1/4 cup extra-virgin olive oil
Two 6-ounce skinned and deboned halibut filets
Kosher salt
1/3 medium white onion, finely diced
5 cloves garlic, thinly sliced
3 anchovy filets, crushed into a paste
1/4 cup pitted Kalamata olives
1 tablespoon capers
1 cup crushed San Marzano tomatoes
1/4 teaspoons crushed red pepper flakes
1/4 cup dry white wine
1/4 cup thinly sliced fresh basil
1 lemon, zested

Steps:

  • Preheat the oven to 400 degrees F. Line a small rimmed baking sheet with parchment paper.
  • Heat 2 tablespoons of the olive oil in a medium nonstick skillet over medium-high heat until it starts to shimmer. Sprinkle the halibut with some salt. Sear the halibut on both sides until lightly golden, about 2 minutes per side. Transfer the halibut to the prepared baking sheet lined and bake in the oven until the internal temperature reaches 130 degrees F on an instant read thermometer, 5 to 6 minutes.
  • Return the skillet to medium-low heat. Add the remaining 2 tablespoons olive oil. Cook the onions and garlic until slightly softened, about 2 minutes. Add the anchovy paste, olives and capers to the skillet and stir to combine. Add the crushed tomatoes and crushed red pepper flakes and bring to a low simmer for 5 minutes. Add the wine and simmer until the wine cooks off slightly, about 2 minutes. Season with salt.
  • To serve, spoon the sauce directly onto the plate and top with the halibut filets. Top with the basil and lemon zest.

1/2 cup blanched hazelnuts
1 large bunch fresh tarragon
1 3-3 1/2-pounds skinless halibut fillet (halved lengthwise if very wide)
4 tablespoons olive oil, divided
Kosher salt, freshly ground pepper
1/2 cup (1 stick) unsalted butter
1/4 cup fresh lemon juice
Lemon halves

Steps:

  • Preheat oven to 350°F. Spread hazelnuts in a single layer on a rimmed baking sheet and toast, stirring occasionally, until golden, 8-10 minutes. Coarsely chop; set aside.
  • Reduce oven temperature to 300°F. Scatter tarragon sprigs on a large rimmed baking sheet. Place halibut on top, drizzle with 2 tablespoons oil, and season with salt and pepper. Roast until halibut is just opaque in the center, 20-30 minutes, depending on thickness of fish.
  • Meanwhile, melt butter in a small saucepan over medium-high heat. Cook, stirring often, until butter foams, then browns (don't let it burn), about 5 minutes. Remove from heat; let brown butter cool slightly. Stir in lemon juice, hazelnuts, and remaining 2 tablespoons oil; season with salt and pepper.
  • Serve fish with hazelnut brown butter sauce and lemon halves.

3 medium summer squash or zucchini, cut in half lengthwise
1 1/2 tsp. kosher salt, plus more
1/4 cup blanched hazelnuts
6 Tbsp. extra-virgin olive oil, divided, plus more for drizzling
1 small bunch mint, divided
1 small garlic clove, finely grated
2 Tbsp. white wine vinegar
3/4 tsp. sugar
1/2 tsp. crushed red pepper flakes
Freshly ground black pepper
1/2 lemon
1/2 cup fresh ricotta
Flaky sea salt
Toasted country-style bread (for serving)

Steps:

  • Preheat oven to 300°F. Toss squash and 1 1/2 tsp. kosher salt in a colander; set over a bowl. Let sit 10 minutes, then pat dry with paper towels.
  • Toss hazelnuts and 1 Tbsp. oil on a rimmed baking sheet and roast, shaking occasionally, until golden brown, 15-20 minutes. Let cool; crush into large pieces with a measuring cup or glass.
  • Smack 3 mint sprigs against your cutting board a few times to release their flavor; mix in a large bowl with garlic, vinegar, sugar, red pepper flakes, and 2 Tbsp. oil; set dressing aside.
  • Heat 2 Tbsp. oil in a large skillet, preferably cast iron, over medium-high until shimmering. Arrange squash cut side down in skillet, breaking into smaller pieces if needed in order to fit in a single layer, and cook, moving around in pan to ensure even browning, until golden brown on cut side, about 5 minutes. Reduce heat to medium-low, cover (if you don't have a lid use a baking sheet), and continue to cook until very tender, about 15 minutes. Transfer to a cutting board and let cool slightly.
  • Cut squash into 2" pieces and toss in reserved dressing to coat; season with kosher salt and black pepper. Let sit at room temperature, tossing occasionally, 15 minutes. Pluck out mint sprigs; discard.
  • Meanwhile, zest lemon half into a small bowl, mix in ricotta and remaining 1 Tbsp. oil; season with kosher salt. Hang on to that lemon.
  • Spread lemon ricotta over platter. Top with squash and their juices. Squeeze reserved lemon over. Pull leaves from remaining mint sprigs (you want about 1/4 cup). Scatter mint and hazelnuts over squash. Drizzle generously with oil and sprinkle with sea salt. Serve with toast.

Steps:

  • Bring squash, water, butter, thyme and pepper just to boil in large skillet on medium-high heat; cover. Simmer on medium heat 5 to 6 min. or until squash is crisp-tender.
  • Uncover skillet; cook squash on high heat 4 to 6 min. or until squash is lightly browned and liquid is cooked off. Remove from heat.

3 tablespoons butter, divided
1 butternut squash, peeled, seeded, and diced
4 (6 ounce) halibut fillets
salt and pepper
1 tablespoon fresh sage, chopped
1 tablespoon chives, chopped
1 tablespoon fresh parsley, chopped
1/4 white onion, chopped
1/2 cup white wine
1 bay leaf
1/2 cup heavy cream
1/4 teaspoon nutmeg, grated
1/2 cup hazelnuts, toasted

Steps:

  • Preheat oven to 350 degrees.
  • Place a large saute pan on medium heat and add 2 tbs butter to melt.
  • Add squash to the pan, cover and cook for about 10 minutes stirring occasionally.
  • Preheat an ovenproof saute pan over medium high heat.
  • Season the halibut with salt and pepper.
  • Combine the herbs and coat one side of the fillets with half of the mixture setting aside the rest.
  • Melt the final tbs butter in the pan and add halibut fillets, herb side down.
  • Cook for 5 minutes or until browned, and then turn and place the pan in the oven for 10 minutes or until fish is cooked through.
  • Add onion to the squash and cook covered for another 5 minutes, stirring occasionally.
  • When squash is lightly browned, add wine and bay leaf and cook until the wine is absorbed.
  • Add the heavy cream and the nutmeg, cook until thickened and season with salt and pepper, toss in the reserved herbs.
  • Spoon squash onto 4 places and top with halibut and hazelnuts.

2 butternut squash, halved and seeded
Pinch cinnamon
Pinch nutmeg
1 tablespoon finely chopped orange zest
2 teaspoons chipotle puree
1/4 cup finely chopped parsley
1/4 cup finely grated Parmesan cheese
Salt and freshly ground pepper
4 sheets pasta dough, 12 to 14 inches long by 4 inches wide
2 eggs mixed with 2 tablespoons water
Chopped chives
2 sticks unsalted butter
1/4 cup coarsely ground hazelnuts
8 sage leaves, chiffonade
Salt and freshly ground pepper

Steps:

  • Preheat oven to 450 degrees F.
  • Place squash on a baking sheet and roast until soft 30 to 40 minutes. Scoop out flesh and run though a food mill. Place the puree into a medium saucepan and cook over low heat until almost dry. Add the remaining ingredients and season with salt and pepper to taste. Lay a sheet of pasta dough on a lightly floured work surface and distribute a heaping teaspoon-sized portion of the filling at least 2 inches apart. Use your fingertip or a brush to moisten the edges of the pasta sheet with the egg wash. Carefully place a second sheet of the pasta dough on top of the first and press with your fingertips to separate the rows of filling. Repeat with the remaining dough. With a ravioli cutter or pastry wheel, cut along straight lines on the vertical and horizontal to form each ravioli square. Press the edges closed with your fingertips to seal well. Bring a large pot of salted water to a boil. Carefully drop in the ravioli and cook for about 5 minutes. Drain, plate and spoon butter sauce over and garnish with finely chopped chives.
  • Melt butter in a medium saute pan over medium heat and cook until the foam subsides and the butter begins to brown, 3 to 4 minutes. Remove from the heat, stir in the hazelnuts and sage and season with salt and pepper to taste.

1 -2 lb winter squash, such as butternut or Hubbard
3/4 cup fresh breadcrumb
2 tablespoons parmesan cheese, grated
1/4 cup parmesan cheese, grated
2 teaspoons honey
1/2 teaspoon fresh thyme, chopped
1/2 teaspoon fresh rosemary, chopped
1/2 teaspoon fresh sage, chopped
1 teaspoon orange zest
salt & freshly ground black pepper
1 teaspoon extra virgin olive oil
1 teaspoon walnut oil or 1 teaspoon hazelnut oil
1/3 cup hazelnuts or 1/3 cup walnuts, chopped
6 tablespoons unsalted butter
1 pinch nutmeg, freshly-grated
2 sheets ravioli egg pasta or 2 sheets wonton wrappers

Steps:

  • Preheat oven to 350°F Lightly oil a baking sheet.
  • Cut the squash in half through the stem and lay the halves cut side down on the oiled baking sheet.
  • Bake 50-60 minutes, until easily pierced with a knife.
  • Remove from oven and set aside to cool. Scoop out seeds and fibers and discard, then spoon the flesh into a mixing bowl. Mash squash with a potato-masher until smooth, then add breadcrumbs, 2 tablespoons Parmesan, honey, thyme, rosemary, chopped sage, and orange zest.
  • Mix thoroughly and season with salt and pepper.
  • Warm the olive oil and nut oil over medium heat in a small frying pan and add hazelnuts or walnuts.
  • Cook, stirring often, about 3 minutes, or until nuts are golden.
  • Transfer nuts to a plate and set aside.
  • Melt butter in a medium saucepan until it turns brown and begins to smoke, 3-4 minutes.
  • Remove immediately from heat, add nutmeg, and set aside.
  • Place a pasta sheet on a lightly floured work surface.
  • Spoon mounds of filling on the sheet about 1 1/2 inches apart (the number of mounds you make will depend on the size of the pasta sheets you use).
  • Lightly mist the mounds with a spray mister filled with water, then place a second pasta sheet over the first, covering the filling mounds, and pressing firmly around the edges and between the mounds to seal.
  • Using a fluted cutting wheel or knife, cut between the rows of ravioli.
  • Repeat with remaining sheets of pasta and filling.
  • Bring a large pot of salted water to a boil.
  • Add ravioli and cook until tender, 2-3 minutes.
  • To serve, reheat the browned butter. Drain ravioli and place in warmed serving bowl.
  • Toss with butter, sprinkle with hazelnuts and 1/4 cup Parmesan.
  • Serve immediately.

5 1/2 cups vegetable stock or 5 1/2 cups canned broth
2 tablespoons unsalted butter
1 large onion, chopped
1 butternut squash, peeled and cubed
5 teaspoons chopped fresh sage or 1 teaspoon dried sage
1 1/2 cups arborio rice or 1 1/2 cups medium grain rice
1/2 cup dry white wine
1/3 cup freshly grated parmesan cheese
4 tablespoons hazelnuts, peeled, toasted and coarsely chopped
1 1/2 teaspoons fresh ground pepper
salt, to taste

Steps:

  • In a small saucepan over high heat, bring the stock to a simmer. Reduce the heat to low and keep the liquid hot.
  • In a medium, heavy saucepan over low heat, melt the butter and sauté the onion, stirring frequently, until it is soft and light brown, about 10 minutes. Add the squash and 4 teaspoons of the fresh sage or all the dried sage and sauté, stirring frequently for 2 minutes. Cover and cook until the squash is almost tender, about 6 minutes.
  • Uncover the pan with the squash, add the rice and stir until a white spot appears in the center of the grains, about 1 minute. Add the wine and stir until absorbed, about 2 minutes. Add 3/4 cup of the broth, adjust the heat to simmer, if needed, so that the liquid bubbles and is absorbed slowly. Stir until the liquid is absorbed. Continue cooking, adding the liquid 3/4 cup at a time and stirring almost constantly, until the rice starts to soften, about 10 minutes. Continue cooking, adding the liquid 1/2 cup at a time and stirring almost constantly, until the rice is just tender but slightly firm in the center and the mixture is creamy, about 10 minutes more.
  • Add the Parmesan cheese, 3 Tbs. of the nuts, the pepper and salt. Stir to mix well.
  • To serve, spoon the risotto into a serving bowl or onto plates. Garnish with the remaining 1 Tbs. fresh sage, if using, and the remaining 1 Tbs. nuts.

  • The squash and the apple in the hash should provide a textural component in the dish. You want them to firm in texture, as counter point to the fish. That means just barely cooking them through; and you should probably err on under, rather than over cooked. Cooking the fish, is actually the easiest part of this recipe, but it’s critically important, as overcooked fish is not good.
