2 tablespoons butter
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups chicken broth
1 tablespoon olive oil
3 tablespoons finely chopped onions
1 (15 ounce) can tomatoes, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1 bay leaf
1/4 teaspoon thyme
4 cups cooked chicken, cut bite size
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon pepper
6 drops Tabasco sauce
3/4 cup cream
1/2 cup green onion, chopped
6 cups bow tie pasta, cooked and drained
3/4 cup parmesan cheese, grated

Steps:

  • Sauce Veloute: Melt butter and stir in flour,salt and pepper; gradually stir in chicken broth.
  • Simmer 5 minutes stirring with wire whisk,until thick and smooth.
  • Simmer 15 minutes stirring occasionally. Set aside.
  • Tomato Sauce: Saute onions in oil 5 minutes.
  • Stir in tomatoes, salt& pepper,bay leaf and thyme.
  • Simmer 15 minutes; discard bay leaf. Set aside.
  • Preheat oven 350*.
  • Butter a 3 quart casserole.
  • Saute chicken in 1 Tbsp butter 2-3 minutes.
  • Season with salt& pepper.
  • Combine 1/2 c.cream with 1 cup sauce veloute, tabasco sauce & green onions.
  • Stir into chicken.
  • Remove from heat.
  • Melt remaining Tbsp butter and toss with pasta.
  • Place 1/2 pasta in casserole.
  • Cover with 1/2 tomato sauce.
  • Repeat.
  • Top with 1/2 cup cheese and entire chicken mixture.
  • Blend remaining 1 cup Sauce Veloute with rest of cream.
  • Spoon over chicken.
  • Sprinkle with remaining cheese.
  • Bake 45 minutes until bubbly and brown.
  • Note:.
  • This can be prepared the day before, refrigerated and heated in oven when you are ready to serve it. Enjoy!

  • Season breasts with salt and pepper and brown slowly in butter in Dutch oven.
  • Dissolve pan juices with brandy.
  • Add next six ingredients.
  • Simmer 30 minutes or until chicken is tender.
  • Stir in cream and add a few drops Kitchen Bouquet for color.

2 -4 whole boneless chicken breasts
2 tablespoons butter
1 cup sour cream
1/2 cup cooking sherry or 1/4 cup white vinegar
1 medium onion, sliced
1 (10 3/4 ounce) can cream of chicken soup

Steps:

  • Season chicken with salt and pepper; melt butter in a skillet and brown chicken breasts on both sides.
  • Arrange chicken in a 9 X 13 baking dish and top with sliced onion.
  • In a large mixing bowl combine remaining ingredients, mix well and pour over chicken and onions.
  • Bake at 450 degrees uncovered for 50 min to an hour.

1 lb boneless skinless chicken breast, sliced and cooked
2 (10 ounce) frozen broccoli
1/4 cup parmesan cheese, grated
4 ounces button mushrooms
1 tablespoon butter
3 tablespoons flour
1/8 teaspoon black pepper
1 1/2 cups milk
1/4 teaspoon nutmeg
10 1/2 ounces cream of mushroom soup
1/4 teaspoon Worcestershire sauce

Steps:

  • Place the chicken in the bottom of a 10-inch pie plate.
  • Top each slice with several pieces of broccoli.
  • Sprinkle with half the cheese.
  • Top with mushrooms.
  • Melt the butter over low heat in a small saucepan.
  • Blend in the flour and pepper.
  • Cook over low heat, stirring constantly, until the mixture is smooth and bubbly.
  • Remove from the heat and gradually stir in the milk.
  • Bring the milk mixture to a boil, stirring constantly, boil for 1 minute.
  • Stir in nutmeg, soup and Worcestershire.
  • Pour this mixture over the broccoli. Sprinkle with remaining cheese.
  • Broil until the top is light brown and bubbly. 3 to 5 minutes.

4 cups mixed baby greens, rinsed and patted dry
1 cup sliced mushrooms
1 cup diced fennel
1 cup julienned carrots
1 cup diced celery
1 (14-ounce) can baby artichokes, drained and quartered
1 cup calamata or nicoise olives
1/2 cup thinly sliced scallion
1 whole boneless, skinless chicken breast, cut into halves and pounded to 1/2-inch thick
1 tablespoon minced fresh thyme leaves, or 1 teaspoon dried thyme, crumbled
Salt and freshly ground pepper, to taste
1 tablespoon olive oil
1/2 cup dry white wine
1/2 cup canned chicken broth
1 to 2 teaspoons Dijon mustard, or to taste
2 to 3 tablespoons olive oil, or to taste
1 tablespoon balsamic vinegar

Steps:

  • In a large salad bowl combine the greens, mushrooms, fennel, carrots, celery, artichokes, olives, and scallion, and toss the mixture to combine. Pat the chicken dry and season with the thyme, salt, and pepper. In a large nonstick skillet set over moderately high heat, warm the oil until hot, add the chicken, and saute it for 2 minutes. Turn and cook for 1 minute more. Transfer the chicken to a plate. Add the wine to the skillet and reduce it by half. Add the broth, whisk in the mustard, and return the chicken to the skillet. Simmer 2 to 3 minutes, or until the chicken is cooked through and springy to the touch. Transfer the chicken to a plate, reduce the remaining liquid to 1/2 cup, and pour it into a small bowl. Make the dressing: Add the olive oil, whisking, to the bowl of reduced cooking liquid and whisk in the vinegar and salt and pepper, to taste. Cut chicken into slices and add to the salad bowl. Pour juices from plate into dressing, whisking to combine, and drizzle over salad. Toss mixture until chicken and vegetables are well coated with dressing.

1 1/2 pounds boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
1 medium onion, halved, thinly sliced
2 teaspoons ground turmeric
3 large garlic cloves, finely chopped, plus 1 garlic clove, smashed
2 tablespoons fresh lime juice, plus 8 wedges for serving (3-4 limes total)
3 tablespoons olive oil, divided
2 1/4 teaspoons ground cumin, divided
1 3/4 teaspoons kosher salt, divided, plus more
1 teaspoon freshly ground black pepper, divided
1 cup basmati rice
1/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
1 cup plain yogurt (optional)
1 English hothouse or large standard cucumber, peeled if desired, quartered lengthwise, cut crosswise into 1/2" pieces (about 2 cups)
1 cup (packed) herb leaves, such as mint, cilantro, and/or dill
1/3 cup shelled unsalted pistachios, coarsely chopped
Sumac (for serving; optional)

Steps:

  • Mix chicken, onion, turmeric, chopped garlic, lime juice, 1 Tbsp. oil, 2 tsp. cumin, 1 tsp. salt, and 3/4 tsp. pepper in a medium bowl.
  • Heat 1 Tbsp. oil over medium in a heavy medium saucepan. Add rice and smashed garlic and cook, stirring frequently, until lightly toasted and fragrant, 1-2 minutes. Stir in cardamom, cinnamon, 1/4 tsp. salt, and remaining 1/4 tsp. cumin and 1/4 tsp. pepper. Add 1 3/4 cups water and bring to a boil, then reduce heat and gently simmer, covered, until water is evaporated and rice is cooked, 18-20 minutes. Remove from heat. Let sit, covered, until ready to serve.
  • Meanwhile, heat remaining 1 Tbsp. oil over medium-high in a large skillet until very hot but not smoking. Add chicken mixture and cook, stirring occasionally, until chicken is cooked through, 6-8 minutes. Remove from heat. Stir in yogurt, if using, then adjust seasoning to taste. Cover to keep warm.
  • Gently toss cucumber, herbs, and remaining 1/4 tsp. salt in a small bowl.
  • Fluff rice with a fork and divide among bowls. Spoon chicken over. Top with cucumber salad, pistachios, and sumac, if using. Generously squeeze lime wedges over.

A friend researched it (I'm hoping she'll stop by here and add some information in the comments on how she found/changed it) because we were reading Dorothy Dunnett's Niccolo Rising novels (set in that time period) and we were curious about what the characters were eating. So we ate this along with #124576, and it was fantastic, if a little time consuming

4 chicken breasts (with bone and skin)
1 celery rib
2 teaspoons thyme
2 tablespoons parsley
1 bay leaf
1 tablespoon peppercorn (cracked)
5 juniper berries, mashed
3 cups walnuts (ground)
2 lemons, juice of
1 teaspoon salt
1 teaspoon cinnamon
1 cup pomegranate juice (I use a brand called P.O.M.)
5 tablespoons unsalted butter
1 1/2 large onions, finely diced
1/3 cup sugar
2 cups water

Steps:

  • Wash 4 half chicken breasts (with bones and skin) and put them in a good-sized pot. Add celery rib, thyme, parsley sprigs, bay leaf, cracked peppercorns, and juniper berries.
  • Barely cover the breasts with cold water, cover the pot, and bring to a gentle simmer (the surface of the water shakes and only a few bubbles break). Hold it there for 20 minutes; turn off the heat; let the breasts rest in the hot water for 10 minutes.
  • Transfer chicken to a strainer. Let it rest until cool enough to handle and then cut or pull the meat into bite-sized pieces. Use the skin, bones, and broth to make stock for some other dish.
  • Grind six or so handfuls of walnuts fine in a food processor to produce three cups. You want to end up with about three cups.
  • Heat 5T unsalted butter in a large, heavy saucepan, and add onions, chopped fine. Cook onions until they are golden, 8 minutes or so. Add ground walnuts and stir constantly (very important) for about five minutes. They will stick if you don't stir.
  • Add the lemon juice, salt, cinnamon, sugar, pomegranate juice, and two cups water. Cover pot and let mixture simmer for up to 40 minutes.
  • Five minutes before you're ready to serve, add the chicken. Keep the heat low so it doesn't toughen up and cook it only until everything is heated through. Turn off the heat and let it rest if you must. It will stay hot for quite a while.

paprika to taste
½ cup dry white wine
1 (10.75 ounce) can condensed cream of mushroom soup
1 (4.5 ounce) can sliced mushrooms, drained
1 cup sour cream
¼ cup all-purpose flour

Steps:

  • Sprinkle chicken breasts lightly with salt, pepper, and paprika to taste. Place in slow cooker.
  • In a mixing bowl, combine the wine, condensed soup, and mushrooms. In another bowl, mix together sour cream and flour. Stir sour cream mixture into the mushrooms and wine. Pour over chicken in slow cooker. Sprinkle with additional paprika, if desired.
  • Cover, and cook on Low for 6 to 8 hours.

1 cup red wine
1 cup water
2 large onions
750g chicken
500g mushrooms
1 teaspoon curry powder
2 teaspoons chicken stock
200 ml cream
200 ml mayonnaise
small bunch of parsley

Steps:

  • Slice the onions roughly and fry lightly in a large frying pan in small amount of oil.
  • In a bowl or large measuring cup combine the wine, water, curry powder and chicken stock. Pour this into the onions and allow to simmer for about half an hour.
  • Slice the mushrooms thickly and cube the chicken. Fry lightly, and then add to the onions simmering in the wine and water mix. Leave simmering for another 10 minutes.
  • Meanwhile whip the cream till it just holds shape, then fold in the mayonnaise, and lastly the parsley, finely chopped.
  • Remove the chicken, mushrooms, onions and wine from the heat and fold in the cream, mayonnaise and parsley just before serving. Serve on a bed white rice.
  • This can also make a really nice vegetarian meal if you leave out the chicken and double the amount of mushrooms, and replace the chicken stock with vegetable stock.

1 medium apple, chopped
1/4 cup chopped pecans

3 heads Belgian endive, separated into leaves
1 cup dark chocolate chips
1/3 cup seedless blackberry spreadable fruit
1/4 cup balsamic vinegar

Steps:

  • Sprinkle chicken with salt and pepper. In a large skillet, saute chicken and fennel in oil until chicken is no longer pink. Add green onion and rosemary; cook 1 minute longer. Remove from the heat., In a large bowl combine the apple, pecans, parsley and lime juice. Stir in chicken mixture; spoon into endive leaves., In a microwave, melt chocolate chips; stir until smooth. Stir in spreadable fruit and vinegar. Drizzle over appetizers.
