BLACKENED TUNA CHESAPEAKE STYLE
Steps:
- Preheat a convection oven to 500 degrees F.
- Heat an iron skillet over medium high heat. Season both sides of the tuna steaks with blackening spice. Add the tuna to the hot skillet and sear each side for about 1 minute to seal in the moisture. Remove the tuna from the skillet and place in a broiler pan. Top each tuna steak with 1 ounce of butter and place in the oven. Cook for 6 minutes for medium rare or 8 minutes for well done.
- After you place your tuna in the oven start your Chesapeake topping by sauteing jumbo lump crabmeat with the Virginia Smithfield ham in the butter over medium heat until warmed through. When fish is done, place the Chesapeake topping on fish and finish off with Bearnaise sauce.
SEARED AHI TUNA GLAZED WITH WASABI BUTTER
I've always loved wasabi with tuna, but usually the wasabi overpowers such a delicate fish. When this recipe came to me through a friend, who doesn't recall its origins, I finally found the perfect marriage of flavors. I can't make this often enough!

Steps:
- Drizzle sesame oil on both sides of each tuna steaks. Season with salt and pepper.
- Combine remaining ingredients in a small sauce pan. Heat over low heat until butter is melted, stirring constantly to mix and prevent scorching.
- While sauce is heating, heat a heavy frying pan on another burner with high heat. Place tuna in pan and sear until crispy and brown. Turn and sear on the other side.
- Note: Tuna steak fans who like their tuna on the rare side (like me) will usually find 2 minutes searing time is ample. Folks who like their tuna steaks more well-done (like my DH) may want to sear their tuna for 4-5 minutes per side.

BLACKENED TUNA STEAKS
My favorite way to eat tuna, but the spice mix works well with blackened chicken or other types of firm fish.

- In a small mixing bowl, add Wasabi Powder with 1 tsp water and mix to form a paste (add another 1/2 tsp of water if the paste is too dry). Once paste is formed, place the small mixing bowl upside down to bring the most out of the flavors. Note - the more you mix the Wasabi Powder, the spicier it will get.
- In a stove top pot, combine ingredients for the sauce - Soy Sauce, water, Bonito Flakes, Japanese Sake, Monkfruit and bring to boil. Once boiling, remove from heat and let it rest for 1 minute. After resting, strain Bonito Flakes with a strainer and use a spoon to push out any excess juices from the Bonito Flakes. Transfer sauce to a mixing bowl and set aside.
- In a small mixing bowl, mix ingredients for seasoning - ground chili pepper, cayenne pepper, Ground White Pepper, Coarse Sea Salt and set aside.

- First, start by squeezing lime or lemon juice over your tuna steaks. I like the flavor the lemon or lime juice adds to the tuna, but this step is optional.
- Season the ahi tuna steaks with the blackened seasoning on both sides. You can cover them and refrigerate for 30 minutes if you’d like to give the tuna some time to absorb the spices but that’s optional.
- In a pan over medium high heat, add olive oil. Once the olive oil is hot, place the tuna steaks in the pan and sear them for 1 minute on each side or until you’ve reached your desired doneness.
