PANGUITCH POTATOES
When my husband was in charge of our large pioneer celebration a few years ago, he decided to multiply our family favorite for a crowd. The dish is easy to fix and has become a standby for the event. Here is the original recipe, cheesy and comforting. -Lucile Proctor, Panguitch, Utah

Steps:
- Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until crisp-tender. Drain; cool slightly. Grate potatoes., In a large bowl, combine the remaining ingredients; add potatoes. Stir to combine. Transfer to a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 35-40 minutes or until heated through. Refrigerate leftovers.

- Place the unpeeled potatoes in a large saucepan and cover with water; cook until tender but firm. Drain; cut potatoes into 1-in. cubes. Transfer to an ungreased 2-1/2-qt. baking dish. , Add pimientos, onion, garlic salt and onion salt; toss gently. Sprinkle with cheese. Top with bread cubes; drizzle with butter. Bake, uncovered, at 350° for 30 minutes or until bread is toasted.

- In a large skillet, cook bacon and onion; drain. Add butter and stir until melted. Remove from the heat. In a large bowl, whisk the flour, salt, pepper, eggs, evaporated milk and milk until smooth. Stir in the potatoes and bacon mixture., Transfer to a greased 11x7-in. baking dish. Bake, uncovered at 350° for 60-65 minutes or until golden. Serve with sour cream if desired.
