CHICKEN STUFFING BAKE
This is a wonderful 1-dish meal that my kids just LOVE! It's so easy that I can make it as soon as I get home from work, and when it's done in the oven, the kids think they've had a wonderful home-cooked meal! Yum! (Oh, by the way, I PREFER to use the Campbell's Cream of Chicken Dijon soup, but I can't find it anymore in Indiana...)

Steps:
- Mix contents of stuffing mix pouch and the 1-2/3 cups water. Set aside.
- Place washed and dried chicken in a 2-quart casserole (or 13 x 9 inch baking dish). Sprinkle chicken with poultry seasoning, paprika, garlic powder, salt & pepper (for seasoning).
- Mix soup, sour cream and milk. Pour mixture evenly over chicken.
- Spoon stuffing mixture over the top, evenly.
- Dot the top with little pieces of butter.
- Bake at 375 degrees for 45 minutes, or until the chicken is cooked through and the juices run clear.
- YUM! :).
APPLESAUCE STUFFING RECIPE
Feel free to double the recipe if you're feeding a crowd for Thanksgiving. Leftovers heat up well.

- In a large frying pan, combine butter, onion, and celery and cook over medium heat until the onions and celery are soft. Add applesauce and chicken broth. Remove from heat.
- Add butter mixture to dry bread crumbs and combine. Add additional chicken broth if stuffing is dry. Add seasoning, if desired. Mix in apples and/or coconut, if desired.
- Bake at 350F for 20 to 25 minutes, or until top is golden brown.

- Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13 inch baking pan with cooking spray.

SUNDAY ROAST CHICKEN WITH APPLE AND HERB STUFFING
With it's crisp skin, light, juicy stuffing of onion, apple, herbs, and lemon zest, and accompaniment of rich gravy,this is hard to beat!

- Make the apple and herb stuffing: Melt the butter in a saucepan, add the onion, and cook gently for a few minutes, until softened.
- Remove from the heat, leave to cool slightly, then stir in the apple, bread crumbs, egg,parsley, thyme, lemon zest, and salt and pepper to taste.
- Leave to cool completely.
- Put the parsley and thyme sprigs into the cavity of the chicken, add the lemon and onion, if using, and season with black pepper.
- Truss the chicken if desired.
- Spoon the stuffing into the neck end of the chicken, secure the skin flap over the stuffing with a smalll skewer, and pat into a rounded shape.
- Put any leftover stuffing into a small ovenproof dish.
- Rub the softened butter over the chicken breast and season with salt and pepper.
- Place the chicken, breast side down, in a roasting pan.
- Cook in a 375* oven for about 1 1/2-2 hours.
- Turn the chicken over when lightly browned.
- Continue cooking, basting every 20 minutes.
- Cook any leftover stuffing with the chicken for the last 40 minutes of cooking time.
- Test the chicken: insert a skewer into the thigh-the juices will run clear when the chicken is cooked.
- Transfer to a warmed serving platter and keep warm while you make the gravy.
- Remove the stuffing from the neck cavity and transfer to a serving dish with any leftover stuffing.
- Carve the chicken and serve with the gravy.
- Gravy: Tilt the roasting pan, and spoon off all but 1 tbls.

- Add 1-2 quartered unpeeled onions, 1 chopped carrot, 1 chopped celery stalk, 1 bouquet garni, and a few black peppercorns.
- Simmer for about 1 hour.
- Cool, cover, and keep in the fridge for 3 days or freeze for 3 months.
- Strain before use.
OVEN BAKED CHICKEN AND STUFFING
Steps:
- Preheat oven to 350 degrees F. Spray baking dish with cooking spray and place chicken in dish skin side down. Bake for 50 minutes turning chicken over about half way through.
- When chicken has about 10 minutes left, prepare stuffing per microwave directions on the box.
- When chicken is done, take it out of the oven and smother it with the cream of mushroom soup straight out of the can -- do not add any water. Then top with stuffing and place back in oven for 20 more minutes. When done take out of oven and Enjoy!!
