Asparagus With Miso Butter image

This combination of miso and butter is natural and delicious, too. Miso butter looks a little like cake frosting and is just as easy to lick off the fingers. With the egg yolk dripping onto the butter and the asparagus spears dipped into the eggy, miso slurry, you're looking at a four-star dish at a neighborhood restaurant - or at home. Number Of Ingredients 7

4 tablespoons oil or rendered pork or bacon fat
1 pound asparagus, trimmed and peeled if necessary
Salt and pepper
1/4 cup not-too-salty miso, preferably white
1/4 cup unsalted butter
1 teaspoon sherry vinegar
2 poached (or warm-bath-cooked) eggs

Steps:

  • Put oil or fat in skillet and turn heat to medium-high. Add as much asparagus as will fit in a layer, add salt and pepper to taste, and toss and stir until browned and shriveled, about 10 minutes.
  • Meanwhile, over low heat in a small saucepan, warm and whisk together miso and butter, so they combine, and butter softens but does not melt. Whisk in vinegar and keep warm. Warm a serving plate.
  • When asparagus is done, put some miso butter on bottom of serving plate. Blot excess fat from asparagus if you like, put on top of the miso butter, and top with poached eggs. Serve immediately.

Number Of Ingredients 6

1 small bunch asparagus
2 tablespoons butter
2 poached eggs
salt and pepper to taste
2 tablespoons white miso
2 tablespoons butter, at room temperature

Steps:

  • Mix together the miso and butter until smooth and uniform. Set aside.
  • In a skillet, heat up 2 tablespoons of butter over medium high heat. When the butter is barely melted, put the asparagus in the pan. When they start to turn bright green, about 2-3 minutes, turn the heat down to medium low and turn so the second side can cook. When the asparagus is tender, about another 2-3 minutes, remove from the pan and place on paper towels to drain.
  • Place a dollop of miso butter on a plate. Top with the asparagus and a poached egg. Season with salt and pepper. Enjoy immediately!

Miso has a rich taste, which is perfect for asparagus. This recipe has a nice Asian flavor and I like to serve this especially with teriyaki steak or salmon, and a crisp green salad.

1 1/2 lbs fresh asparagus spears
1 tablespoon oil
salt
3 tablespoons unseasoned rice vinegar
2 tablespoons light miso
2 tablespoons water
2 teaspoons sesame oil
1 teaspoon beet sugar (or granulated sugar)

Steps:

  • Preheat oven to 375F.
  • Bend asparagus gently and allow to snap where they naturally break; discard end pieces.
  • Lay asparagus on a roasting pan, and drizzle with oil and lightly sprinkle with salt.
  • Roast for 20 minutes or until they are cooked through but not soft, shaking the pan mid-way through cooking.
  • Remove from oven and allow to cool.
  • Whisk together the rice vinegar, miso, water, sesame oil, and sugar, until sugar is dissolved and everything is thoroughly combined.
  • Drizzle dressing over cool asparagus and allow to"marinate" at room temperature for 15-20 minutes before serving.

2 tablespoons white miso
1/2 teaspoon sherry wine vinegar
1 bunch thin green asparagus, bottom ends trimmed (about 1 pound)
2 teaspoons olive oil
2 large poached eggs

Steps:

  • Heat the oven to 475°F and arrange a rack in the middle. Combine butter, miso paste, and sherry vinegar in a small bowl and stir until smooth. (Mixture will be thick.) Set aside.
  • Place asparagus in a single layer on a large, rimmed baking sheet, coat with olive oil, and season well with salt and freshly ground black pepper. Place asparagus in the oven and roast until it is knife tender and lightly blackened, 12 to 15 minutes.
  • To serve, place miso butter on plate, top with roasted asparagus, and a poached egg.

1 tablespoon olive oil
1 tablespoon unsalted butter
2 lbs thick asparagus spears, ends trimmed
kosher salt
ground black pepper
1/2 lemon (optional)

Steps:

  • Heat oil and butter in a 12-inch skillet over medium-high heat. When butter has melted, add half of the asparagus to the skillet with tips pointed in one direction; add remaining spears with tips pointed in the opposite direction.
  • Using tongs, distribute spears in an even layer (spears will not quite fit into single layer). Cover skillet; cook until asparagus is bright green and still crisp, about 5 minutes.
  • Uncover, increase heat to high and season asparagus with salt and pepper to taste. Cook until spears are tender and well-browned along one side, 5 - 7 minutes, using tongs to occasionally move spears from the center of the pan to the edge of the pan to ensure all are browned.
  • Transfer to serving dish, adjust seasonings as needed and, if desired, squeeze lemon over spears. Serve immediately.

Asparagus and eggs have an affinity for each other. The voluptuous yolk softens and smoothes the grassy sharpness of the vegetable, while the asparagus brightens up the dull richness of the egg. The pair's most classic expression is asparagus hollandaise, but that is too fussy and time-consuming a preparation for a regular home-cooked breakfast. This dish combines the flavors in a time- and cook-friendly way.

3 tablespoons olive oil, more for drizzling
3/4 pounds asparagus, trimmed and cut into 1/2-inch pieces
2 scallions, white and light green parts, thinly sliced
8 large eggs
6 tablespoons roughly chopped soft herbs like basil, cilantro, chives or parsley use at least 2
1/3 cup heavy cream
2 tablespoons grated Parmesan
Salt
black pepper, to taste
Lemon wedges, for serving
Flaky sea salt for sprinkling

Steps:

  • Heat the oven to 300 degrees. In a large skillet over medium heat, warm the olive oil until shimmering. Add the asparagus and the scallions and cook for 5 minutes, stirring occasionally, until asparagus is browned and tender.
  • Whisk together the eggs, 4 tablespoons of the herbs, and cream. Whisk in Parmesan, salt and pepper. Pour the egg mixture over asparagus and place the skillet in the oven.
  • Bake for about 20 minutes, until set, but still slightly jiggly in the center. Cool in the pan for about 10 minutes before serving. It is best warm, not hot.
  • Squeeze one or two lemon wedges over it, drizzle with olive oil, and sprinkle with flaky sea salt and remaining herbs. Cut into wedges.
