another skillet, add the other part of oil and butter (I used vegan butter sticks to keep it dairy-free)in medium heat.
  • When it is heated up, add the onions, celery, parsley, sage, rosemary or thyme. Add just a dash of salt and pepper, if you like. Saute over medium heat for 10 minutes, until the vegetables are softened.
  • Add the browned sausage, toasted bread to a large bowl. Next, add in the onion mixture.
  • Add in one cup of the broth. With a large spoon, gently stir the ingredients together. Add in the whisked egg. Gradually add the remaining broth 1/4 cup at a time until the stuffing is wet. With each addition, gently stir and pat the stuffing ingredients together. Take care not to over mix it, you're just combining it all together. The goal is to have it wet, but not soaked and drippy. You may need the whole 2nd cup of broth and you may need less. You may even need a little bit more than a full 2 cups of broth.
  • When the broth is soaked in and combined, spoon the stuffing into a 2qt. baking dish (or 9x12-inch baking dish); then cook for 30-40 minutes, or until it's heated through and golden brown on top. Check it at about 25 minutes and if it seems to be browning too much, cover with foil paper. I baked mine a full 40 minutes. Every oven is different. You may even need to bake it a few minutes longer to get that nice golden brown and have the inside fully heated through.
  • Remove from the oven. Sprinkle with additional parsley, then serve.

12 ounce bulk mild Italian sausage
1 cup chopped onion
0.5 cup chopped celery
2 teaspoon snipped fresh thyme

0.5 teaspoon snipped fresh rosemary
2 tablespoon olive oil
1 egg, lightly beaten
0.5 cup shredded Parmigiano-Reggiano cheese (2 ounces)
0.25 cup dried currants
2 tablespoon snipped fresh Italian ( flat-leaf) parsley
0.25 teaspoon salt
0.25 teaspoon ground black pepper
0.5 - 0.75 cup chicken broth
Grated Parmigiano-Reggiano cheese (optional)

Steps:

  • Preheat oven to 350 degrees F. Generously grease a 2-quart shallow baking dish; set aside. Spread bread pieces evenly in an ungreased 15x10x1-inch baking pan. Bake for 10 to 15 minutes or until bread is dry, stirring once. Transfer to a very large bowl; set aside.
  • In a large skillet, cook sausage over medium-high heat until brown. Drain off fat. Transfer sausage to the bowl.
  • In the same skillet, cook onion, celery, thyme, sage, and rosemary in hot oil over medium-high heat until onion and celery are tender. Transfer onion mixture to the bowl. Stir in egg, the 1/2 cup cheese, the currants, parsley, salt, and pepper. Drizzle with enough of the broth to moisten, tossing gently to combine.
  • Transfer bread mixture to the prepared baking dish.* Cover and bake for 40 to 45 minutes or until heated through. If desired, sprinkle with additional cheese. Makes 8 servings.

1 pound sweet Italian sausage, casings removed
4 stalks celery, chopped
2 onions, chopped

3 cups low-sodium turkey or chicken broth
Kosher salt and freshly ground pepper
2 large eggs
1/2 cup chopped fresh parsley
16 cups 1/2-inch stale country white bread cubes (1 1/2 pounds)

Steps:

  • Preheat the oven to 375 degrees F and butter a shallow 3-quart baking dish. Melt 6 tablespoons butter in a large nonstick skillet over medium-high heat. Add the sausage and cook, stirring and breaking up the meat with a wooden spoon, until lightly browned and no longer pink, about 6 minutes.
  • Add the celery and onions and cook, stirring occasionally, until softened, about 5 minutes. Stir in the sage. Add the broth, 1 teaspoon salt and a few grinds of pepper; bring to a simmer, then remove from the heat.
  • Whisk the eggs in a large bowl. Add the parsley, bread cubes and sausage-broth mixture and stir until combined. Transfer the stuffing to the prepared baking dish. 1 1/4 cups diced Spanish onion (about 1 small or 1/2 large)

24 to 32 ounces chicken stock
1 1/2 cups arborio rice
1 cup white wine
1 cup grated Parmesan
1/4 cup chopped fresh chives, plus more for garnish
1 1/2 tablespoons unsalted butter
Vegetable oil, for frying
2 cups all-purpose flour
1 dozen large eggs, beaten
2 cups panko breadcrumbs, ground in a food processor
Pecorino-Romano, for garnish
Spicy marinara (store-bought or homemade), for dipping, optional
Chimichurri Sauce (recipe follows), for dipping, optional
2 bunches scallions
1/2 cup olive oil
Kosher salt and freshly ground black pepper
1/4 to 1/2 cup sherry vinegar
2 tablespoons finely minced fresh chives
2 tablespoons finely minced fresh parsley
2 tablespoons finely minced shallots
1 teaspoon finely minced garlic

Steps:

  • In a large straight-sided pan, heat the olive oil with the sausage over medium heat. Brown the sausage, breaking it up into smaller pieces as it cooks, until no longer pink, 8 to 10 minutes. Add the onions and turn the heat down to medium-low. Cook until the onions are fully softened, about 8 minutes. Season with salt and pepper.
  • Bring the chicken stock to a simmer in a saucepan and keep warm on low heat. Add the rice to the onions and increase the heat to medium. Toast the rice, stirring often, until fragrant, 1 to 2 minutes. Add the white wine and reduce until almost dry. Reduce the heat to medium, then add 6 ounces of hot stock at a time, stirring the risotto throughout. When the liquid evaporates, add more stock. Continue in this manner until the rice is al dente, then cook out most of the liquid until thick. Turn off the heat and add the Parmesan, chives and butter. Spread the mixture on a sheet tray lined with parchment to cool completely in the refrigerator, 3 to 4 hours, or up to overnight.
  • Roll the risotto into 1-ounce balls, to make about 35 in total.
  • Preheat several inches vegetable oil in a pot or fryer to 350 degrees F.
  • Roll the balls in the flour, followed by the egg, then the panko. Fry the arancini in batches until golden brown, 3 to 4 minutes. Transfer the arancini to a paper towel-lined plate to drain any excess oil. Place the arancini on a platter and garnish with Pecorino-Romano and chives and serve with the spicy marinara and/or the Chimichurri, if desired.
  • Preheat a grill to medium-high heat. Lightly dress the scallions with 1 tablespoon of the olive oil and sprinkle with salt and pepper. Grill, flipping as needed, until charred and wilted, about 8 minutes. Chop the scallions really well and add to a bowl with the remaining olive oil. Fold in the sherry vinegar, chives, parsley, shallots and garlic.

1 box (12.5 ounces) jumbo pasta shells
1 tablespoon olive oil

4 cups shredded mozzarella cheese, divided
1 cup grated Parmesan cheese, divided
1/2 cup grated Romano cheese

1 medium onion, chopped

1 teaspoon dried oregano

12 ounces Italian bread, about one loaf, ut into 1-inch cubes (about 7 cups)
1 cup parmesan cheese, grated
1/2 cup butter, melted
1/2 cup dry white wine
1 1/2 cups turkey broth or 1 1/2 cups reduced-sodium chicken broth

Steps:

  • In a large skillet, heat the oil over medium heat. Add onion, celery, bell peppers and garlic. Cook, stirring often, until softened, about 5 minutes. Add sausage and cook, breaking up meat with a spoon, until it loses its pink color, about 8 to 10 minutes. Stir in the basil, oregano, salt and crushed red pepper. Transfer to a large bowl.

Steps:

  • Preheat oven to 350ºF.
  • MUSHROOMS.
  • CLEAN top of mushrooms with damp cloth. Place cleaned mushrooms on a sheet tray, stem side down. Bake at 350ºF for 5-8 minutes.
  • REMOVE from oven until ready to stuff, in step 5 below.
  • STUFFING.
  • BROWN sausage in a nonstick skillet, crumbling sausage into small pieces. Once browned, drain fat and transfer to a paper towel to cool.
  • BEAT eggs with milk in a medium bowl, then mix in parsley, basil, garlic, croutons, and Parmesan cheese.
  • ADD cooled sausage and mix well -- mixture should be wet but firm and hold together easily.
  • TOP pre-baked mushroom caps with sausage mixture and bake in 350ºF oven for 15 - 20 minutes, or until golden brown and cooked throughout.
  • SAUCE.
  • HEAT cream in sauce pan and lightly boil until half its original volume, being careful not to scorch. Mix in Parmesan cheese, basil, salt and pepper.
  • SPOON 2 ounces of sauce over top of each mushroom.
  • Garnish with a sprig of fresh Italian parsley or fresh basil and serve.
