16 chocolate chip cookies (2 inch), divided
24 JET-PUFFED Marshmallows
2 Tbsp. water
1 pkg. (10 oz.) frozen sliced strawberries in syrup, thawed
1 Tbsp. grated lemon zest
1-1/2 cups thawed COOL WHIP Whipped Topping, divided

Steps:

  • Halve 6 of the cookies; reserve for garnish. Coarsely crush remaining 10 cookies; set aside.
  • Place marshmallows in large saucepan. Add water; cook on medium heat until marshmallows are completely melted, stirring constantly. Remove from heat. Stir in strawberries and lemon zest. Refrigerate 30 min.
  • Add 1 cup of the whipped topping to strawberry mixture; stir with wire whisk until well blended. Alternately layer strawberry mixture and crushed cookies in 6 (6-oz.) parfait glasses, beginning and ending with strawberry layers. Refrigerate at least 1 hour. Top with the remaining 1/2 cup whipped topping and reserved cookie halves just before serving.

2 cups fresh strawberries, quartered
2 tablespoons strawberry jam
2 tablespoons sugar

Steps:

  • Prepare vanilla pudding according to package directions, except do not chill.
  • In a medium saucepan over medium-low heat, stir together strawberries, jam, and sugar until jam is melted and the mixture is heated through, about 4 minutes. Remove from heat.
  • In each of 4 parfait glasses, layer 1/8 of the pudding and 1/8 of the strawberry sauce. Repeat layers. Chill 45 minutes, or until set, before serving.

12 amaretti biscuits
2 tablespoons amaretto liqueur
2 cups fresh strawberries
1 1/2 cups heavy cream
1 teaspoon vanilla extract
2 tablespoons powdered sugar

Steps:

  • Gather the ingredients.
  • Place the amaretti biscuits in a plastic bag and gently crush using a rolling pin until they resemble coarse sand. Remove a couple of tablespoons and keep to the side for garnish. Spoon an even amount into the base of four glass dessert dishes or wine glasses. Press the crushed biscuit crumb firmly with the back of a spatula, then carefully, without disturbing the crumb, spoon over the amaretto. Pop the glasses into the refrigerator while you prepare the rest of the parfait.
  • Wash, hull , and dry the strawberries.
  • Choose three or four of the largest, well-shaped strawberries and slice as thinly as you can. Then, finely chop the remaining strawberries. Once the biscuit base is chilled, take the slices and lay evenly into the base and up the sides of the glasses in an even line. Repeat with a second row behind and overlapping with the previous fruit, reserving a few slices of strawberry for decoration. Fill the well in the middle of the sliced fruit with half of the chopped strawberries. Return the glasses to the refrigerator.
  • Whip the cream, vanilla extract, and confectioners' sugar using a stand or hand mixer to create stiff peaks. Take care not to overwhip the cream, which can soon become over-stiff and will be hard to pipe into the glasses.
  • Pipe the cream into each glass using a piping bag fitted with a large plain nozzle or layer using a spoon. Top with another layer of chopped strawberries and finish with more cream. Decorate with a few slices of strawberries and a little amaretti crumb.
  • Serve. If the parfaits are not to be eaten immediately, cover each glass with plastic wrap and keep in the refrigerator. They are best eaten the same day.

2 1/2 cups sliced strawberries ((heaping cups))
3-4 tablespoons granulated sugar
2 cups heavy cream
3/4 cups powdered sugar ((or less if you'd like it less sweet))
1 teaspoon vanilla extract
Sliced strawberries for garnish

Steps:

  • To a medium bowl, add the strawberries and sugar. Mix until the mixture is mostly combined. Set aside, covered in room temperature for at least 45 minutes.
  • To a bowl of an electric mixer fitted with a whisk attachment (hand mixer works well too), over medium/high speed, whip the heavy cream until slightly thickened. Increase the speed to high and whip until thickened and medium peaks form.
  • Turn off the mixer and add the powdered sugar and the vanilla extract. Turn the mixer back to low speed and whip until the confectioner's sugar is mostly combined. Increase the speed to high and whip until completely thickened and the mixture forms stiff peaks.
  • Spoon into a large piping bag fitted with a large star or round tip and place in the refrigerator until ready to use.
  • Prepare six 5 ounce dessert glasses or bowls. To glass dessert glasses (or bowls) add a couple of spoonfuls of macerated strawberries.
  • Pipe vanilla whipped cream on top, followed by more strawberries.
  • Top with vanilla whipped cream. Garnish with a strawberry.

1 (8-ounce) container frozen whipped topping, thawed

Steps:

  • Preheat oven to 350°. Spray 2 (9x5-inch) loaf pans with nonstick baking spray with flour. In a large bowl, beat butter and 1 3/4 cups sugar with a mixer at medium speed until fluffy. Add eggs, one at a time, beating well after each addition; beat in extract. In a small bowl, whisk together flour and salt; gradually add to butter mixture, beating just until combined.
