POPPY-SEED STICKS

Poppy-Seed Sticks image

These sticks make a delicious start to any festive meal.

Provided by Martha Stewart

Categories     Appetizers

Yield Makes 30

Number Of Ingredients 5

1 seventeen-and-one-quarter-ounce package frozen puff-pastry dough, thawed
3 large egg yolks, beaten
3/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1/4 cup poppy seeds

Steps:

  • Heat the oven to 425 degrees . Line two baking sheets with parchment paper. Dust a clean work surface with flour, and roll each piece of puff pastry into a 10-by-14-inch rectangle, less than 1/8 inch thick. Transfer the rolled-out dough to baking sheets; refrigerate for 15 minutes.
  • Remove dough from refrigerator, and generously brush one puff-pastry sheet with egg yolk. Sprinkle the salt and pepper over the sheet, then cover with poppy seeds. Brush the second pastry sheet with egg yolk, and place on top of first, yolk sides together. Gently press the two sheets together so the poppy seeds stick between them. Return the pastry to refrigerator, and chill another 15 minutes.
  • Remove the pastry from the refrigerator, and brush the top generously with the remaining egg yolk. Using a pizza wheel or a long sharp knife, cut the dough into 10-inch-long strips that are 1/4 inch wide. Hold a piece of dough in the middle, and start twisting in the direction of each end; twist until entire piece of dough is tightly coiled. Transfer twist to a baking pan; press the ends to metal. Repeat with the remaining dough.
  • Bake until the sticks are golden brown, about 8 minutes. Transfer to a wire rack to cool completely, and store in an airtight container up to 1 week.

PARMESAN AND POPPY SEED LOLLIPOPS

Parmesan and Poppy Seed Lollipops image

Put away those toasted nuts and chips! Canapes have reached a whole new dimension.

Provided by Lorraine Pascale

Categories     appetizer

Time 20m

Yield 10 lollipops

Number Of Ingredients 4

Butter, for greasing
1 1/4 cup/3oz/80g Parmesan cheese, finely grated
1 tsp poppy seeds
1 tsp sesame seeds

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line two large baking sheets with parchment paper and grease.
  • Toss the cheese and seeds together in a small bowl. Sit a 3 1/2in (9cm) ring or cookie cutter on one of the baking sheets and sprinkle a small handful of the cheese mixture into it, in a thin layer. Carefully lift the ring off to reveal a neat-edged disk of Parmesan and lay a lollipop stick on top, with the tip of the stick touching the middle of the disk. Repeat with the remaining cheese and sticks to make 10 in total (leaving about 1 1/4in/3cm spaces between them to allow for any spreading during cooking).
  • You should have a little Parmesan left over, so use it to cover up the part of the lollipop stick resting on the disk.
  • Bake in the oven for 5 minutes, swapping to a different shelf halfway through. The cheese should be lightly golden and bubbling.
  • Remove from the oven and slide the paper off the baking sheets and onto a rack to help speed up cooling. Let cool for 1 to 2 minutes until the lollipops have become crisp. Very carefully remove each one with a spatula. I like to serve these stuck upright into a box with holes in the top.

PARMESAN AND POPPY SEED STICKS

Parmesan and Poppy Seed Sticks image

To keep the "twist" in the cheese straws, it is essential that they be very cold when they go into a very hot oven.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers     Finger Food Recipes

Yield Makes 40

Number Of Ingredients 7

One 10-by-10-inch sheet frozen puff pastry (one sheet from a 17.3-ounce package)
1 to 2 ounces Parmesan cheese, grated on the small holes of a box grater to yield about 1/3 cup
1 teaspoon cayenne pepper
3 tablespoons sesame seeds, lightly toasted
3 tablespoons poppy seeds
1 1/2 teaspoons coarse salt
1 large egg, lightly beaten

Steps:

  • Thaw puff pastry according to package instructions, just until it is soft enough to cut. (This should take about 20 to 30 minutes at room temperature). Puff pastry should still be very cold. Preheat oven to 425 degrees with two racks.
  • In a small bowl, mix to combine cheese and cayenne pepper. In a second small bowl, combine sesame and poppy seeds with salt, and set aside.
  • Arrange cold puff pastry on work surface. Cut puff pastry lengthwise into two equal 5-inch-wide halves. Brush each half with beaten egg. Sprinkle one half with cheese mixture and other half with seed mixture. Using a pastry cutter or knife, cut each half crosswise into twenty 1/2-inch strips.
  • Working one at a time, twist each strip into a double spiral, and transfer to parchment-lined baking sheets, 1/2 inch apart. Using your thumb, press the ends of the strips down into the parchment to prevent unraveling. Transfer to freezer, and chill until very firm, about 20 minutes. (Refrigerator may be used for chilling but will take at least twice as long.) Check dough while chilling to make sure it stays twisted.
  • Transfer the straws to the oven, and bake until golden, rotating baking sheets halfway through cooking time for even browning, 10 to 15 minutes. Cool the straws on a cooling rack.

POPPY SEED-PARMESAN CHEESE STRAWS

Poppy Seed-Parmesan Cheese Straws image

Categories     Cheese     Side     Bake     Parmesan     Chill     Pastry

Yield makes 56

Number Of Ingredients 7

All-purpose flour, for dusting
1 pound Puff Pastry (page 359)
1 large egg, lightly beaten
2 tablespoons poppy seeds
1/2 cup finely grated Parmesan cheese (2 ounces)
1 tablespoon paprika
Coarse salt

Steps:

  • On a lightly floured work surface, roll out Puff Pastry dough to a 17-by-14-inch rectangle, about 1/8 inch thick. Transfer dough to a large baking sheet; lightly brush with some of the beaten egg, then sprinkle evenly with poppy seeds. Gently press poppy seeds into dough with a rolling pin, taking care not to stretch the rectangle further. Refrigerate dough until firm, 10 to 15 minutes. In a small bowl, combine cheese, paprika, and a large pinch of salt; set aside.
  • Invert the dough onto the work surface, then brush uncoated side with remaining beaten egg. Sprinkle evenly with the cheese mixture; use a rolling pin to gently press cheese mixture into the dough. Return dough to baking sheet, cheese side up; chill until firm, 10 to 15 minutes.
  • With a pizza wheel or pastry cutter, divide dough in half crosswise to make two rectangles, each 14 by 8 1/2 inches. Cut each half crosswise into 28 strips (each 1/2 inch wide), for a total of 56. Twist each strip, then transfer to two large unlined baking sheets, pressing the ends onto the sheet to hold their shape. Refrigerate strips until firm, at least 30 minutes or overnight.
  • Preheat the oven to 375°F. Bake, rotating sheets halfway through, until straws are light golden, 20 to 24 minutes. Transfer to a wire rack to cool. Cheese straws are best eaten the day they are made, but they can be kept in an airtight container at room temperature for up to 2 days. If desired, reheat in a 200°F oven for about 20 minutes.
  • Cheese Straw how-to
  • After being rolled out and coated with poppy seeds and grated cheese, the Puff Pastry is cut into strips. The strips are then twisted and chilled before baking.

PARMESAN POPPY SEED CHICKEN CASSEROLE

Parmesan Poppy Seed Chicken Casserole image

This is a quick and delicious casserole. My 4 year-old picky eater ate every bite. Roasting the chicken and adding parmesan cheese change the flavor of this great classic.

Provided by Childrens Minister

Categories     Chicken Breast

Time 1h10m

Yield 4-6 serving(s)

Number Of Ingredients 9

3 boneless skinless chicken breasts, yield three cups
2 teaspoons seasoning salt
1 tablespoon cracked black pepper
1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
8 ounces sour cream
1 tablespoon poppy seed
1 1/2 cups buttery crackers, crushed (about one sleeve)
1/2 cup parmesan cheese, divided
1/4 cup butter, melted

Steps:

  • Place chicken breast in lightly greased baking dish, season with seasoned salt, and pepper. Bake at 450 for 30-35 minutes, until breasts are done. Remove from oven and reduce heat to 350°F.
  • In medium bowl add cream soup, sour cream, poppy seeds, and 1/4 cup of parmesan cheese. Stir well.
  • Chop chicken and add to bowl of soup and sour cream mixture. Stir well.
  • Place chicken in a lightly greased 11x7x1 1/2 inch baking dish, spread evenly.
  • Combine crushed crackers, 1/4 cup of parmesan cheese, and butter and sprinkle over chicken mixture. Bake uncovered at 350°F for 30 minutes.
  • Note: You do not have to roast the chicken, I just prefer the layer of flavor. You can also use fat-free sour cream and soup to save fat.
