2 pounds queso blanco-style processed cheese, such as Velveeta Queso Blanco, cut in 1/2-inch cubes
2 cans diced tomatoes and green chiles, such as Rotel
1 jar diced pimientos
2 jalapenos, seeded and chopped finely
Tortilla chips, for serving

Steps:

  • Add the cheese to a saucepan and melt over medium heat. Add the diced tomatoes and chiles, pimientos and jalapenos and mix. Pour into a chafing dish to keep warm.
  • Serve with tortilla chips.

When she was a young girl, this recipe was donated to Krista by a family friend for a school project she was working on. It was so simple and so delicious that that she's continued to make it again and again throughout her life. As an adult, it has become her favorite recipe to share with others when there is a church meal-train, special gathering, or any time "comfort food" is called for. The rich, classic flavor is universally loved, and her recipe is always in high demand. What's more, this recipe freezes well, allowing her to make double batches for her family, or ahead of time, so that she can share it at a moment's notice. 2 lbs frozen hash browns (I prefer cubed)
1/4 teaspoon pepper
1/4 cup chopped onion
1 (10 1/2 ounce) can cream of chicken soup (or Mushroom)
1 cup milk
1 cup sour cream
2 cups grated cheddar cheese
2 cups diced ham
1 1/2 cups corn flakes, crushed
1/4 cup melted butter

Steps:

  • Mix all the above ingredients BEFORE you add it to the hash browns because if they're frozen and you just add stuff one at a time it will make big frozen chunks that's hard to mix!
  • Pour into 9x13 pan. Crush on top - your favorite plain cereal. I.
  • use corn chex. You can also use corn flakes or even plain crackers.
  • Sprinkle 1/4 c melted butter on top (optional).
  • Bake at 350 for 60 to 75 minutes, or until heated and bubbly. Enjoy!
  • To freeze, simply leave the Chex/crackers off until ready to bake. Make sure the casserole is thawed completely before cooking.

1 (16 ounce) package processed cheese food, cubed
1 (4 ounce) jar mushrooms, drained
1 (14 ounce) can diced tomatoes with green chile peppers, drained

Steps:

  • Cook the sausage in a large skillet over medium heat until completely browned; drain.
  • Combine the cooked sausage, cheese, mushrooms, and diced tomatoes with green chile peppers in a slow cooker. Set slow cooker to Low. Cook until the cheese melts completely, stirring occasionally, 30 to 40 minutes.

My family and I are HUGE Mexican food fans, but it becomes quite pricy to eat out often - not to mention all that fried food does a number on the waistline! To solve my chicken chimichanga addiction, I finally created a recipe to make at home that tastes just like the real thing from the restaurant. And even better, it's more healthy for you because the chimichanga isn't fried!! I like to serve my chimichangas with white queso, but there are other ways to serve them, i.e. enchilada red sauce. Most grocers sell this queso pre-made in the cheese section of the store. If you can't find this cheese, there are plenty of recipes online that show you how to make it at home.

1/2 cup finely chopped onion
1 (4 ounce) can green chilies, drained
3 cups cooked shredded chicken
1 cup chicken broth
1/2 cup salsa
1/2 tablespoon McCormick's Montreal Brand steak seasoning (I know it's a chicken recipe, but I like the steak seasoning)
1 teaspoon cumin
1/2 tablespoon adobo seasoning
1 teaspoon garlic salt
8 flour tortillas (8 inch)
1 teaspoon butter
extra virgin olive oil
2 cups mexican queso blanco

Steps:

  • Cook chicken, shred and set aside.
  • In large skillet, cook onion in butter until transparent.
  • Add chicken, broth, salsa, chiles and all seasoning.
  • Bring mixture to a boil and then simmer at low-to-medium heat for about 15 minutes, or until most liquid is absorbed.
  • Heat tortillas in microwave to soften them. Grease baking dish.
  • Scoop 1/2 cup of mixture into each tortilla and fold. Place in dish seam side down. Brush lightly with extra virgin olive oil.
  • Bake at 425 for 10-15 minutes, or until lightly brown and top of tortilla is hard to touch.
  • Serve with white queso. YUM! :-).

1 cup restaurant-style salsa (market pantry)
1 cup 505 Southwestern Salsa, Tomatillo Garlic & Liime
1/2 cup chicken stock
1/2 cup whole milk or heavy cream
1 tablespoon chili powder
1/2 tbsp cumin

Steps:

  • instructions (slow cooker)Place velveeta slices in slow cooker Layer on top salsa, green chile sauce, water, milk, chili powder, and cumin. Cook on low for 2 hours, mixing part way through Once finished, stir well and serve warm with chips instructions (stovetop)- Melt the Velveeta and salt together in a saucepan over medium heat until smooth and creamy. Add the half and half gradually as you stir the cheese sauce. Simmer on low heat until the queso is thick and creamy, stirring frequently to keep it from burning or sticking to the bottom of your pan.
