8 (4-ounce) portions Alaskan sockeye salmon, skin removed, pin bones removed
Lemon pepper seasoning, to taste
1 head romaine, chopped
6 Roma tomatoes, thinly sliced plus 2 tomatoes, sliced, for garnish
8 ounces diced red onion, plus 2 ounces, for garnish
8 ounces Gorgonzola blue cheese crumbles
Caesar dressing, commercial or homemade
4 lemon slices
4 ounces crispy fried onion strips or store-bought fried onions (recommended: French's Original French Fried Onions)

Steps:

  • Preheat grill over medium-high heat.
  • Lightly season pink side of the salmon portions with lemon pepper. Grill (or pan-fry), pink side down, for 2 minutes. Flip over, and cook for another 4 minutes.
  • In the meantime, in a large bowl or platter toss chopped romaine, sliced tomato, red onion and blue cheese crumbles with enough Caesar dressing to coat the salad. Top the salad with remaining tomato and red onion. Place salmon over the salad, garnish with lemon slices and crispy fried onion strips.

1 pound fresh salmon, picked over for bones (very cold)
1/4 cup seeded and minced red bell pepper
1/4 minced green onion
2 tablespoons minced fresh mint
1/4 cup mayonnaise (low fat is acceptable)
1 large egg, lightly beaten
1/4 or more cup soft fresh white breadcrumbs
Flour for dredging
2 tablespoons vegetable oil
Salt and pepper
Egg rolls, cut in half toasted and lightly buttered
Sliced tomatoes, arugula
Mayonnaise (optional)

Steps:

  • Cut the salmon into cubes and chop, but not too finely. In a glass bowl combine the salmon, red pepper, green onion, mint and mayonnaise. Bind the mixture with the egg and breadcrumbs then season with salt and pepper. Refrigerate the mixture so it is easier to shape into cakes.
  • When you are ready to eat, season the flour mixture with salt and pepper. Shape the salmon mixture into four cakes. Heat 2 tablespoons of vegetable oil in a large nonstick 12 inchskillet. Lightly dredge each salmon cake in flour and cook, adjusting heat as necessary and turning once, anywhere from 5 to 10 minutes, depending upon how well cooked you like your fish to be. The less time they cook, the moister they will be. Set each salmon cake on a warm bun garnished with the mayonnaise, arugula and tomatoes. Eat as open an faced sandwich with a knife and fork Serve with steamed zucchini or yellow squash salad.

  • Season salmon on both sides with 1/2 salt and 1/8 tsp black pepper. Grate 1 tsp of lemon zest then squeeze 2 lemons for 4 Tbsp lemon juice.
  • Heat a large (10-12") light-colored pan over medium heat and right away add 4 Tbsp butter, swirling and stirring frequently to prevent splatter until it starts to turn light brown and the bits of butter solids turn brown (about 3-7 minutes depending on your heat).
  • Add seasoned salmon and cook uncovered on the first side 3-4 minutes until golden brown then flip salmon and cook another 2 to 3 minutes or until flaky and fully cooked through with an internal temperature of 145˚F.
  • In the last 2 minutes of cooking, add 1 tsp lemon zest and 4 Tbsp lemon juice to the pan. Spoon the sauce over the salmon as it cooks. Transfer salmon to plates, drizzle with sauce, and sprinkle the pan-cooked salmon with freshly chopped parsley and black pepper to taste. Serve right away.
