I adapted this rich treat from a friend's seafood enchilada dish. The thick creamy cheese sauce is an ideal match for the scallops, shrimp and imitation crabmeat. Plus, it's special enough for guests and can be made in a hurry.

1 package (6-1/2 ounces) pizza crust mix
3 tablespoons butter, divided
2 tablespoons all-purpose flour
3/4 cup whole milk
1/4 cup chicken broth
1/4 cup shredded Monterey Jack cheese
1/4 cup shredded Swiss cheese
1/4 pound uncooked bay scallops, chopped
1/4 pound peeled and deveined cooked shrimp, chopped
1/4 pound imitation crabmeat, chopped
2 cups shredded part-skim mozzarella cheese
Paprika, optional

Steps:

  • Prepare pizza dough according to package directions. Press onto a lightly greased 12-in. pizza pan; build up edges slightly. Prick dough thoroughly with a fork. Bake at 400° for 5-6 minutes or until crust is firm and begins to brown., Meanwhile, in a large saucepan, melt 2 tablespoons butter over medium heat. Stir in flour until smooth. Gradually stir in milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in Monterey Jack and Swiss cheeses until melted. Remove from the heat., In a large skillet, melt the remaining butter over medium heat. Add scallops; cook and stir for 3-4 minutes or until firm and opaque. Stir in the shrimp, crab and 3 tablespoons cheese sauce. Remove from the heat., Spread remaining cheese sauce over the crust. Top with the seafood mixture; sprinkle with mozzarella cheese and paprika if desired. Bake for 13-16 minutes or until golden brown. Let stand for 5-10 minutes before cutting.

This was created to mimic the wonderful seafood pizza we used to enjoy at Pizzeria Uno in Cincinnati Ohio. It's especially easy with a boboli crust but making your own crust may taste better. I recommend using the fake crab rather than canned, but fresh crab would be best. It's rich and delicious. I love to dip it in cocktail sauce. YUMMY!!

1 1/2 cups peeled cooked shrimp
1 cup crabmeat (can be fresh or imitation)
1 1/2 cups shredded mozzarella cheese
1/4 cup grated parmesan cheese or 1/4 cup romano cheese
3 -4 cloves minced garlic
1 teaspoon minced parsley
olive oil
1 pizza dough (you can make your own or use a Boboli type crust)

Steps:

  • Saute garlic in olive oil for several minutes.
  • Add shrimp and crabmeat, mixing well with garlic and olive oil.
  • Add parsley.
  • Sprinkle 1/2 cup mozzarella on pizza crust.
  • Place crab/shrimp mixture on crust.
  • Cover with remaining cheeses.
  • Bake according to your pizza crust directions (typically, bake pizza until crust is golden brown and cheese is melted and bubbling, about 15 minutes).
  • Cut and serve with cocktail sauce.

1 pizza dough
2 1/2 cups mornay sauce
1 teaspoon olive oil
1 teaspoon clarified butter
1/2 cup red onion, finely chopped
1/2 cup red pepper, finely chopped
3 large garlic cloves, pressed
2 cups mozzarella cheese, grated
1 cup crabmeat
12 large prawns, deveined, rinsed and halved
12 large scallops, halved
1/2 cup grana padano, grated
1/2 teaspoon hot paprika, to sprinkle on top

Steps:

  • Preheat oven to 450ºF. Transfer dough to pizza pan. Cover bottom with mozzarella cheese. Place evenly crab meat, prawns and scallops on top. Sprinkle vegetable mixture and then ladle Mornay sauce over. Sprinkle parmesan cheese and some hot paprika.
  • Transfer to the preheated oven and bake for 22 minutes or until seafood are cooked. Let it sits for 15 minutes before slicing.

1 store bought pizza dough - or pick one up from your favorite pizzeria
Extra- virgin olive oil, for drizzling
2 cups whole or part skim ricotta
2 cloves garlic, finely chopped
Handful flat-leaf parsley, finely chopped
2 cups shredded mozzarella or provolone, 1 pouch
10 fresh basil leaves, 1/2 cup, shredded

Steps:

  • Preheat a pizza stone if you use one along with the oven to 425 degrees F.
  • Stretch dough to form a pie and transfer to stone or pizza baking tray. Pierce the dough with the tines of a fork in several places. Drizzle extra-virgin olive oil around the crust. Mix the ricotta cheese with garlic and parsley and season it with salt and black pepper. Spread the ricotta across the dough. Top the pizza with mozzarella or provolone. Bake until crispy, 20 minutes. Top the white pizza pie with the shredded basil leaves, cut and serve.

3/4 pound medium shrimp, deveined with tails removed
1/2 teaspoon oregano
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter
3 tablespoons all-purpose flour, plus more for rolling dough
2 cloves garlic, grated
1 1/2 cups milk
1/2 cup grated Parmesan
1 pound frozen pizza dough, thawed
All-purpose flour, for dusting
1 cup deli mozzarella (part-skim, low-moisture), grated
Red pepper flakes, for sprinkling
3 tablespoons chopped fresh parsley

Steps:

  • Preheat a grill pan over medium-high heat.
  • Sprinkle the shrimp in a bowl with the oregano, 1 tablespoon olive oil, 1/2 teaspoon salt and a pinch of pepper.
  • Heat a skillet over medium-high heat, then add the butter and let melt. Add the flour and cook, 1 minute. Add the garlic and continue to cook, whisking, 1 minute more. Whisk in the milk and cook until very thick, 2 to 3 minutes. Stir in 1/4 cup Parmesan and remove from the heat. Season with a pinch of salt and pepper.
  • Preheat the broiler to high.
  • Roll out the pizza dough on a lightly-floured work surface into two 10-inch ovals. Brush the grill pan with the remaining tablespoon olive oil. Grill the dough on both sides until there are grill marks, 2 to 3 minutes per side. Remove the crusts to a sheet tray. Add the shrimp to the grill pan and grill on both sides until fully cooked, pink and opaque, about 4 minutes total. Spread the white sauce on the dough in an even layer. Scatter the shrimp over the sauce. Sprinkle with the mozzarella and the remaining 1/4 cup Parmesan. Place under the broiler until the cheese is melted and bubbly, keeping a close eye so it doesn't burn, 2 to 7 minutes. Sprinkle the red pepper flakes and parsley on top before serving.

1/4 c flour (unbleached)
1 c 1/2% milk (or higher don't use skim)
1/2 tsp salt
1/4 tsp pepper
Roasted Tomatoes
12 oz cherry tomatoes
1Tbs white balsamic vinegar
1/2 tsp kosher salt
1/4 tsp pepper
1 Tbs garlic olive oil
Mushrooms and Asparagus
8 oz mushrooms sliced
8 oz asparagus cut into 1/2" lengths
1 Tbs garlic olive oil
2 Tbs sherry
1/2 tsp thyme
Shrimp
1/2 lb shrimp cleaned and deveined (cut up if large)
1/2 tsp salt and a little pepper
1 Tbs garlic olive oil
1 tsp Sriracha hot sauce
1/2 lb lump crab, picked through and drained if packed in water
2 c mozzarella cheese
1/2 c parmesan cheese

Steps:

  • Pizza Dough (recipe follows) Garlic Olive Oil (recipe follows) White sauce Heat olive oil over medium high heat 2 min. Add flour and whisk 1 min. Add milk, move heat up slightly and whisk until thickened. Add salt and pepper, set aside covered. Pizza - in stages Tomatoes Pre-heat oven to 450 deg. Halve tomatoes and squeeze out seeds and pulp. Place on baking sheet, drizzle with garlic olive oil, vinegar, salt and pepper. Roast 20-30 minutes until beginning to caramelize. Remove and cool in pan. Mushrooms & Asparagus Heat olive oil in pan. Saute mushrooms until water given off. Add sherry, thyme, salt, pepper and cook until most of liquid absorbed. Add asparagus, cook 2 minutes. Remove from heat and set aside. Add roasted tomatoes and stir. Drain on paper towels if there is any excess liquid. Shrimp Heat olive oil over medium high heat. Saute shrimp, salt pepper and hot sauce until almost cooked. Drain on paper towels. Pizza assembly Spread pizza dough onto pizza stone or pan, drizzle with garlic olive oil and bake for 8 minutes. Remove from oven, spread white sauce, top with veggie mixture, sprinkle crab, place shrimp. Cover with cheeses. Bake 15-20 minutes more until cheeses begin to brown. Pizza dough 1 c lukewarm water 2 1/4 tsp active yeast 1 tsp sugar 2 1/2 c white unbleached flour 3/4 tsp salt 2 Tbs garlic olive oil Proof yeast in water and sugar. Add remaining ingredients, stir with fork and incorporate into a ball. Knead a couple times on floured surface (don't over mix). Place in greased bowl, covered in warm place to rise until doubled (about 30-45 min). Garlic olive oil 2 - 3 cups olive oil 1 head garlic peeled and sliced Place garlic into oil and simmer under med heat until garlic starts to brown (20-30 min). Set aside and let cool (make sure garlic doesn't brown - if it does, remove). Remove garlic and bottle oil in airtight container.

1 can (13.8 oz) refrigerated Pillsbury™ Classic Crust Pizza Crust
1 tablespoon olive oil
1/2 cup shredded mozzarella cheese (2 oz)
1/2 cup shredded fontina cheese (2 oz)
1/4 teaspoon dried oregano leaves
Salt and pepper to taste

Steps:

  • Place pizza stone on middle oven rack. Heat oven to 450°F.
  • Sprinkle flour on work surface. Place dough on surface; press dough with hands or roll with rolling pin to desired thickness and shape. Lightly sprinkle pizza peel with additional flour (if you do not have a pizza peel, a flat cookie sheet will work). Transfer dough to pizza peel.
  • Drizzle oil over crust. Sprinkle with cheeses, oregano, salt and pepper. Transfer crust from pizza peel to pizza stone.

1 package regular active dry yeast
1/2 cup warm water (105°F to 115°F)
1 1/4 to 1 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon vegetable oil
1/2 teaspoon salt
1/4 teaspoon sugar
12 uncooked medium fresh shrimp, in shells
1 cup pizza sauce
1 cup shredded mozzarella cheese (4 oz)
1/2 cup shredded provolone cheese (2 oz)
8 anchovy fillets in oil
1/2 lb bay scallops
1/2 cup chopped fresh basil leaves
1/2 teaspoon pepper
4 cloves garlic, finely chopped

Steps:

  • In large bowl, dissolve yeast in warm water. Stir in half of the flour, the oil, salt and sugar. Stir in enough remaining flour to make dough easy enough to handle.
  • Turn dough onto lightly floured surface; knead about 10 minutes or until smooth and elastic. Place dough in large bowl greased with shortening, turning dough to grease all sides. Cover and let rise in warm place 20 minutes.
  • Gently push fist into dough to deflate. Cover and refrigerate at least 2 hours but no longer than 48 hours, deflating dough occasionally.
  • Move oven rack to lowest position. Heat oven to 500°F. On lightly floured surface, press or roll dough into 12-inch round. Place on ungreased pizza screen or in 12-inch perforated pizza pan. Press dough from center to edge so edge is thicker than center.
  • Peel shrimp, leaving tails intact. Spread pizza sauce over dough to within 1/2 inch of edge. Sprinkle cheeses over sauce. Arrange shrimp, anchovies and scallops on cheeses. Sprinkle basil, pepper and garlic over seafood. Bake about 10 minutes or until shrimp are pink and firm, scallops are white and cheeses are melted.
