Stuffed Sweet Potatoes With Pancetta and Broccoli Rabe image

4 sweet potatoes (about 8 ounces each)
2 ounces sliced pancetta (about 8 thin slices)
1 bunch broccoli rabe, tough stems trimmed, roughly chopped
Kosher salt
8 ounces shiitake mushrooms, stemmed and sliced
2 cloves garlic, thinly sliced
1/8 teaspoon red pepper flakes
1/2 cup part-skim ricotta cheese
1 tablespoon finely grated parmesan cheese
Freshly grated nutmeg

Steps:

  • Pierce each sweet potato with a fork in a few spots. Arrange on a microwave-safe plate and microwave until soft, about 12 minutes.
  • Meanwhile, cook the pancetta in a large skillet over medium heat, turning once, until crisp, about 4 minutes. Remove from the skillet and drain on paper towels. Increase the heat to medium high; add the broccoli rabe and 1/4 teaspoon salt to the skillet and cook, stirring occasionally, about 3 minutes. Add the mushrooms, garlic and red pepper flakes and cook, stirring occasionally, until the vegetables are tender, about 3 more minutes.
  • Mix the ricotta, parmesan, and nutmeg to taste in a small bowl. Split open the sweet potatoes lengthwise and fluff the flesh with a fork. Top each with about 1 teaspoon of the ricotta mixture, then top evenly with the broccoli rabe mixture and the remaining ricotta mixture. Chop the pancetta and sprinkle evenly on top.

4 large baking potatoes
1 small head broccoli, cut into florets
salt and pepper to taste
3 tablespoons roasted garlic and parmesan cheese sauce (such as Ragu®)

Steps:

  • Wash potatoes and pierce with a fork. Microwave on high for 15 minutes, or until done.
  • Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Slice the tops off of the potatoes, and scoop the flesh into a large bowl with the broccoli. Season with salt and pepper to taste. Stir in cheese sauce and mash mixture until desired consistency is reached, adding more sauce if desired. Spoon mixture back into the skins, and place on a baking sheet.
  • Bake in preheated oven for 30 minutes.

These stuffed potatoes with chicken and broccoli sauce are a creamy and decadently savory meal prepared with just a few simple ingredients!

4 large russet potatoes, scrubbed
Olive or avocado oil
Salt
Black Pepper
1 ounce unsalted butter
2 cloves garlic, pressed through garlic press
1 ounce all-purpose flour (about 4 tablespoons)
2 cups milk (I used 2%)
1 teaspoon Italian seasoning
1/2 cup grated parmesan cheese
2 cups cooked and diced chicken breast (rotisserie is great)
1 1/2 cups chopped and blanched broccoli florets
1 cup shredded sharp cheddar cheese
1/4 cup chopped, crispy bacon (optional)

Steps:

  • Preheat your oven to 400°.
  • Place your potatoes into a large bowl, and prick each potato a few times with a fork; drizzle a little oil over them (about 1 tablespoon worth), plus add a sprinkle of salt and pepper, and place the potatoes directly onto the rack in the oven; bake the potatoes for about 50 to 60 minutes, or until tender when pierced with a paring knife.
  • While the potatoes bake, place a medium-size sauce pan over medium heat; add in the butter, and once it begins to melt, add in the garlic, and stir to combine.
  • Once all of the butter is melted and the garlic is aromatic, sprinkle in the flour and stir, and cook the roux for about 1 minute to cook out the raw flour taste.
  • Next, pour the milk into the roux mixture, whisking the whole time to avoid any lumps from forming; allow the milk mixture to come to a gentle simmer, and then simmer for a few minutes, whisking occasionally, until the mixture thickens and becomes creamy and smooth.
  • Turn off the heat and add in 1 teaspoon of salt, 1/4 teaspoon of black pepper, the Italian seasoning, and the grated parmesan, and whisk to combine and blend until smooth.
  • Add in the diced chicken breasts and the chopped broccoli florets, and stir to incorporate.
  • Once the potatoes are baked, allow them to cool just enough so you can handle them; slice them length-wise to open them up (do not cut all the way through, just enough to reveal the flesh inside, about 3/4 of the way through), and squeeze to bring out some of the potato flesh to the surface; fluff with a fork, and sprinkle in a tiny bit of salt and pepper.
  • To serve, ladle or spoon into the cavity of the potato a generous amount of the creamy chicken and broccoli sauce, and top with some of the grated cheese and a sprinkle of the bacon, if desired.

  • Heat oil in skillet.

1 1/2-2 1/2 lbs pork tenderloin, butterflied
2 lbs portabella mushrooms, sliced
1 tablespoon butter or 1 tablespoon olive oil
1/2 cup white wine
1/4 cup fresh cilantro leaves, chopped
2 garlic cloves, smashed, divided
salt and pepper
1/2 lb broccoli floret, chopped
1/4 lb parmesan cheese, shaved about 1/8 inch thick
2 teaspoons butter or 2 teaspoons olive oil

Steps:

  • Lay out butterflied pork tenderloin, inside up.
  • Cover one half of tenderloin with one layer of shaved Parmesan, overlapped.
  • Spread chopped broccoli over cheese and sprinkle with one smashed clove garlic.
  • Dot with butter or sprinkle over olive oil.
  • Sprinkle with salt and pepper to taste.
  • Cover all with another layer of shaved Parmesan.
  • Fold unfilled half over filled half and tie together a couple of times around the middle and once length wise, with kitchen string.
  • In a large fry pan, at medium hot heat, sear on all sides, set aside, in roaster.
  • Sauce: Add butter or oil to fry pan, scrape up bits and saute mushroom slices until lightly browned, about 5 minutes.
  • Add wine, cilantro, remaining smashed garlic and salt and pepper to taste.
  • Reduce heat and simmer about 5 minutes until slightly thickened.
  • Pour a quarter of the sauce over the roast.
  • Preheat oven to 400°F, cook roast uncovered for about 45 minutes.
  • Pour remaining mushroom sauce over roast and return to oven for 10 to 15 minutes.
  • Remove tenderloin to platter, let stand for 10 minutes, then carve into half inch slices and spoon all mushroom sauce from roaster over roast slices.
  • Garnish with sprigs of cilantro.
